Backsplash tile beginnings and a couple of questions

We've begun setting our backsplash tile.


Here's a question for those of you who tiled your own back splashes: where did you find grout matched caulking? And did you use it on all of the seams where planes meet? Do you have any tips for caulking the seam where wall meets countertop?

Here's a photo of the first corner we set showing the window trim (original to the house but stripped, cleaned up, and restained) and new windows and jambs:

Of course we'll soon be in the same grout colour quandary as everyone else. We used the same tile in our bathroom and there we have matching grout, but I think we'd like to see the subway pattern in the kitchen. I remember being vaguely disappointed when our bathroom walls lost their definition to the matching grout. We know this question comes up repeatedly, but given what you've seen of our kitchen, what say you--contrast or blend?

Do you think seeing more of the pattern, as in the ungrouted photo, or less would be better in our kitchen?
