LOOKING for: Meringue type cookies...

I have a lot of egg whites to use up. I want to make some meringue type cookies and some coconut macaroons. Does anybody have some tried and true recipes for me?

MERRY MERINGUES (about 5 dozen)
2 egg whites, room temperature
1/8 tsp salt
1/8 tsp cream of tartar
3/4 cup sugar
1/2 tsp vanilla extract
1 cup semisweet chocolate chips
1 cup chopped nuts
3 TBL crushed peppermint candy

Preheat oven to 250Â° (NOT 350Â°). Lightly grease 2 or more baking sheets. Usin a mixer, beat the whites in a medium bowl until foamy. Add the salt & cream of tartar & continue beating until soft peaks form. Add the sugar, 1 TBL at a time, beating well after each addition. Continue beating until the meringue is stiff. Fold in the vanilla, chocolate chips, nuts & candy.
Drop by teaspoonfuls, 1/2" apart onto the prepared baking sheets. Bake 40 minutes. Remove to cake racks to cool.~~

Overnight Meringues
4 egg whites
1c sugar
2 tsp almond extract
1 tsp vanilla
2c chopped pecans
2c semisweet mini chocolate chips
Beat eggwhites at room temp til foamy. Add sugar 1 T at a
time til stiff. Add flavorings, mixing well. Fold in nuts and chips.Drop by tsp on foil lined cookie sheet. Place in a 350Â° oven and immediately turn off oven. Leave in oven without opening overnight. Yield 10 dozen. Store in airtight container.

Alexa *********************************************************** Holly Berry Cookies Servings: 12 Ingredients: 2 cups all-purpose flour 1 cup white sugar 1 teaspoon ground cinnamon 3/4 teaspoon baking powder 1/4 teaspoon salt 1/2 cup butter, chilled 1 egg 1/4 cup milk 2/3 cup seedless raspberry jam 2 cups confectioners' sugar 2 tablespoons milk 1/2 teaspoon vanilla extract 1/4 cup cinnamon red hot candies 4 drops green food coloring Directions: 1. In a large bowl combine the flour, white sugar, ground cinnamon, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs. In a small bowl beat the egg and 1/4 cup of milk. Add this to the crumb mixture until the dough is moistened. Cover and refrigerate for at least 1 hour. 2. Preheat oven to 375 degrees F (190 degrees C). 3. On a lightly floured surface roll out the dough to 1/8 inch thick. Cut with a 2 inch round cookie cutter. Place on ungreased baking sheets. 4. Bake at 375 degrees F (190 degrees C) for 8 to 10 minutes or until edges are lightly browned. Cool on wire racks. Once cool spread jam on half of the cookies then top each with another cookie. 5. To Make Glaze: Combine the confectioners' sugar, 2 tablespoons milk and vanilla until smooth. Spread glaze over the cookie and decorate with red cinnamon candy before the glaze is set. Let dry. Using a small new paintbrush and green food coloring, paint holly leaves on cookies.

We had a discussion thread on how long cookies can sit and I'm still of the opinion the fresher the better. For shipping a soft, fudgie cookie, I'd only ship it overnight and if I knew they'd be consumed immediately. When they come out of the oven, the countdown timer starts ticking and they don't have a lot of time. Shipping isn't the issue, it's how long it takes. I don't think mold would be likely, just the quality loss. Well, unless it took too long and was in the wrong conditions. A friend of a GF wanted to send me a treat and made some homemade cinnamon rolls then sent them... through the post office! Seven or eight days later when they arrived, well, they thought I had such a treat. I didn't have the heart to tell her I had rock garden additions. She was a sweet little old lady who had trouble breathing anyway so going to the work of making cinnamon rolls was a heck of an effort for her. Sad really. Such a nice thoughtful gesture but a waste of money too, which she didn't really have to throw away. Would have thought the dumb broad GF would have known to tell her it wouldn't work... Sheesh! LOL

I haven't had much luck w/the meringue cookies completely drying. The recipes I've tested, haven't given me the results I had been aiming for.

With that, my question is: Does your recipe allow the meringue cookies dry completely to the center?

Mine always have but I am careful not to make them on a humid day.

This is my grandmother's recipe - we think they're great!

CHOCOLATE WALNUT PUFFS

1 cup (6 ounce package) semi-sweet chocolate chips
2 egg whites, room temp
1/8 teaspoon salt
1/2 cup sugar
1/2 teaspoon vanilla
1/2 tablespoon white vinegar
3/4 cups chopped walnuts

Preheat oven to 350.
Line cookie sheet with parchment paper.
Melt chocolate over warm water.
Beat egg whites with salt til foamy. Gradually add sugar. Beat til peaks form. Beat in vanilla and vinegar. Fold in chocolate and nuts. Drop from teaspoon onto cookie sheet. Bake 10 minutes at 350. Remove from oven and let sit on cookie sheet for 2-3 minutes to set up.
Makes 36 cookies

Thanks, everyone. I will let you know which one I can try. I would love to make Ginger's, but i can't get candy canes over here.
