Tennessee Banana-Black Walnut Cake with Caramel Frosting courtesy Paula Deen Yield: 12 servings Cake: 2 cups all-purpose flour 1/2 teaspoon baking soda 1/2 cup solid vegetable shortening 1 1/2 cups sugar 2 eggs 2 ripe bananas, mashed 1/4 cup buttermilk 1 teaspoon pure vanilla extract 1 cup chopped black walnuts* Frosting: 1/2 cup (1 stick) butter, softened 1 cup packed dark brown sugar 1/3 cup heavy cream, plus more as necessary 1 tablespoon pure vanilla extract 1 (16-ounce) box confectioners sugar 2 cups finely chopped black walnuts, for garnish (optional)* Preheat oven to 350 degrees F. Grease and flour 2 (9-inch) cake pans. For the cake: In a medium bowl, stir together flour and baking soda; set aside. Using an electric mixer, cream together shortening and sugar in a bowl until light and fluffy, about 2 to 3 minutes. Add eggs 1 at a time, mixing well after each addition. Mix in mashed bananas, buttermilk, and vanilla. Add flour mixture, mix until just combined. Stir in black walnuts. Pour into prepared pans. Bake until a toothpick inserted in the center of the cake comes out clean, about 35 minutes. Cool in pans on a cooling rack for 10 minutes. Remove from pans and cool completely. Meanwhile, prepare frosting. Melt butter in small saucepan. Add brown sugar and 1/3 cup cream. Cook over medium-low heat until the sugar is dissolved, about 2 minutes. Remove from heat and add vanilla. Transfer to a large bowl. Using a handheld electric mixer, beat in confectioners' sugar a little at a time until smooth. If frosting is too thick, add 1 tablespoon heavy cream at a time until consistency is right. Sandwich 2 layers of cake with frosting. Frost the outside of the cake. Press chopped black walnuts on the sides of the cake, if desired. *Cook's Note: DO NOT substitute English walnuts for black walnuts. Stir in soaked currants, bananas and pecans by hand. Spoon into greased and floured 9-inch springform pan. Bake for 80 to 90 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove sides of pan. Cool completely. (Cake may dip slightly in center upon cooling.) I usually line pans with waxed paper before I grease and flour. Preheat oven to 350 degrees Mash two ripe bananas, or enough to make one cup. Add 1/4 cup plain yogurt or sour cream (fat free is OK) ot buttermilk and 1 teaspoon vanilla Sift together: 2 1/4 cups flour (Cake flour) 1/2 teaspoon baking powder 3/4 teaspoon baking soda 1/4 teaspoon salt Cream in a large mixing bowl: 1 1/2 cups sugar 1/2 cup butter Add 2 eggs, one at a time, Add the flour mixture, alternating with the banana puree, STIR until smooth after each addition. Mock Whiipped Cream Frosting Ingredients: 2/3 cup milk 2 tablespoons all-purpose flour 1/4 teaspoon salt 2/3 cup sugar 2/3 cup LAND O LAKES® Butter, softened 1/2 teaspoon vanilla combine milk, 2 tablespoons flour and 1/4 teaspoon salt in 1-quart saucepan. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil (4 to 6 minutes). Boil 1 minute. Remove from heat. Cover surface with plastic food wrap; cool completely (1 hour). Beat 2/3 cup sugar, 2/3 cup butter and 1/2 teaspoon vanilla in large bowl at medium speed, scraping bowl often, until creamy. Continue beating, gradually adding cooled flour mixture and scraping bowl often, until light and fluffy. Frost cooled cake. Banana Cake Mocha Frosting: 6c powdered sugar 1/2c cocoa 1/2c butter, softened 1/2c brewed strong coffee Sift powdered sugar and cocoa` together. Add softened butter and mix on very low speed till incorporated. Add coffee and beat till smooth.

Old English Fruit Cake This recipe creates a large volume of batter! It requires 4 mixing bowls, the largest being a bread bowl. 1 pound butter 1 pound light brown sugar 9 eggs 2 tblsps. milk 1 pound regular white floor (about 4 cups) 2 tsps. mace 2 tsps. cinnamon 1 tsp. baking soda 2 pounds dried currants 1 pound seeded dark raisins 1 pound golden (sultana) raisins 8 oz. glace fruits (fruit cake mix) 8 oz. glace pineapple 8 oz. glace green cherries 1 pound whole pecans (be careful to check for shells before adding nuts) approx. 2 cups of rum, brandy, or sherry 2 packages of cheese cloth First sort your dried fruits to pick out any stems. Put all dried fruits into a collander and wash fruits. Use kitchen towel to partially dry fruits. Place dried fruits into large bread bowl, mix in glaced fruits, add 3 tablespoons liquor, mix well, then set aside. Separate the eggs. Beat egg whites until stiff, adding half of the brown sugar, set aside. Cream butter, adding half the brown sugar, mix well. Beat the egg yolks until thick. Beat yolks into butter mixture, along with the milk. Fold in egg white mixture. Sift flour, baking soda, mace and cinnamon. Stir into butter mixture, then stir batter into fruit mixture by hand. Grease and flour baking tins. I usually get 9-10 cakes from a recipe: 3 full loaf size cakes, 6 half loaf cakes, plus 2 minis. Place pan of hot water in 275 degree oven for the purpose of creating steam. Put your cakes into the oven, and bake for one hour. Smallest cakes should be done after one hour, continue to bake larger cakes until they test done with a toothpick. Mid size cakes will be done before largest cakes. Thoroughly cool cakes on racks before wrapping each cake in liquor soaked cheese cloth. Wrap well in plastic and store in cool, dark cupboard. Allow cakes to ripen for at least six weeks. Cakes will keep well for several months. It is a good idea to re-wet cheesecloth with liquor every three months for long term storage.

Deanna, that was my recipe all right. Grandma made it when I was growing up and it was always one of my favorites. Soonergrandmom, I don't know about the nuts changing texture, I almost never add the nuts because I don't like nuts baked in things. Not in banana bread or in cookies or in that hot fudge pudding cake, not even in fudge. Odd, I suppose, since I like nuts by themselves. Hmmm..... OK, a cake recipe for that 8x8 pan. Oh yeah, gingerbread! I just love it, and I love maple too, so this was right up my alley.... OLD-FASHIONED GINGERBREAD WITH MAPLE WHIPPED CREAM Yields one 8x8 inch cake. If you like, dust the gingerbread with confectioners' sugar and present it on a platter. It's homey enough though to serve straight from the baking dish. 1-3/4 cups plus 2 Tbs. all-purpose flour 1-1/2 tsp. baking soda 2-1/4 tsp. ground ginger 1/2 tsp. ground cinnamon 1/4 tsp. ground cloves Pinch salt 5 Tbs. butter, softened at room temperature 1/3 cup sugar 1 large egg 3/4 cup dark molasses 3/4 cup cold water 1 cup heavy cream (not ultra pasteurized, if possible) 1/4 cup maple syrup Heat the oven to 350 degrees F. Butter an 8x8 inch cake pan. Sift together the flour, baking soda, ginger, cinnamon, cloves, and salt onto a sheet of waxed paper. Set aside. In a large mixing bowl, beat the butter until light and creamy. Add the sugar and continue beating until light and fluffy. Add the egg and beat until well combined. Scrape down the sides of the bowl and pour in the molasses in a slow, steady stream, beating all the while. Add half of the sifted dry ingredients and mix just until well combined. Mix in the remaining dry ingredients. Slowly pour in the cold water and stir until well incorporated. Pour the batter into the prepared pan and bake until a skewer inserted in the center comes out clean, 35 to 40 minutes. Let cool in the pan about 1 hour before serving. Beat the cream until thickened. Slowly pour in the syrup and continue beating until the cream holds soft peaks. Cut the cake into squares; serve with the whipped cream. I also use a small pan like that 8x8 pan for fruit cobblers and crisps, since there are only Ashley and I here. Grandma's Blueberry Crisp would fit in nicely, can be adapted to use apples, peaches or cherries or whatever else you like and can get readily. I use frozen fruit all winter to make it too. Blueberry Crisp-Grandmas ================ 3 cups blueberries, fresh or frozen, unsweetened 2 tbls lemon juice 2/3 cup brown sugar 1/2 cup flour 1/2 cup quick oats 1/3 cup butter, softened 3/4 tsp cinnamon 1/4 tsp salt . Heat oven to 375. Arrange berries in ungreased square baking dish (8 inch) and sprinkle with lemon juice. Combine remaining ingredients until crumbly. (I use a pastry blender, grandma used two knives). Crumble topping over berries and bake until topping is lightly browned and berries are hot, about 30 minutes. Makes 4-6 servings. Annie

I suggest shipping the cake in the cake pan. I'm not sure if you were thinking about a layer cake - that may be hard to ship. But if you make a cake in a 9 x 13 pan or a bundt pan, just ship it in the pan which would keep it intact. Here is a recipe for a cake to ship that I found with packaging suggestions: Want to make someone who is far away from home very, very happy?! Make them a cake and send it to them. Maybe you heard Ben talk about this cake on the radio. Or maybe you just want to do something nice for someone who is a long way from home. This cake is easy to make, ships well and will just surprise the heck out of anyone who opens it up! Easy Chocolate Cake For People Overseas 1 Stick Of Butter 4 Eggs 16oz Hershey Chocolate Syrup 1 Cup Flour 1 Cup Sugar 1 tsp Baking Powder 1 tsp Vanilla Disposable aluminum pan for shipping Cream butter and sugar. Add eggs and chocolate syrup and vanilla. Blend in flour and baking powder. Pour into a well greased 8" pan. Bake at 325 degrees for 60 min. or till toothpick shows done. Cool it completely. Tips: Bake in a heavy 8" pan (not in the disposable aluminum pan) and put on top of a cookie sheet in case it spills over. After it is cool, run knife around edges of cake to loosen and dump whole cake on top of a large sheet of saran wrap. Wrap well and place in the aluminum cake pan and wrap well again. You may want to use some bubble wrap, too. We suggest you ship this in the UPS flat rate box (11 x 8½ x 5½) for a set price of $7.70 regardless of weight.
