RECIPE: Hot Spiced Cranberry Cider

This is a very easy spiced cider that would be nice to serve at holiday parties, a brunch, open house, or as a welcoming drink before the holiday feast. I served it this week at a Ribbon Cutting Ceremony open house at the company I work for. The guests loved it and it made the whole office smell wonderful.

Hot Spiced Cranberry Cider

Yields: 25 servings

"Make some memories with the aromas of cinnamon, clove and lemon, mingled with hot apple cranberry cider."

INGREDIENTS:

2 quarts apple cider

6 cups cranberry juice

1/4 cup packed brown sugar

4 cinnamon sticks

1 1/2 teaspoons whole cloves

1 lemon, thinly sliced

DIRECTIONS:

1. In a large pot, combine apple cider, cranberry juice, brown sugar, cinnamon sticks, cloves and lemon slices. Bring to a boil, reduce heat, and simmer for 15 to 20 minutes. With a slotted spoon, remove cinnamon, cloves, and lemon slices. Serve hot.

note: I used a large coffee maker and put the brown sugar, cinnamon sticks, cloves, and lemon slices in the basket used to hold ground coffee. The cider and cranberry juice then perked up and over the mixture in the basket.
