LOOKING for: Clay Pot Recipe for Pork Chops

Hello all,

I kitchen company was going out of business here and I purchased a 50% off clay pot (st....topf) sorry too lazy to go look. Does anyone have a pork chop clay pot recipe that they have enjoyed?

I've substituted pork for the chicken in this recipe, cook in clay pot at 385 for 2 1/2 to 3 hours, until pork falls off the bone.

Chicken Cacciatore by Shopper (Christiane )

I use 5 or 6 chicken breasts ( Half a breast each )
3 tablespoons shortening ( I use light olive oil )
2 medium onions, thinly sliced
2 cloves garlic minced
3 stalks celery chopped
1 can ( 1 pound or 16 oz ) tomatoes - i use the diced ones
1 can ( 8 ounce ) tomato sauce
1/3 minced green pepper
1 teaspoon salt
1/4 black pepper
1/2 teaspoon crushed basil
1 bay leaf
1/4 cup Chianti wine ( if desired )

Brown chicken breasts in hot oil in skillet
Layer onion slices in slow cooker
Put browned ckicken pieces on top of onion slices
Then add remaining ingredients ( i put them all in a bowl first and mix them together and then pour over the chicken breasts)
Cover and cook on Low 6 to 8 hrs ( or High 3- 4 hrs )
Discard bay leaf.
Serve chicken pieces with sauce over buttered spaghetti

Be sure to read the directions for cooking with your clay pot.....you have to soak it for a while and start it in a cold oven, if I remember correctly. Will look in my clay cooker cookbook and see if there is a recipe for cooking pork chops.

I think porkchops or at least loin chops, are too lean for the crock pot. They tend to get stringy and tough. Shoulder chops work better. Since it's the season, how about just setting them to cook on a bed of thinly sliced vidalia onions....and I like to add about 1/4 tsp fennel seeds for each onion. Linda C

Here is the recipe I use...if I'm in a hurry I don't pan fry first..Southern Pulled Pork from allrecipes.com Ingredients * 1 tablespoon butter * 2 pounds boneless pork roast * 1 tablespoon Cajun seasoning..I make my own and use lots * 1 medium onion, chopped * 4 cloves garlic, crushed * 4 cups water...I use chicken broth instead * 1 tablespoon liquid smoke flavoring Directions Cut the pork roast into large chunks. Season generously with the Cajun seasoning. Melt butter in a large skillet over medium-high heat. Add pork, and brown on all sides. Remove from the skillet, and transfer to a slow cooker. Add the onion and garlic to the skillet, and cook for a few minutes until tender. Stir in the water scraping the bottom to include all of the browned pork bits from the bottom of the pan, then pour the whole mixture into the slow cooker with the pork. Stir in liquid smoke flavoring. Cover, and cook on High for 6 hours, or until meat is falling apart when pierced with a fork. Remove pieces of pork from the slow cooker, and shred. Return to the slow cooker to keep warm while serving.

This one is made in a slow cooker, and I think that will make it easy for you. To serve 30, you might see if you can borrow two more slow cookers from friends or family members. In other words, you'll need to make three batches since this recipe serves 8-12 people in one 4 qt. slow cooker. PULLED PORK 4 to 5 lb. pork butt roast RUB Ingredients: 1 Tbsp. mild paprika 1 tsp. light brown sugar 1/4 tsp. celery salt 1/4 tsp. garlic salt 1/4 tsp. dry ground mustard 1/4 tsp. ground black pepper 1/4 tsp. onion powder 1/8 tsp. salt Combine all seasonings in a bowl and then put in a shaker. This will make it easier to season the meat. After you shake it on all sides actually take your hands and rub it in the meat. Do this a day ahead, wrap in plastic wrap, and chill in the refrigerator at least 8 hours (overnight). The next day, brown roast on all sides in 2 Tbsp. HOT vegetable oil in a large skillet. Then, tranfer to the 4-qt. slow cooker. (Cut roast to fit if necessary). Make vinegar recipe below and pour HALF of it over the roast. Cover and cook on HIGH 5-6 hours or on LOW 8-9 hours. Remove from slow cooker carefully. Allow the meat to cool for approx. 30 minutes on a cutting board. (Meanwhile, clean slow cooker). After it has cooled, shred the meat into bite-sized pieces with a fork. Place meat a little at a time back into slow cooker and squirt each with reserved vinegar sauce. You can warm it up for your guests on LOW heat.... like using the crockpot as a chafing dish. VINEGAR SAUCE (reserve half) 2 cups cider vinegar 1 1/3 cups water 5/8 cup ketchup 1/4 cup firmly packed brown sugar 5 tsp salt 4 tsp. crushed red pepper flakes 1 tsp. ground black pepper 1 tsp. ground white pepper In a medium bowl, whisk together cider vinegar, water, ketchup, brown sugar, salt, red pepper flakes, black pepper, and white pepper. Continue to whisk until brown sugar and salt dissolve. Pour half over raw meat in crockpot and reserve the other half for squirt bottles.

This is an older post from the Cooking Forum. I tried this recipe and it is delicious, exactly like what I recall eating in Montreal but I was surprised about the microwave...no matter it works! Notice Monique, the author of the recipe, says she likes it with mustard! ----------------------------------------------------------- I've never seen this outside of Quebec. A month or so ago Monique posted the recipe over on the CF... I was so surprised. I was also surprised to see she made it in the microwave! Subsequent to that Lee (from Denver) made the recipe and raved about it....so I tried it. Ces't manifique Monique, merci ! Cretons Rapides Au Micro-Ondes - posted by Monique from Quebec 1 Lb ground pork 1 Cup of milk 8 crushed soda crackers 1 finely chopped onion minced garlic cloves 1/4 Tsp of cinnamon 1/8 Tsp ground cloves 1/8 TSP GINGER 1 Tsp salt 1/4 Tsp of pepper herbs if desired Put all ingredients in a microwave safe dish..mix well. Cook at high for 5 mins. Mix again Cook another 5 mins Mix again Cook 3 more mins. Mix and let rest 6 mins. Now.. a lot of people put this mixture in the food processor..we like it more rustic..as is..I pack it in pretty ramekins. I also add a bit more cinnamon..Let me know..I hope you like them. Pork chops are not a good choice for clay pot cookery. they don't do well with long slow cooking. Over cooked lean pork gets stringy and tough.
Therea re many other things that you can cook however.
Tehre are lots of recipes in the link posted.

You can do this easily-Pork Chops and Sauerkraut
2lb sauerkraut, drained
2c applesauce
2Tbrown sugar
1/4c dry white wine
1/2T Dijon ustard
1/4 tsp pepper
6 pork chops...1 inch thick
2T butter
2T veg oil
Soak topa and bottom of clay cooker in water for 15 minutes. In a bowl mix together sauerkraut, applesauce, brown sugar, wine, mustard and pepper. Place mixture in cooker. In a skillet, brown pork chops in butter and oil.Transfer chops to top of sauerkraut mix. Cover with lid and place in cold oven. Set oven to 400Â° and bake for about 1 hour or til chops are tender.
Serve with mashed potatoes and a green veggie.

An old fashioned meal: Rice and Pork Casserole
1c uncooked rice
1pk onion soup mix
4 large pork loin chops
pepper to taste
1 can cream of mushroom soup
2 1/2c water
Soak top and bottom of cooker for at least 15 min. Place rice in bottom of cooker and sprinkle with onion soup mix.
Cut excess fat from chops and sprinkle with pepper.
Place on top of rice. Mix mushroom soup with water and pour over all.Cover, place in cold oven and set oven at 400Â°. Bake for 1 1/2 hours or til chops are tender

thanks so much for all the great recipes. I ended up just taking a crockpot recipe with less liquid and it was delicious. I have a glazed clay cooker, so I soaked the lid only as directed on the mfg site, and started from a cold oven. I will save the recipes above and try them as well - again thanks!
