bbq country style ribs and boiled baby red potatoes

Been gone all day so put some low sodium chicken breast on a mini whole wheat bagel, and some romaine lettuce. Easy, and no dishes.

With all the talk about the unstuffed pepper soup I sent Mike to the store to get what I needed. So that is what we will have tonight.

That soup does sound good. Let us know how your family likes it.

It got a thumbs up from Mike and Bobby said it was okay (what do teenagers know anyway) I thought it was delicious. It was very easy to make and we have plenty for leftovers. I am sure this is something that would freeze very easily.

I love to eat fresh French Baquette with mine, butter a big piece and dip it into the soup. mmmmmm. Yes, the soup freezes just fine.

I love homemade meatloaf sandwiches--with lots of ketchup and squishy bread.

It is hot here, so we had a Chinese chicken salad and some thick slices of 7 grain bread from the bakery.

Chinese Chicken Salad

A whole cantaloupe (peeled and chopped), a chopped head of iceberg lettuce, 4 thinly sliced scallions and their tops, 1/2 c toasted sliced almonds, 2 tablespoons toasted sesame seeds, 2 cooked and shredded chicken breasts, one crushed package of raw Top Ramen noodles only. Dressing--1/2 c oil, 3 tablespoons of rice vinegar, 1/2 teaspoon of dry mustard, a few pinches of powdered ginger, 1/2 teaspoon black pepper, 1/2 teaspoon of salt, 2 tablespoons of sugar. Mix and let sit while you make the salad so the flavors mix, and then mix again with whisk. Add the raw noodles at the last minute.

We had hard and soft shell tacos and refried beans.
Nita that soup freezes beautifully.

Last night was shredded beef tacos. Must have hit the spot. DH at 12 (!) of them! LOL
