And the batter is sitting in 3 Tupperware containers in the refrigerator now. I plan to drive up to DDs tomorrow, so I will bring her 1/3 of the batter. My older son lives a few minutes from her, so the other 1/3 will be for him as he is home a lot now with his free lance work so skimpy in this recession. I also bought him one of those 6 muffin baking pans to try the recipe.

I have not baked any batter yet, and I put in more of the bran flakes than I intended, but I guess it will be ok. Boy, you are right about needing a big bowl. I used my biggest, and I would say if you don't have an overly large big mixing bowl to use the Dutch oven or soup kettle to mix it.

Have you ever topped the muffins with nuts or with cinnamon sugar?

Now I am out two more Tupperware containers. I had not realized that having adult kids an hour away would mean that my Tupperware would be on loan so often. But they pretty much cook just for one, so I try to share what are big recipes for DH and me. DD has a toddler and a husband who works looooong hours and is never home to eat, so I want to help her eat better, especially with another baby coming.

Just how much MORE flakes did you add?
Why don't you test bake one, to see?
Is the batter real thick and heavy?
It's been a l-o-n-g time since I made any.

Oh, yes, I still have my bowl that I mixed and kept it in. A BIG one!

I never topped with anything. Go for it! Never thought to, I guess.

If you have allspice already, I think the cinnamon sugar might be too much spice. How about sugar?

I DO know Sandi Iowa makes them, and her recipe is similar or identical to mine.

Up to you, but I would test one. If it's dry then add more liquid.

OH BTW, I DID buy all those home ec cookbooks. I remember so well making corn on the cob and rubbing it with peanut butter for butter. DON'T DO THAT! :O)

Mine have BEEN gone, but still have my college home ec cookbook.

I had a 20 ounce box as there were no 15 ounce boxes. So I eyeballed it. Then when I poured that last third into a container, it seemed too liquidy in contrast to the other 2 containers, so I dumped in another 1/2 cup or more of Rasin Bran rather than recombine it all.

I would never be tempted to rub peanut butter on corn on the cob. With corn on the cob I am a purist! But, one sandwich I learned from my mother is peanut butter on sandwich bread and then you sprinkle the peanut butter liberally with rasins. Really good! In fact, I wonder how rasins and sliced bananas together would taste on the peanut butter. Hmmmmmm.

Jasdip, I made 12 muffins from your recipe. Usually I make the jumbo size muffins and use a full recipe for only six gigantic, bakery size muffins. This time, I decided to go back to the smaller, regular muffins size. The muffins didn't crown the top of the muffin tin much, so maybe I should have made 8-10 rather than 12. No matter -- they taste really good. I had another one this morning, thawing it in the microwave. I used half butter & half applesauce. I'm not one to eliminate butter altogether. Also, I eliminated salt because of my husband's dietary restrictions. If I hadn't been making these muffins for the first time, I might have used a no-sodium baking soda product too. But I didn't want to risk ruining the muffins. I use a no-sodium baking powder for all my quick breads, and it works just fine. But I've had some trouble in the past with the sodium-free baking soda. I also used the lowest sodium of all the commercial buttermilks available at my local grocery stores. Donna, I may try your recipe next. As I've said before, I'm a sucker for bran muffins. I'm still hoping to replicate the wonderful flavor of the Van de Kamp's bran muffins of my childhood in Los Angeles. I loved them, but unfortunately, Van de Kamp's discontinued most of their bakery items years ago.

Here's one healthy diet recipe which I've posted before which uses oat bran as well as All-Bran and applesauce. This is part of a Glycemic Index weight-loss diet. They're in the green light - go ahead zone of Rick Gallops' glycemic index list of breakfast or snack foods for those who are trying to keep their sugar and insulin levels down. I made these for many months last year and ate them in place of bread, and will be making them again in the next days. They're delicious! I also freeze them, 3 to a small ziplok bag and take them out of the freezer the night before I need, leaving them in the fridge to defost until the morning. Light & diet friendly Ingredients: 3/4 cup All-Bran cereal 1 cup skim milk 2/3 cup whole wheat flour Sweetener - equivalent to 1/3 cup sugar 2 teasp baking powder 1/2 teasp baking soda 1/4 teasp salt 1 teasp allspice 1/2 teasp cloves 1 1/2 cups 2/3 cup raisins 1 large apple peeled and cut into 1/4 inch cubes 1 low-cholesterol (omega-3) egg, lightly beaten 2 teasp vegetable oil 1/2 cup unsweetened applesauce 1. Mix the All-Bran and skim milk in a bowl and let stand for a few minutes. 2. In a large bowl, mix the flour, sweetener, baking powder, baking soda, salt and spices. Stir in the oat bran, raisins and apple. 3. In a small bowl, combine the egg, vegetable oil and applesauce. Stir, along with the All-Bran mixture, into the dry ingredients. 4. Spoon the mixture into an oil-sprayed 12-muffin tray. Bake at 350F for 20 minutes or until lightly browned. Any kind: 15 Oz Box Raisin Bran, All Bran or any bran flakes I was gonna post at the muffin thread this recipe for you, but didn't know if you would see it. I used to make this the night before and it is sooooo good. Great to pop in oven when all are dressing and in a hurry! Cheese Toast 4 slices bread 2 eggs 1/2 cup milk 1/2 tsp dry mustard 1/2 tsp salt 2 cups grated cheese Heat oven to 400. Half bread slices in a greased shallow pan, lay them side by side, so they fit together tightly! Beat eggs, milk, mustard, salt and cheese. Pour over bread. Bake uncovered 10 minutes. Delicious!

You can add bran to just about any batter. Bran, as it is, is not really something that has much flavor and it has more value as fiber than it does culinary value. For many, many years I have been making what I call "toasted grains' that we use on cereals and that I use in baking any kind of muffins or breads and also waffle batters. I use 1 part of both sunflower and sesame seeds, 3 parts of wheat germ, and 2 parts of bran. Each of them is sepertely toasted in a hot iron skillet and then mixed in a big bowl and I keep a jar of this in the fridge as a stock item. When toasting each of these in the skillet, the bran is the one that takes a while to toast up. I buy bran at the co op in bulk. It is inexpensive. I love this mix of toasty goodness and will add some into so many things. My go to waffle batter is a combo of whole wheat flour and a generous dose of toasted grains, and molasses and is very much just the same batter as would be a muffin, just baked in a waffle iron instead of an oven. It is the only way I would ever choose to have waffles. Any other waffle I can happily leave behind. I also add it any cooked cereal . it does not have to be cooked, so add it at the end of the cooking. This has been a kitchen staple for many, many years. Yes, it seems that a box of bran based cereal was used because it was more readily available thatn was just real, ordinary bran. It is not expensive, but it can be when purchased in an average grocery store. I buy at the co op. The same with wheat germ. That little jar at the grocery store is way expensive, compared to other sources. My mix would require the entire jar of it!

You gals are making me hungry! I think I am going to once again make up those muffins. I'll bet it has been 20 years since I made them. I have lots of large containers as I do a lot of big batch cooking and stuff. I put raisin bran down on my grocery list! I am looking forward to making them and sharing with my kids too.

I have trouble finding the right amount of Raisin Bran too. I just eyeball and use 3/4ths of the box. Its been a couple years since I made them but they are pretty good!
That recipe must be an old one! You know, when once upon a time the sizes of things stayed the same! LOL

I've been trying to find what recipe Perkin's uses for their bran muffins, can NOT find it no how! They are wonderful...have a stronger taste of molasses. Wish I could figure it out, I tried adding more molasses to mine and they still don't taste like Perkins.

You can also measure out 9 cups of raisin Bran for that recipe.
