This is the only one I have tried. My family likes it. Hash Brown Casserole Preheat oven to 350 degrees. 1 - 32 oz. hash browns-southern style 1 stick butter, melted 1/2 cup chopped onions 1 teas. salt 1/2 teas. pepper 1 can cream of chicken soup 2 cups sour cream 2 cups cheddar cheese 1 pkg. onion and garlic croutons 1 stick butter, melted Mix first 8 ingredients together. Pour into 9X13 baking dish. Crush croutons and mix with butter. Put this on top of casserole. Bake, covered, at 350 degrees for 1 hour. Uncover last 15 minutes. Can divide into 2-3 casseroles before baking and freeze. If freezing, do not put crouton mixture on top. This came from my step-mother. She uses crushed potato chips on top for some crunch. The croutons give it a bit more flavor. Linda

I haven't made this but it's from the American Century cookbook & sounds really good: TAMALE PIE (serves 6) Cornmeal Crust: 4 cups water 3/4 tsp salt 1 1/2 cups cornmeal 2 TBL butter or lard (not shortening) Filling: 2 TBL bacon drippings or vegetable oil 1 medium yellow onion, peeled & chopped 1 small green bell pepepr, cored, seeded, chopped 1 1/4 lbs lean ground chuck 1 TBL chili powder 1/2 tsp ground cumin 1 cup canned crushed tomatoes (I'd use Ro-Tel) 1/2 cup beef broth 3/4 tsp salt or to taste For the crust: Preheat oven to 350°. Grease 2 1/2 qt casserole; set aside. Bring water & salt to boiling in a medium heavy saucepan over high heat. Whisking vigorously, add cormeal gradually & continue beating until thick & smooth; beat in butter. Spoon 3/4 of mixture into casserole & with spoon, press over bottom & up the sides. Set aside. Keep remaining cornmeal mixture covered until ready to use. FILLING: Heat drippings in large heavy skillet over moderate heat 1 minute, add onion, green pepper & garlic & stir-fry until limp, about 5 minutes. Add beef, chili powder & cumin & cook, breaking up lumps until meat is no longer pink, about 5 minutes. Add tomatoes, broth & salt & cook & stir 5 minutes. Taste for salt & adjust as needed. Spoon meat mixture into cornmeal "crust" & cover with remaining cornmeal mush. Bake uncovered until browned & bubbly, 30-35 minutes.~~

Classic Crowd-Pleasing Tuna Casserole 3/4 cup green pepper, diced 3 cups celery, diced 2 onions, diced 1/4 cup butter 3 cans mushroom soup 1 1/2 cups milk 3 cups shredded cheese 24 oz. noodles 3 cans tuna (9 oz, each) 1 1/2 cups mayonnaise 3/4 cups pimiento 1 cup slivered almonds (optional) Cook green peppers, celery and onions in butter. Combine mushroom soup and milk. Add with cheese to vegetables, stir over low heat. Cook noodles, drain. Combine with tuna, mayonnaise and pimiento.. Pour sauce over. Top with almonds. If you want to freeze it, do it at this point. Bake at 425 degrees for 1/2 hour. Serves 24. I have it down to a science now, but I freeze my family sized portions in ziplock bags and just thaw and dump into a corningware dish to cook. I also freeze the occasional really large casserole dish of this (maybe half the recipe), since we rarely have big crowds at our house. Enjoy. If you don't like tuna, this can also be made with leftover chicken or turkey.

Eggnog French Toast (Caliloo/Alexa) 1 loaf French bread, sliced 3/4 inch thick 1 1/2 cup eggnog 1 cup milk 2 tablespoons butter, 4 eggs, beaten ground nutmeg, to taste ground cinnamon, to taste In a large bowl or deep casserole dish, mix egg nog, milk, eggs and spices. Dip each slice of bread in the mixture. Let soak for a minute but do not let the bread get soggy. Heat a covered skillet on medium with a little butter, margarine or non-stick cooking spray. Place a few dipped bread slices into the skillet and cover. In about 1 minute check the French toast (lifting with a spatula) to see if it is French toast is slightly browned. Adjust the burner heat if necessary. When the first side is browned, flip and brown the other side. Make sure to again cover the skillet. Enjoy with a sprinkle of confectioners' sugar (powdered sugar), cinnamon, and a little fresh fruit
