RECIPE: Chicken and Stuffing Bake

Made this the other day. It was really good, but you can't count the calories or worry about your cholesterol! LOL

It came from a can label.

4-6 boneless, skinless chicken breasts (depending on size)

2 boxes of stuffing mix

1 can Campbell's Mushroom and Garlic Condensed Soup

2/3 cup water

2/3 cup sour cream

1/4 cup chopped pecans

Prepare stuffing mix as per package directions and set aside.

In a skillet, brown chicken breasts on both sides.

Spread half of stuffing mixture in bottom of a 2-quart casserole dish. Place browned chicken breast on top. Combine condensed soup, water, and sour cream; pour over chicken. Bake, uncovered, in a preheated 350 F degree oven for 30 minutes.

Combine remaining half of stuffing mixture and chopped pecans (the pecans give it a nice crunch!). Spread over chicken and bake, uncovered, for another 15 minutes. Enjoy!

NOTE: I pounded the chicken breasts to flatten them out a little bit and then browned them. Hubby suggested that next time we try it with sliced chicken breasts.
