LOOKING for: horseradish with beet sauce

My Mom made some kind of a sauce with horse radish and beets a long time ago. You served it with meat. Does anyone have a ny kind of recipe like that?

I suspect she bought red horse radish...you can buy it in a jar...
Or if you are grating your own horseradish root, add one small cooked beet to the mix.

I just made this recipe of Tyler Florence's to go on his fabulous Ultimate Beef Stew and it was delicous. You could puree some beets and add to it.

Horseradish Sour Cream

1 cup sour cream
1 tablespoon prepared horseradish
Olive oil
Salt and pepper
Chives, finely chopped, as garnish

Combine sour cream, prepared horseradish and a drizzle of olive oil in a small bowl and mix until thoroughly combined. Season with salt and pepper. Add a dollop of the mixture on top of the stew and garnish with chopped chives.

Welcome to you both! I make Hunter Suace from my homemade Brown Sauce (one of the four Mother Sauces). It is so rich and delicious. It takes some time to make your own Brown Sauce but the results are worth it and it can be used to make so many lovley sauce variations in no time flat. I'm never without it. I saute a diced shallot in butter, add sliced mushrooms and saute until soft but not brown. Add in my brown sauce and a good glug, glug of red wine. Season with fresh pepper and simmer until reduced by 1/3. . Beef Stock/Brown Sauce/Demi Glace For Stock 5 Or 6 Pounds Of Beef Bones, Veal Bones , Maybe More I buy short ribs when they are marked down. You want bones with some meat on them 2Celery Stalks , Chopped 1 Onion, Chopped 2 Carrots, Chopped For Brown Sauce 3 carrots chopped 4 celery ribs, chopped 1 Large Onion Or 2 Small, chopped 1cup Butter 1 Cup Flour 3 TBSP tomato paste 12 Cups hot beef stock herbs, Thyme, Bay Leaf, Parsley For Demi Glace 2 Tbl Maderia beef stock equal To The Brown Sauce For the Beef Broth Drizzel the bones and veggie with olive oil and sprinkle with salt and pepper. Roast the veggies and beef bones in the oven at 400 degrees for 30 minutes, turn and cook 30 minutes more or until lovely and caramelized. Place in a large stock pot and cover with 18 cups of cold water. Simmer for 4-6 hours. Strain, place in fridge. In the morning skim off fat. For the Brown Sauce ( Sauce Espagnole)- one of the four Mother Sauces Saute mirepoix ( chopped onions, carrots and celery) in butter until the onions are light golden brown. Add tomato paste and continue cooking gently. Make a brown roux over low heat in a heavy pan with 1 cup of butter and 1 cup of flour. When the roux is a hazelnut color, add two thirds of HOT beef broth. (Reserve one third for demi glace), and whisk together. Add the vegetables, as well as a bay leaf, a little thyme and some parsley stems. Simmer the mixture for 2 to 3 hours, skimming off the scum that rises to the surface. Strain it through a fine strainer, and press the mirepoix gently to extract their juices. Chill over night. Skim off fat. Then, for the demi-glace, add an equal amount of beef or veal stock, bring it to a boil, and simmer until the sauce is reduced by half, again skimming the surface as necessary. Off the heat, add 2 tablespoons Madeira. Freeze in ice cube trays. Summary of liquid amounts 18 cups water for broth 12 cups broth for Brown Sauce 6 cups broth , plus 6 cups of brown sauce for Demi Glace

What you are describing sounds very similar to skorthalia, a Greek fresh garlic sauce. It has a thick texture, more like a dip and is traditionally made with potatoes. However, some cooks use bread instead. My dad & grandmother loved skorthalia with boiled beets, fried eggplant, or fried fish. I like it too even though it is strong. Freshly made is delicious, but by the next day the garlic taste is much stronger and almost too much. Skorthalia (Fresh Garlic Sauce) This sauce packs a garlicky punch! Bursting with flavor, this fresh spread perks up simple fried or boiled vegetables, and it also livens up fried fish. 6 to 8 cloves fresh garlic 1-teaspoon salt 1-cup mashed potatoes or fresh white breadcrumbs (moistened and squeezed dry) Â½ cup olive oil Â¼ cup lemon juice 2 tablespoons wine vinegar Mortar and Pestle: Clean and crush garlic with salt in a mortar. Add either the mashed potatoes or the breadcrumbs. Pound well until a smooth paste is obtained. Add olive oil, lemon juice, and vinegar alternately in very small quantities, stirring the sauce with the pestle. Electric Mixer: Crush garlic with garlic press; mix potatoes or breadcrumbs with garlic and salt in bowl with electric mixer, adding olive oil with the lemon juice and vinegar very slowly until completely absorbed. Continue to beat until the sauce is stiff enough to hold its shape. Blender: In an electric blender, blend garlic, salt, lemon juice, and vinegar; add mashed potatoes or breadcrumbs. Add olive oil slowly. If mixture is too thick to blend, add one tablespoon of water at a time Serve with broiled or fried fish, fried eggplant or zucchini and with cooked beets and beet greens.

My very favorite beet recipe is this one with a maple-apricot glaze: APRICOT-GLAZED BEETS Â 4 servings 2 Tbs. butter 1 tsp. lemon juice 1/4 cup maple syrup 1/4 cup apricot juice-* 1/8 tsp. freshly grated nutmeg 1/8 tsp. grated ginger root (optional) 12 to 16 baby beets, about 1 inch in diameter, cooked and peeled In saucepan, combine all ingredients except beets. Bring to a boil over medium heat. Reduce to low and simmer for 4 to 8 minutes. Add beets and toss gently to coat. Heat through for one minute. You can use larger beets, cut into quarters or eighths. * - To make your own apricot juice: Combine 1/4 cup dried apricots and 1 cup water in a small saucepan. Bring to a boil. Reduce heat, cover, and simmer over very low heat for about 40 minutes, or until apricots are soft. Remove apricots (these can be diced and sprinkled over the beets or used in scones, nut bread, etc.) These are good either hot or cold: ROASTED BEETS WITH MUSTARD 2 lbs. small beets (12-16) 1 Tbs. olive oil 1/4 cup sliced scallions 2 Tbs. Dijon mustard 1 Tbs. fresh lemon juice salt & freshly ground black pepper to taste Preheat oven to 425 degrees. Scrub the beets; remove greens and cut off the stems and root ends. Cut the beets in half lengthwise. On a baking sheet with sides, toss the beets with the oil. Arrange cut-side down and roast for 30 minutes, or until tender when pierced with a fork. Let cool for 5 minutes and peel off and discard the skin. Cut the beets into 3/ 8 inch square strips. Place in a bowl and toss with scallions, mustard and lemon juice. Season with salt and pepper. you might try playing around with the sauce from this recipe Gingered Shrimp Cakes 1 lb. large shrimp, cooked 4 scallions, sliced, green parts included 1 Tbsp freshly grated ginger Grated lemon zest from 1 lemon 2 Tbsp chopped fresh parsley 1/2 C fresh corn, cooked, cut off cob 1 lg egg 3 Tbsp mayonnaise 1/2 tsp hot pepper sauce 1/2 tsp salt Pinch of ground black pepper 1 1/2 C fresh bread crumbs or panko (divided) 2 Tbsp olive oil (or more, for frying) 1 Tbsp butter (with the oil, for frying) Coarsely chop shrimp in bowl. Add scallions, ginger, lemon zest, parsley and corn. Combine mayonnaise, egg, hot sauce, salt and pepper and fold into shrimp mixture. Add 1 Cup breadcrumbs and gently mix. Form into 4 patties and gently dredge in remaining 1/2 C breadcrumbs, adding more if necessary. Put on a plate, cover with plastic and refrigerate for at least 30 min and up to 4 hours. Heat oil and butter in large skillet over med-high heat. Saute cakes until cooked through and golden brown on both sides, adding more oil to skillet as needed, about 8 minutes. Chile Garlic Sauce To make Chile-garlic cream sauce, combine 2 Tbsp chile-garlic sauce ( from Asia aisle at supermarket) and juice of 1/2 lime with 1/2 cup sour cream or cream fraiche. Here is one I found on Epicurious. I like Linda's idea of grating your own fresh horseradish root. This is different and sounds really good.

BEET HORSERADISH SAUCE

Though fresh horseradish is in season around Easter, you can substitute drained bottled horseradish. We recommend using the cooked beets left over from the pickled quail egg recipe, but if you're not making the eggs, you can substitute canned beets.
Active time: 10 min Start to finish: 2 hr (includes cooking beets)

1 cup finely grated peeled fresh horseradish (1/2 lb; use small teardrop-shaped holes of a box grater)
3 cooked medium beets (reserved from pickled quail eggs), peeled and coarsely chopped (1 3/4 cups)
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup cider vinegar

Coarsely purÃ©e all ingredients in a food processor, scraping down side of bowl as needed, 30 to 40 seconds. Let stand, covered, at room temperature at least 1 hour (for flavors to develop).

Cooks' note:
Sauce can be made 2 days ahead and chilled, covered. Bring to room temperature before serving.

Makes about 2 cups.

When I was growing up in a Ukarian household my Mom always used "stained beets" baby food and prepared horseradish for the keilbasa and rye bread.

I just wanted to suggest if you make your own fresh horseradish, do it outside. I put the grinder on a table on the patio. The fumes are incredibly powerful, even with purchased horseradish root.

Grind a fresh horseradish root. Add 1 fresh beet, also ground. Add a bit of sugar, if desired, and a bit of salt, also optional. Add vinegar to cover in a sterilized jar. Refrigerate.

The longer you wait between the time you grind and the time you add vinegar, the hotter the horseradish will be. This mixture refrigerates well, but if you make a good amount, freezing in small portions is better to retain heat and freshness.
