Range hood options in old house with low ceiling?

I'm not finding many options for an island range hood for a remodel of an old farmhouse with a 7' 4" ceiling. The vast majority require at least an 8' ceiling. I did find a Kobe IS123 hood with a 16" stack option that may work.

Someone has suggested that we take an under-cabinet or wall-mount hood, build a box on top of it to attach it to the ceiling and contain the ductwork. That will give us a bit more clearance between the cooktop and the bottom of the hood.

Does anyone have experience with this option, and if so, do you have any photos of the result.

Thoughts on Kobe hoods and/or suggestions about island range hoods that will work with this limited height will also be appreciated.
