Isn't there a such thing as fat free ranch dressing that actually taste good?

MMMMMMM, good question. Read the ingredients on the 'ranch' bottle and try to come up with no-fat substitutes. There are all sorts of no/lo fat mayos and cream cheeses. If you come up with one, please share!!

here's a thing called "Basic Low-fat Cream-Style Dressing"

1/4 cup part skim ricotta
3/4 cup plain nonfat yogurt
2 t lemon juice
1/2 clove garlic, grated
1 T minced fresh parsley
1 T minced fresh chives
S&P

process the cheese in food processor til smooth, and yogurt, lemon juice and garlic and blend again. stir in herbs.

This is from Diana Shaw's "Almost Vegetarian."

variations are suggested in her book. probably you could ranch this up a little- fat free buttermilk for some or all of the yogurt, chopped dill instead of chives, a little minced onion, maybe

The cumin caught my eye. If you don't get the recipe you want, try making the dressing for this salad and see if it's what you're looking for in a middle eastern type of dressing. I love it with the cilantro. Ann Marinated Chickpea Salad with Radishes and Cucumber (6 Servings) 1/4 cup extra-virgin olive oil 2 T. fresh lemon juice 1 garlic clove, minced 1/2 tsp. finely grated lemon zest 1/4 tsp. ground cumin Salt and freshly group pepper, to taste One 15-oz. can chickpeas, drained and rinsed 1 lb. seedless cucumber, thinly sliced crosswise 6 large red radishes, thinly slided 1/2 medium red onion, thinly sliced 1/4 cup finely chopped cilantro or parsley In a large bowl, combine the olive oil, lemon juice, garlic, lemon zest and cumin and season with salt and pepper. Add the chickpeas and let marinate for at least 25 minutes, stirring occasionally. Just before serving, stir in the cucumbers, radishes, onion, and herb(s) and season with salt and pepper. Got all these from the cooking forum and they are favorites! Made the spinach salad from Ann for a luncheon, it was a very big hit! Vittorio's Spinach Salad from Ann T Vittorio's was a restaurant in Toronto that we use to go to years ago. Salad isn't something that I would usually order but I loved his. This is my recreation of his recipe. Salad: Washed and dried baby spinach 4 hard boiled eggs, peeled 4 or 5 cleaned mushrooms, sliced 1 can of artichoke hearts halved or quartered 3 Roma tomatoes, quartered 2 chopped green onions Kalamata olives Dressing: 1/4 teaspoon tarragon 1/2 clove of garlic 2 or 3 tablespoons wine vinegar 1/2 cup homemade mayo or Hellmans salt and pepper Place spinach in a large salad bowl. Decorate with eggs, mushrooms, artichoke hearts, tomatoes and green onions and olives. Drizzle with dressing and toss. Can be made on individual plates as well. Dressing: Soak tarragon and garlic in vinegar. Add salt to dissolve. Mix vinegar mixture into mayonnaise and adjust seasoning to taste. ------------------------------------------- Nancy's "55" Salad Dressing (wizardnm) 1 1/2 teaspoons minced garlic 1 teaspoon dry mustard 1/4 cup vinegar 1/4 cup water 2 teaspoons salt 1/2 cup sugar 1/4 teaspoon crushed red pepper 1/4 teaspoon cracked black pepper 1/2 teaspoon celery seed (optional) 1 cup vegetable oil Combine garlic, dry mustard, vinegar and water in a food processor or blender. Pulse to combine. Add salt, sugar, peppers, and celery seed (if using) With processor or blender running, SLOWLY add vegetable oil in a thin stream. After oil is added, continue to process another 3 minutes. --------------------------------------------------------- Creamy Roquefort Dressing (mqmoi) 1/2 cup mayonnaise 1 large shallot, minced 1 tablespoon Sherry wine vinegar 1 large garlic clove, minced 2 teaspoons Dijon mustard 1/3 cup crumbled Roquefort cheese 3 tablespoons whipping cream Whisk first 5 ingredients in small bowl to blend. Fold in Roquefort cheese and cream. Season dressing to taste with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)

So-called Chinese Restaurant Syndrome and the accusatory fingers pointed at glutimates as something dangerous were ideas not accepted by everyone and anyway were long ago discredited. I believe this was the source of what you called the "not very good reputation". Or were you thinking of something else? And not a good reputation with "certain physicians"? What does that mean? I don't often eat canned soups or other concoctions but you can be sure most have glutimate-rich ingredients with less potentially misunderstood names than MSG. The Japanese have long been on the forefront of identifying and using glutimate-rich ingredients. Japanese food is very glutimate heavy. That's why so many dishes taste savory and delicious. J Kenji Lopez-Alt is a respected and innovative chef who's very into the science of food and cooking. Formerly with the Cooks Illustrated operation, he's now doing other things (including writing books) and is associated with the website Serious Eats. I recently made his stew recipe and it includes some unusual ingredients as well as what he describes as an "umami bomb" to jolt the flavor. Soy sauce, tomato paste, anchovies, Worchestershire sauce (which has anchovies in it). The end result was delicious. The not so good reputation you refer to is what exactly?

Personally, I have never found a fat free salad dressing that I thought was really good. My local grocery chain has a FF honey mustard that isn't too bad, but the FF ranch leaves much to be desired. If you like salsa, try using a 1/4 cup on a large salad as your dressing, and top with a tbsp or two of FF sour cream.

I like the Raspberry Vinaigrette by Maple Grove Farms of Vermont. Wishbone used to make a good fat free Honey Mustard, but I can only find the JUST 2 Honey Mustard now and I don't care for it.

I make sort of an imitation honey mustard dressing that is lo/no fat. To lo/no fat mayonnaise add spicy mustard (equal parts)I use Guldens brand, but Wal-Mart has the same mustard only cheaper..... Add white vinegar to thin and sugar substitute to sweeten, to taste. Thats it! It's great as a sandwich spred and veggie dip and a dip for sausages. I have added thick drained salsa for a spicer taste. Thats good too!

A simple no fat dressing I've used is tomato sauce with a little vinegar, salt, pepper, Italian spices or spices of your choice and a little bit of sugar or artificial sweetener. I found the tomato sauce or tomato juice is a good basis to add flavorings to to spruce up your salads so they are not dry.

I use fresh lemon juice and salt and pepper. It tastes great and here in the south there is always lemon for tea when you are eating out.
