Ok, I've answered some of these points above already but once again to clarify: 1. There wasn't enough room at the table, so we did fix a plate but it wasn't just a matter of taking our seats. There were no seats to take. Going to the kitchen was a last resort - I didn't know what else to do. 2. The hostess had not yet eaten by the time we arrived. So she couldn't remain sitting at the table and eat without getting up. She wasn't already sitting at the table. She was standing, fixing herself a plate. 3. I didn't realize how late we were till we got there - there was no set starting time and she lives an hour away, we sat in the Friday-Afternoon-Heading-Out-Of-Town traffic which I don't know if you can imagine unless you live in a place like Houston where it's unpredictable at best and can be horrific. 4. My children, ages 17 and 20 WERE includded - it's a holiday. (for those who aren't Jewish, maybe that's not meaning anything to you, but would you go to a friend's house for say, Easter Lunch, and leave your kids at home, no matter what age? This would be comparable to that. In any case the invitation which was sent via email said, You and your family. There's NO question, the kids were included. 5. She made no attempt to sit near us. She put her plate down as if she meant to sit near us but came back before ever sitting anywhere, picked up her plate, and went to the other table. I don't mind if she sat with us or not, it's just the way she acted as if she was going to, then apparently changed her mind. Even THAT wouldn't have mattered had it been a table with others in addition to just our family. It was just weird, the four of us, sitting alone in the kitchen, no other guests sitting or eating with us, the rest of the entire party in another room, and no attempt to integrate us into the party. Yeah, we're guilty of being late. But as hostess, it's her duty to make us comfortable and welcome, late or not. That's what I think you'd learn in an etiquette class. 6. And again - we were about 20 minutes late. Is that really late enough to turn around after being in the car one hour and not show up at all? If someone were 20 minutes late to my house and let that convince them to blow off my party, I'd be horrified. 7. I HAVE gotten over this, WAY over this. I wasn't going to answer lizzynola's post for that reason and because most of her questions/comments had already been covered in my previous posts. But since the discussion continues, I'm answering. I don't make salmon patties, but I often make crab cakes, which are pretty similar. I use seasoned bread crumbs (Panko is good, too) and incorporate them into the mix, rather than use them as a coating. The containers of crab meat are sold in small and large containers, but 8 oz is not enough and 16 oz is too much for DH and me. Therefore, I buy a pound of crabmeat, make six patties, serve four of them, and freeze the other two cooked crab cakes to be POOF'ed at a later time. The frozen patties can be reheated quickly in the microwave, so I don't thaw them first. With any fish or seafood, I wouldn't want to keep them in a bowl for several days; they lose freshness fast. One very very basic simple suggestion is to fill up a portion side container of frozen mixed veggies (you know the ones in the freezer cabinet with lima beans, corn, carrots, green beans.) Top off with a couple pats of butter and sprinkle with parmesan cheese. This used to be my goto lunch when I barely had a minute to fix something to take to lunch. Easy to get a bag of frozen veggies and bag of frozen parmesan in the freezer for days like this. Also, glad to have a chance to post this recipe for a Lentil Mediterranean salad. Almost wish I wasn't now retired as I would think fixing a bunch on the weekend would work with leftovers for lunches during the weekday. I've included a lot of the comments, some of which had ideas for substitutions that I thought I might want to try. I already LOVE lentils (and so does DH). Not sure if those who don't like lentils would find this good but then this might be a good way to find out if you still don't like Lentils even if it is a recipe that comes highly recommended. I agree with other reviewers: definitely double the dressing. 2. I use quinoa instead of couscous. Much healthier, and the texture works better in this. 2. Omit the cheese; replace the mint with cilantro (I'm not a huge fan of mint and I don't eat much dairy, but cilantro is lovely here). 3. Omit the arugula and tomatoes. Instead, I throw in chopped green onions, chopped cucumber and chopped red pepper. I think it's nicer than with the greens, and the big batch keeps in the fridge better (one batch will last me most of a week). One substitute I like to make is replacing the lentils and couscous with the "Harvest Grains Mix" sold by Trader Joe's. Alot of flavor and really nice combination of ingredients. I fluff the cous cous after it sits with my hands rubbed with olive oil. It seperates it nicely and keeps it seperated. I used about 4 med. cloves of garlic and it could have taken more but was fine with that amount. The arugula MAKES it and is a great vegan dish if you eliminate the feta and add more tomatoes and cucumbers. I might try olives next time as well. I also added slivered scallions and cilantro as I didn't have mint. I couldn't really taste the cilantro (surprisingly). It is a great recipe, and it is so refreshing! I usually make this exactly as written, except I substitute spinach for the arugula. However, like others have suggested, you can substitute basil for mint (I prefer the mint and spinach combination). You can also substitute fresh mozzarella for the feta cheese--I used to do that because I didn't like feta, but now I love it so I only use feta cheese in the recipe. But the mozzarella adds a nice, very subtle flavor to the salad for those who would not eat feta cheese. If possible, use the French green lentils as brown lentils tend to fall apart. Green lentils keep their firmness and work better in this dish. I cooked the couscous in vegetable broth to give it more flavor and sometimes add diced and seeded persian cucumbers. Yeah, I don't think it was the sandwich that was the productivity key, it was the regular routine. I have to laugh, my husband is so funny with his love of regularity. He's a great cook, and last night he made a fantastic chicken minestrone as per my request. But all he kept doing was complaining that it was not his "regular" chicken soup recipe. I said, "But it's delicious, didn't you like it?" and his answer was, "Yeah but I prefer my regular recipe." He has one type of chicken soup he likes, one. His defense was that he likes all kinds of soups, but only one recipe of each . . . If I want variety from him it has to be mushroom barley, chili, Italian wedding, clam chowder . . . and chicken soup has to be plain chicken broth with frozen mixed vegetables added and wide egg noodles. Don't go throwing any egg drop in there!! Yes, he is Germanic by half, and Anglo Saxon on the other half. Edited to add that this afternoon he had the leftovers for lunch, and his remark was, "This soup is delicious, but next time no tomatoes and no beans . . . "
