What's for dinner 5/10?

I've been doing laundry today--a hot job since the w/d are in the garage, but it had to be done. I can tell this is going to be a long, hot summer :-)

Tonight we're having Jasdip's chicken breasts and a big salad with strawberry dressing. Sliced tomatoes on the side and there are still a couple of cupcakes (mayonnaise cake with caramel icing) left if we're still hungry.

What are you having? And how was your day?

Well, geez.....I thought we'd have a beef tip thingie over egg noodles and some other stuff. I got busy planting starter plants with granddaughter and didn't get the tips out in time.

I DID find a package of home smoked, BBQ'd pork that I can get defrosted in time and some hamburger buns (quality questionable - but should be OK with butter and a broil) so I suppose it will be pulled pork sandwiches. Ice cream or a Ho-Ho for dessert.

Reheated some roasted chicken, baked a potato and cooked some lima beans. I love limas.

Shopped today with Amber. Stopped in at Goodwill and then on to Walmart, shopped there. Lunch was from Bob Evan's. A salad, chili (only ate part of it and brought the rest home) and iced tea. Then on to Meijer and got groceries and my flu shot. If you got your shot there you got a booklet with $80 worth of coupons. It was near 3:00 by the time we were ready to leave so I called home to see if the guys wanted something to eat. Ended up buying butter burgers, fries and shakes to take home, from Steak and Shake. I had iced tea and Amber just had a shake no burger dinner for her. We had coupons for there. So that was our supper. The men are now working on the 3rd tall retaining wall. It was beautiful here again today, a bit breezy though. Hope everyone had a good day. Sue

We bought an electric smoker off craigslist for $25. the other day.It was brand new,still in the box and hadn't even been assembled.DS wanted to try it out but looked in several different stores today for a brisket and couldn't find one.Either didn't have them or they were very fatty and expensive.No such luck today! Hopefully someone will have a good one tomorrow.He grilled burgers and dogs instead.They were good but I had my taste buds all ready for brisket!

Thanks Glenda ! jasdip it is one that was posted here on the recipes area, my husband loves it and has asked for it a few times now. I do a few changes to make it more to our liking. sausage rice casserole 1 pound Breakfast Sausage 1 6-ounce box Uncle Ben's long-grain and wild rice 2 small onions, chopped 1 4-ounce can mushroom pieces 1 10.75-ounce can condensed cream of mushroom soup 4 tablespoons butter Steps Preheat oven to 350 degrees F. Cook rice according to package directions. In a heavy skillet over medium heat, cook sausage and onion until thoroughly done, about 4-5 minutes. Drain. Combine all ingredients except butter and pour into casserole dish. Dot top with butter. Bake until bubbly, about 25 minutes. I also add some diced bell pepper and celery to this recipe and add it to the cooking sausage to get it tender, I also used fresh mushrooms and cooked them with the sausage. I use less butter on top. I cooked mine in the oven longer too about 35-40 mins. The sausage I use is Tennessee Pride mild. I add a bit of seasonings to mine, some Tony's and some garlic salt. I used cream of onion soup this last time. There are never any leftovers once my husband gets hold of it. LOL

I'm making shrimp cocktail, sauce, sliced cheese and crackers. DH had a doctor's appointment today and had a big lunch, so this will be plenty for us!

Nothing that great!

Did have peanut butter pie without the crust and scrapped off the whipped topping.

I had 2 hot dogs with mustard and onions, no rolls. Also Bush's Original Baked Beans. It was like a picnic, all by my self. Had a huge chocolate covered strawberry for dessert that my neighbor gave me.

It was all soooo good!

Trixietx, I was going to have your green chili cheese and rice casserole with our chicken, but I was out of green chilis. I can't believe it! I'm NEVER out of those. Grrr! I'll have to make it after our next trip to the store. :-(

Sister's night at the Home where Annie, my special needs sister lives. We each take our own meals, usually from a drive-thru. I chose Wendy's baked potato and a small chili.

I actually cooked tonight..Hubby has been working long long hours. I fixed a meatloaf, squash and *fresh* green beans.

I love meatloaf, mainly for a leftover meatloaf sandwich. I made one last week when my DS and BIL came and there was hardly any left, which is a good thing and a bad thing :-)

Glenda, you have a whole lot more will power than I do. I love the crust AND the topping!

I love limas too, Schoolhouse. Just plain old cooked, drained and buttered.

Roco, planting with you GD sounds more fun than cooking. Bet you had a great time. What did you plant?

Sue, got any chocolate-covered strawberries left? You have a lot of will power too--no bun!
