Wedding Cheesecake

Has anyone had their cake made out of cheesecake or been to a wedding where there was a wedding cheesecake served? DD wants cheesecake and that's not a problem, but all the pics I'm seeing on the net have frosting and she doesn't care for frosting. We are talking about a selection of cheesecakes on pedestals with the tulle, and tropical flower petals. The frosted ones certainly look more like a wedding cake, but I'd like to know if you have seen them unfrosted and how was the presentation?

Yes, cheesecake is becoming increasingly common for wedding cake. I had one bride who had her cheesecake made with two stacked layers of different sizes. In looking at the photos, I would say that the bottom layer is 12" and the one on top of it is 8". The baker created a 2" wide ruffle of white chocolate that she placed around the bottom of the cake and around the base of the top layer. (This could also be done with fondant, which is more stable than chocolate.) Then, the bride used a Precious Moments cake topper on top.

We served a variety of cheesecakes also. Each of them had rolled up cookies standing around the edges. The cookies were the type that are made very thin and flat, like a pancake, and then rolled while warm. A narrow ribbon in the color of the bride's choice was placed around each cake to finish it off. When we cut the cheesecakes, we removed the ribbon and cut each slice between the cookies.

We also served a variety of individual bite-sized desserts for those who don't like cheesecake. It was a lovely mix and guests made many comments about the unusual dessert fare.

I have had both good and bad pumpkin cheesecake. It is BF's favorite, so he makes it every year. I have made it too. I use the Cooking Light recipe. But anyhoo, the best pumpkin cheesecake I ever had was at a friends house who is something of a gourmet. She got the recipe from Cooks Illustrated. The secret was draining/drying the canned pumpkin, which I have done. I did mine with paper towels. It somehow makes the pumpkin less bitter. Here's a copy of Chris Kimball's directions: Spiced Pumpkin Pie Cheesecake Ã¯Â¿Â½" 'The Squeeze Job' Many people have turned to making pumpkin cheesecake instead of pumpkin pie for Thanksgiving. And while Kimball recommends using pumpkin from a can instead of roasting your own, he also warns against a common, and serious, flaw in the store-bought variety. "The problem is, it has a lot of moisture in it, and you don't want that extra moisture in your cheesecake," Kimball says, "because it ruins your cheesecake. So, what do you do?" "The secret," Kimball says, "is the way we wick away the moisture." His technique calls for putting a triple layer of paper towels onto a baking sheet Ã¯Â¿Â½" one that has sides, to catch the eventual runoff. The pumpkin goes from the can right onto the towels, where it's smeared around. "This is a great thing for kids," Kimball says. "They can make a big mess." Then Kimball puts more towels on top, and folds the whole thing in half, then folds again. As he does, he's patting the bundle, squeezing water and moisture out. Then he flips it over, and carefully peels back the top layer of paper. "This looks like one of those fruit rollups, doesn't it?" Kimball says. Repeatedly flipping the bundle and peeling back the top layer of paper, Kimball eventually uncovers the pumpkin mash Ã¯Â¿Â½" now much denser and ready to be combined with the cream cheese, which he recommends taking out of the refrigerator at least one to two hours ahead of time. In another tip, Kimball says to use spices like cinnamon and allspice sparingly. But his recipe also uses plenty of white sugar and heavy cream. "There's no stinting," Kimball says. "Stinting is not a verb that's used at Thanksgiving. Absolutely not." When all is ready, he reveals the next trick to the cheesecake: baking it in a springform pan that sits in a water bath, so the entire cheesecake cooks evenly.

Hey Claire, this isn't Amaretto but it sure sounds yummy. The winning recipe at the NC State fair was a CrÃ¨me Brulee Cheesecake. It's on my "must try" list RALEIGH - Cynthia Fountain of Chapel Hill took first place and $100 for her CrÃ¨me Brulee Cheesecake in the N.C. Egg Association's "The Incredible Edible Egg Cheesecake" Recipe Contest on Tuesday, Oct. 17, at the N.C. State Fair. All cheesecakes had to use at least four eggs. Entries were judged on taste, ease of preparation and originality. CrÃ¨me Brulee Cheesecake Crust: 3 cups vanilla wafer crumbs (1 box of vanilla wafers, crumbled) Â¾ cup (1 Â½ sticks) unsalted butter, melted 6 tablespoons brown sugar Filling: 48 ounces cream cheese, softened 1 Â½ cups granulated sugar 6 tablespoons low-fat sour cream 6 eggs Â¾ cup heavy cream 4 teaspoons grated orange peel Boiling water (for baking) Â¾ cup granulated sugar (for topping) Preheat oven to 325 degrees Fahrenheit. In a bowl, mix the vanilla wafer crumbs, butter and brown sugar until well-blended. Pat the wafer mixture into the bottom and sides of a 10-inch springform pan. Set aside. In another bowl, mix the cream cheese, 1 Â½ cups sugar and sour cream on medium speed until the mixture is smooth. Add the eggs, heavy cream and orange peel. Beat until all the mixture is smooth. WatchMeLOL, my husband was born in New York and lived there until he was about 9. Cheesecake -- true, authentic, New York cheesecake -- is his absolute most favorite dessert. He hates cheesecakes that on menus are listed as "New York Style" because, he says, if it is true New York cheesecake it will say "New York cheesecake" and not "New York Style cheesecake." To him, "New York Style Cheesecake" means "sort of in the fashion of New York cheesecake, but not quite the real thing." Back in the mid-1980s when we were living in Lake Forest (in Orange County), California, I read an article in the local newspaper about these two guys and their families who had moved to California from New York. They were big cheesecake fans, but decried the "New York Style" cheesecake that is everywhere in California. So, they opened up their own place and name it "New York Cheesecakes" where they made authentic New York cheesecakes. At the time I read the article, Hubs and I were planning our wedding (which was held in May 1986). You guessed it. Our wedding cake was from New York Cheesecakes.

Savory Herb Cheesecakes

I made a smoked salmon and herb savory cheesecake once. Cooking it gave me a reaction to the fish, so I can't say how successful it was, objectively. I think the guests liked it. I tried to use my spidey skills to find your recipe, but no luck. Are you sure it was Cook Eat Share? My best luck came from googling "recipe cheesecake filled with fresh herbs". Still didn't find it, though. I did find the one with a parm crust and cream cheese filling at What's Cooking America. Did you see this one at heirloom gardener? It's more like a cream cheese tart than the kind of ricotta based cheesecake I was thinking of, and I'm not sure I like the sound of Worcestershire sauce in it, but it has some merits.

I think it would be great! Any multi-tiered cake looks like a wedding cake to me and frosting on cheesecake seems like too much. The Cake Bible has a recipe for white chocolate cream cheese frosting that the author says is the exact color of cheesecake- that might be nice for some minimal decorations- like piping borders.

There's a incredibly gorgeous one in an old issue of Martha Stewart Weddings--Fall 1999.

The outside of each layer was wrapped in bands of white chocolate (directions for how were in the magazine; I remember hearing that making the bands wasn't that easy--it SOUNDED easy, but apparently getting a perfect band could be tricky, but you could do it over easily), and sugared white cherries were piled one top of each tier.

The cheesecake recipe was incredibly, phenomenally good, too.

I agree w/ alicia67--I think any cake w/ three tiers or more looks like a wedding cake. You don't have to have a lot of furbelows and stuff of frosting.

We had cheesecake at our wedding and it was just wonderful! Very rich and filling, but delicious. Two layers were Raspberry mousse and one layer was Chocolate Amaretto. It was decorated with handmade seashells and dusted with 24 kt. edible gold. My husband's Groom's cake was also Choloate Amaretto Cheesecake in the design of his Air Force wings and was the talk of the reception. We had an amazing cheesecake as well. But I am not sure it is quite what you described. Either way, the bakery that did it was always looking for wonderfully original designs and presentations. Please see the attached link for more pictures and info. (at the bottom of the page once you open it, there is a link saying "to view more pictures") I can send you a pic of ours if you want. It was absolutely fabulous. My only regret is not having an alternative for a few of the lactose intolerant guests.
