RECIPE: Lemon Bars without a fork?

Does anyone have a recipe for Lemon Bars or Squares that one can pick up and eat with fingers (that's not too messy)?

Poppers Lemon Bars (Barb)

1 Cup Butter..use the real thing
2 Cup Flour
1/2 Cup Powdered sugar

Mix these ingredients till they resemble small clumps. Pat FIRMLY into the 9x13 pan. Bake 15 minuters at 325 degrees.~

While baking:
Mix together 4 eggs, 2 cups sugar, 1/3c. lemon juice, 1/4 c. flour. Mix well. You can also put this into a blender if you want. Pour onto baked crust. Bake for another 25 minutes at 325 degrees. Cool and sift power sugar on top. Cut, eat and enjoy.

CAUTION!!! These Popper lemon bars are very addicting!!

LEMON BARS DELUXE
2 1/4 cup flour
1/2 cup confectioners' sugar, plus additional for sprinkling
2 sticks butter
4 beaten eggs
2 cups granulated sugar
1/3 cup fresh lemon juice
1/2 tsp baking powder
Preheat oven to 350Â°.
Whisk together 2 cups of the flour & the confectioners' sugar. Cut in the butter until the mixture clings together. Press the dough into a 13x9x2" baking dish. Bake 20-25 minutes or until lightly browned. Meanwhile, beat together the eggs, granulated sugar & lemon juice. Mix the remaining 1/4 cup flour with the baking powder; stir into the egg mixture & pour over the hot baked crust. Bake for 25 minutes longer. Remove from the oven & sprinkle w/confectioners' sugar. Cool. Cut into squares.~~

Lori, I don't like raisins either so maybe I need to give the Craisins a try? I made some Oatmeal Raisin cookies today-interesting recipe. You soak the raisins in well beaten eggs and vanilla extract for an hour before mixing with the rest of the ingredients. Without the raisins, they would be excellent. RL`

Here are a couple of really good ones. Lemon Curd Bars Source: Midwest Living December 2006 1 c unsalted butter, softened 1 c sugar 2 c all purpose flour ½ tsp baking powder 1 10-12 oz jar lemon curd 2/3 c flaked coconut ½ c sliced or slivered almonds, toasted Preheat oven to 375F. In large mixing bowl, beat butter with electric mixer 30 seconds. Add sugar and beat until combined, scraping sides of bowl occasionally. Add flour and baking powder, beat until combined and mixture resembles coarse crumbs. Reserve 2/3 cup of crumb mixture, and set aside. Press remaining crumb mixture into bottom of a 9x13 pan. Bake 5-8 minutes, or until golden. Remove from oven, spread lemon curd over crust, to within ½ inc of edges of pan. In bowl, mix reserved crumb mixture with coconut and almonds. Sprinkle over the lemon curd. Bake for 18-20 minutes more or until edges are golden and topping is browned. Cool and cut into squares. Makes 32 bars. I grew up making a lot of recipes from the Farm Journal Cookbook and you really can't go wrong with any of their recipes. I loved these Frosted Molasses Creams a lot as a kid - and still do. I cut and pasted the recipe, but it really is tried and true; I have a 1959 FJ cookbook that I found for $1 at an antique store once, and I was tickled, because it's exactly like the one my Mom had. The recipes all had short discriptions that are corny by today's standards. I put a link to the Taste of Home site where I found and as far as I can tell, the recipes there match up with the original cookbook's recipes. Frosted Molasses Creams Recipe By :Food Editors of Farm Journal Serving Size : 39 Preparation Time :0:00 Categories : Bar Cookies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup shortening 1/2 cup sugar 1 egg -- beaten 1/2 cup molasses 1/2 cup strong, hot coffee 1 1/2 cups sifted flour 1 1/2 teaspoons baking powder 3/4 teaspoon salt 1/4 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves Creamy Coffee Icing: 1/4 cup butter or margarine 2 cups confectioners sugar 2 tablespoons cold coffee Cream together shortening and sugar; blend in egg, molasses and coffee. I made these last year - they're great! Thanks, Jenn! Cranberry Lemon Cookies -Jenn A wonderful cookie I discovered at Gail's Recipe Swap. They freeze well, but thaw them before adding icing. I posted this last year and got quite a few comments from people who said everyone loved them. * 1/2 C butter * 1/2 C sugar * 1/3 C brown sugar * 1/2 tsp. lemon zest * 1 egg * 2 tsp. vanilla * 1 C flour * 1 tsp. baking powder * 1/2 tsp. cinnamon * 1-1/2 C chopped pecans (I use walnuts) * 1-1/2 C chopped fresh cranberries Cream butter, sugars, and lemon zest. Beat in egg and vanilla. Combine flour, baking powder and cinnamon. Gradually beat into butter mixture. Stir in nuts and cranberries. Drop by teaspoonfuls 2 inches apart on greased baking sheets. Bake at 350F for 10 to 12 minutes, or until golden. Let cool slightly before removing to cooling racks. Frost when cool. ICING: Whisk together 1 C confectioner's sugar, 2 Tbsp milk, and 1/4 tsp. lemon zest.

These are similar but the first adds coconut and the second adds white chocolate.

Lemon Coconut Bars

Cookie type: bar

This is from my MomÂs collection. This recipe came out of the Farm Journal Christmas Book, 1970.

Ingredients

1 cup sifted flour
Â¼ cup flour
2 eggs beaten until light
Â¼ cup sifted confectionersÂ sugar
Â½ cup butter
Â¾ cup sugar
2 tbsp lemon juice
1 teas grated lemon rind
Â½ cup flaked coconut
Â½ teas baking powder
ConfectionerÂs sugar

Directions

Preheat oven to 350 degrees. Combine 1 cup flour and Â¼ cup confectionerÂs sugar. Cut in butter until mixture resembles a coarse meal. Pat mixture evenly into a 9x9x2 inch pan. Bake at 350 degrees for 15 minutes. Cool. Combine Â¾ cup sugar, Â¼ cup flour and baking powder. Add eggs and blend. Then add lemon juice, rind and coconut. Spread this mixture on top of the crust. Bake at 350 degrees for 25 minutes. Cool. Sprinkle with confectionersÂ sugar.

White Chip Lemon Bars

Cookie type: bar

This is a favorite from HersheyÂs Best Â Loved Recipes, 2000. These cookies are yummy, tart and sweet all at the same time. This recipe makes 36 bars.

Ingredients

1 Â¼ cups flour
1 cup sugar
1/3 cup butter, softened
Â¾ cup white chocolate chips
2 eggs
Â¼ cup lemon juice
2 teas grated lemon peel
powdered sugar

Directions

Preheat oven to 350 degrees. Stir together 1 cup flour and Â¼ cup sugar in a medium bowl. Cut in butter until mixture resembles coarse crumbs. Press mixture into the bottom of a 9 inch square baking pan. Bake 15 minutes or until lightly browned. Remove from oven and sprinkle white chocolate chips over crust.

Stir together eggs, lemon juice, lemon peel, remaining Â¼ cup flour and remaining Â¾ cup sugar in a medium bowl. Carefully pour over chips and crust. Bake 25 minutes or until set. Cool and sprinkle with powdered sugar. Cut into bars.

Know the PROS here might not approve, but these are great!!

Ingredients:
1 package Angel Food Cake Mix
21 ounces Lemon Pie Filling

Directions:

Combine cake mix and pie filling. Stir until well mixed. Pour in an ungreased jelly roll pan. Bake 20-25 minutes at 350F degrees. Sprinkle with powdered sugar. Cut into squares.
