My tile installer is anti-slate

The tile installer came over yesterday to give us a final quote on installing slate in our kitchen. He strongly advised against it for the following reasons:

Shaling - "It slices like baloney" was his exact terminology.

Propensity to break apart

Uneven texture of the finished floor

He's done this tile of install before, and commented that the slate I have is good quality, but recommended I look at daltile that has a slate lookalike. I told him that while I appreciate his opinion as a professional, I'd like to stick with the slate. But after he left, I got scared, and now I'm having second thoughts.

Slate owners and flooring professionals, thoughts? What have been your experiences?

From what I've read, by best recommendation has been to seal before installation, lay the tile, seal again, grout and seal again.
