Here's another low carb recipe site with zillions of recipes. No guarantee, though. I've had good and I've had not so good. Today I tried something called Weresome's Crustless Chocolate Chess Pie. Well, this poor post has been sitting here soooo long, at the top, I've decided to submit a recipe. Maybe that will let it move on :) This is a Phase I recipe from Kalyn's Kitchen (love her blog!): Taco Salad Meat/Bean: 1 lb extra lean ground beef (less than 10% fat) 1/2 tsp Spike 1 tsp olive oil 1 can black beans or kidney beans 1 T chile powder 1 tsp ground cumin 1/4 tsp ground Chipotle chile powder 2 cups water Drain beans and rinse well. Brown beef; mash it. When meat is well browned, add beans, chile powder, cumin and chipotle chile powder with water. Let simmer until nearly all water has evaporated. For Each Salad: 3 cups Romaine lettuce 3 T ranch dressing (use Hidden Valley mix combined with buttermilk and mayonnaise) 3/4 cup meat/bean mixture 1 cup diced tomato or cherry tomatoes 1/4 cup grated cheese (Mexican blend)* Put cut up lettuce in large plastic bowl and toss with desired amount of dressing. Add slightly warm beef/bean mixture and diced tomatoes and gently toss. Arrange on serving plate and sprinkle with grated cheese. *Kalyn says it's important to use lowfat beef and cheese. You could use light mayo in the ranch dressing.

I really like Cooking Light. There are some really good recipes. I just decrease my "fat" called for or mainly I use lots of fresh herbs to help with the flavor. Here is a google search on Low Fat Recipe Websites. Also think about quinoa. It is great. Some of the wonderful reasons to eat it, i.e. it taste good, is healthy for you, is gluten free, is high in protein, is a versatile grain for many dishes, is relatively inexpensive, etc. Here is a webpage with some Quinoa Recipes.

Hi, BMW girl. I too have been placed on a a low purine diet and I too also have only one working kidney. My problem is kidney stones which have 'plugged' the ureter and almost 'done me in'. I'm 73, have sailed around the world twice, live alone on St Croix in teh US Virgin Islands. I'm looking for low purine recipes that have soome flavor and sufficient volume to fill me up !
