This might work for you. They're too heavy for me. PUMPKIN MUFFINS (makes 12) 1 cup flour 1 cup whole wheat flour 2 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1 tsp allspice 1/4 tsp ground cloves 1/2 tsp salt 1/2 cup firmly packed brown sugar 2 eggs 1/4 cup butter, melted & cooled 1 cup canned or fresh mashed pumpkin 1/2 cup buttermilk 1/2 cup broken walnuts 1/2 cup raisins or chopped dates (I omit) In a medium bowl, combine both flours, baking powder, baking soda, cinnamon, allspice, cloves & salt. In a large bowl, beat together the brown sugar, eggs & butter until light & frothy. Blend in the pumpkin & buttermilk. Add the dry ingredients & stir just until moistened. Fold in the nuts & raisins or dates but don't overmix. Spoon into greased muffin cups & bake in a preheated 400° oven for 15-20 minutes or until lightly brown.~~Rumsey Rare Bites

Pumpkin Quick Bread 2/3 cup butter or margarine 2 cups dark brown sugar 4 eggs 1 can (1 lb.) or 2 cups mashed squash or pumpkin 2/3 cup water or milk 2 3/4 cups rice flour 1/4 cup soy or gram flour 1/2 tsp. baking powder 2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. cloves 2/3 cup chopped nuts 1/3 cup golden raisins 1/3 cup raisins --Cream butter and sugar until fluffy. Add eggs, pumpkin, and water (or milk). In another bowl mix flours, baking powder, soda, salt, and spices. Add to pumpkin mix. Stir in nuts and raisins. --Pour into 2 greased 9x5" loaf pans. --Bake at 350 degrees F for one hour or until a toothpick inserted in the center of each loaf comes out clean. Not as fattening - Pumpkin Spice Bread 1/4 cup Oleo 1/2 cup sugar 4 eggs (or substitute) 1/2 cup milk (skim is OK) 1/4 cup Dark Molasses 2 Tbs Dark Rum 1 cup Pumpkin, cooked 1 tsp Baking powder 1 tsp Baking soda 2/3 cup Sweet rice flour 1-2/3 cup brown rice flour 1/2 tsp each, ginger, allspice, nutmeg, cloves, cinnemon Cream oleo and sugar together in bowl (or food processor), add eggs one at a time and mix till fluffy. Add milk, molasses, rum and pumpkin. Mix well. Sift all dry ingredients except spices, into a large bowl. Add spices and egg mixture and mix on med speed 2-3 minutes. Pam 3 mini loaf pans, 1 8" loaf pan or bundt pan and pour mix in. Bake 1 hr and 10 minutes for bundt or single loaf, 40 minutes for small mini loaf pans.

Pumpkin Muffins 1-3/4 c. rye flour (almost any flour, or combination you like) 2 t. baking powder 1-1/2 t. cinnamon 1/2 t. ginger 1/4 t. nutmeg 1/4 t. cloves dash salt 1/2 c. raisins or currants 1/3 c. apple juice, or other fruit juice, or milk substitute 2 T. coconut oil (or vegetable oil) 2-4 T. agave nectar (a honey-like sweetener from catcus) Egg substitute equal to one egg, or you can also leave out 1 c. pumpkin puree Preheat oven to 400°F. Grease a muffin tin with vegetable oil, or use cupcake papers to line the muffin tin. Combine dry ingredients in a medium mixing bowl. Mix in raisins. Combine juice, oil, and agave nectar in a 2-cup nonmetal measuring cup or small bowl. Heat liquid ingredients briefly (20 seconds) in the microwave to soften the honey. Add egg substitute and pumpkin puree to liquid ingredients. Mix well. Add liquid ingredients fo dry ingredients and mix briefly. Divide the batter evenly among the 12 muffin cups and bake 20 minutes. Immediately after removing from oven, loosen muffins with a fork, and turn them sideways in the cups to cool.
