I would, in a blender, mix 1/2 cup fat free yogurt( plain!) with 2 T olive oil and 1/2 tsp Coleman's dry mustard, and "some" lemon juice. Start with a tablespoon full. Then add dill to taste. Ought to taste a lot like a mayo based dressing...but it's pretty healthy...no cholesterol in the olive oil, low salt and the mustard and lemon juice are the predominate tastes in mayo. I use that and add garlic, worchestershire and some crumbled blue....which negates all the heart healthy stuff that went before!! LOL! Linda C

This is a recipe I picked up from the South Beach Diet forum. Baked Oat meal 1/2 cup olive oil 2/3 cup splenda (I think Splenda is bitter so I use Wheylow) 2 eggs 3 cups dry oatmeal 1 teaspoon cinnamon 1 teaspoon salt 1 cup fat free milk 1 teaspoon vanilla 1 teaspoon baking powder Wisk oil, splenda, and eggs. Add cinn, baking powder, salt, vanila and wisk again. Add oatmeal then milk and mix. Spray 9X9 cooking pan with non-stick spray. Bake at 350 for 25 minutes. Serving size 1/2 cup. VERY YUMMY! Variation: 1/4 c canola oil and 1/4c unsweetened applesauce, and 1/2c skim milk and 1/2c of plain yogurt. I did use 2 eggs. I think my glass baking dish is 8x8, and I baked it @350 for 30 mins. I think I could have baked it even longer to get 'crispier', but it came out great as is. small variation (not that this excellent recipe needs it) however since i have a piece of this daily it's nice to mix it up now again. I omit the cinnamon add 1/2 of blueberries, substitute the olive oil for 1 cup of apple sauce (I have those individual cup apple sauce on hand and use one whole one, i think its a cup. I have added a tablespoon of canola oil as well sometimes 2. Whey low brown sugar sprinked on top is nice too. Blueberries are in season and really go well with oatmeal. I can relate to how you feel! I'm fighting the same thing. He had a heart attack in Jan. and won't try different things. He hates vegetables. Once in a while he'll eat a little corn that's it. His idea of a balanced meal is anything with lots of sugar. One thing our cardiologist told us was stay far away from ANY kind of red meat (lean or not) and limit the fat to 10 to 20mg. daily. So that leaves fish and chicken and how many ways can you fix that. He's also a steak and potato man so there's another problem. He hates anything with tomato and also won't eat fruit. Maybe there's a little place in heaven for wives like us who are trying so hard to hang onto our hubby's just a little longer,huh? Don't give up. Just keep trying to fix small amounts of different things so you won't feel too bad when you have to throw it out or eat it yourself and maybe one day our hard headed husbands will wake up and realize that we CARE. Most of the books by Susan Powter are low fat and use very little red meat in the recipes. In fact, to my recollection, "Mom, I'm hungry" doesn't have red meat in it at all. You might want to look at some of her cookbooks. Just a thought.
