LOOKING for: Beef Burgundy

Hi all, I am specifically looking for the beef burgundy recipe that appeared in the Better Homes and Gardens series in the 60's/ 70's. It was a thin book entitled "Meals with a Foreign Flair". If any of you still have that sitting on your shelf and could forward the recipe, I would be so grateful!

Doreen: I have the BH&G Meat Cook Book from that era. It's not the book you are looking for, but it does have a recipe for Beef Burgundy. Would you like me to post it?

Please do. I will recognize the recipe. I can't believe I recycled something that I actually used. I do some catering and I thought it was a classic recipe. Thank you.

Potpie's version sounds so good! I make this dish with fewer steps, but it indeed takes more than an hour. It's basically pot roast (but without the carrots and potatoes), using a chuck roast, as mentioned before, and salt, pepper, and onions essential. Brown the meat first, and add other seasonings such as herbs or vinegar if you like, but it is good to keep it simple. Use a little water or beef broth as the liquid for braising. I'll have to try that thyme or sherry wine next time as something to add in. One thing I personally always love to add during the last few minutes of cooking time is sliced mushrooms! I used to always start with a chuck roast, but I have also cut it up first before cooking, like stew meat, and that works fine. It might cook a little faster. Bring to a boil, then lower heat and simmer gently, covered, for about 1 1/2 - 2 hours. Oh, by the way, I have used round steak instead of chuck, and it is also delicious in beef and noodles. Sorry this recipe is not exact. I've used different amounts of meat; it always seems fine, and this traditionally was a way to stretch a meal. Maybe 2-3 pounds beef to one pound of noodles would be good. Mushrooms kind of fill in with that same texture. I use store bought noodles and cook separately in salted water. You can butter the noodles for extra richness, and maybe add a little chopped Italian parsley to them. After the meat is done, shred or cut it up and combine it with the cooking liquid, noodles, and extra beef stock if needed. Done!

I love to cook sirloin tip roasts rare - yes, as Linda said, they can be a little chewy, but you're not paying for a prime rib roast, either. I roast on a rack in the roasting pan, seasoned with salt and pepper and garlic slivers poked in with a paring knife. I think about 20 minutes a pound for rare (but double check in a cookbook), let it set for 10-15 minutes before you slice thin. Yummy with horseradish sauce made by mixing equal amounts sour cream and bottled horseradish. Leftovers make great Beef Stroganoff - don't cook it again, just add it at the end to heat through. Buy your standing rib roast-it's a little more $$ to get it on the bone BUt-so much more flavor! I preheat my oven to 400. I season the roast with alot of salt & pepper plus 1 packet of Lipton Onion soup mix. Rub it into the meat well. In a frying pan..I add some oil and sear all sides on a high heat...no more than a total of 2-3 min. This will keep the juices sealed inside the roast. Remove roast & place in your roasting pan. (I usually peel 4-5 whole carrots & set the roast on them in the pan). Roast for 45 min at 400 degrees, then I add about an inch of water and drop the temp to 335 and continue to roast until it reaches medium rare. You really need to use a dependable meat thermometer! Remove from oven-place roast on a cookie sheet & cover w/foil. Let rest for 20-30 min. Meanwhile..add water or beef stock to your pan drippings & scrape the pan of all of the stuck on goodies. The onion mix flavors the au jus and makes it a nice rich brown color. Allow about 4-5 oz of au jus per serving...(2 cups water =4 servings in a dipping cup.) If you do get the meat w/the bones? Simply run your knife along the bottom to seperate them from the meat. Slice your meat in 1" slices or so, place on serving platter & drizzle au jus over the top. I also whip sour cream & 2 oz of cream cheese together & add 2 big TBS of zippy horseradish for a side condiment..sooo good!

Here it is. I hope it's the one you're looking for.

BEEF BURGUNDY

2 to 2-1/2 pounds beef round steak, 1/4 inch thick
1/4 cup all-purpose flour
1/4 cup butter or margarine
1/2 cup coarsely chopped onion
1 tablespoon finely snipped parsley
1 clove garlic, crushed
1 bay leaf
1 teaspoon salt
Dash freshly ground pepper
1 6-ounce can whole mushrooms, drained
1 cup Burgundy
Hot cooked rice

Cut steak into bite-size pieces; coat with flour. In 12-inch skillet, quickly brown half the steak on both sides in melted butter; remove meat. Brown remaining meat. Remove from heat; return all meat to skillet. Add onion and next five ingredients. Stir in mushrooms, wine and 1/2 cup water. Bring to boiling; reduce heat and simmer, covered, about 1 hour or till tender. Add more water during cooking if necessary. Remove bay leaf. Serve over fluffy hot cooked rice. Makes 8 servings.

Thanks tobygirl. No, it wasn't it. The one I am looking for has fresh mushrooms, pearl onions and a small amount of tomato paste. I guess I will have to order the book. Thank you again for your trouble.

This recipe does not have tomato paste but it is tried and true. I haven't made it in a long time....think I will make it this weekend. I like to use Pinot Noir...it's not as heavy but I guess you can't call it Bourgignonne then! I also use frozen pearl onions so I don't have to do all that peeling.

Beef Bourgignonne (8 - 10 srvngs)

16 small white onions (about 1 lb.)
6 strips of lean diced bacon
1/4 c butter
4 lb. beef chuck cut in 1 1/2" cubes
1/4 c brandy
1 1/2 tsp salt 1/4 tsp pepper
2 c burgundy
2 cloves garlic
2 c. small whole mushrooms or quartered if larger
1 1/2 c water
1 -2 sprigs parsley
1 celery top (leaves)
1 carrot quartered
1 bay leaf
1 sprig fresh thyme
6 T flour
1/2 c cold water

In Dutch oven Brown onions and bacon with butter. Remove to dish. Brown meat on all sides. Pour brandy over and flame. Add salt and pepper, burgundy, garlic, mushrooms, 1 1/2 c water, onions and bacon. Put remaining veggies and spices in cheesecloth - tie with long string. Add to pot, cover with lid. Cook 1 1/2 hours or until meat is tender. Remove meat, onions and mushrooms. Strain liquid. Mix flour with 1/2 c cold water stir into strained liquid. Cook until thickened. Return meat to sauce. Serve over noodles. Hope this helps

Thanks, that's pretty much how I remember it. I too use the frozen pearl onions. Enjoy!
