looking for: eastern nc pulled pork

I'm looking for a recipe for this that I can use in my dutch oven. I was introduced to Pig Pickin in Williamston, NC. I think they used a sauce from Shaws BBQ - they don't have a website that I know of. I made pulled pork from a recipe on a dutch oven website but it was missing something. I can't put my finger on what. I did have to add more brown sugar and more cider vinigar to it.

I think the signature taste for NC BBQ is white vinegar...
I didn't taste what you made nor what youw ere trying to copy....but maybe a jag of white vinegar would fix it up.

I've saved this recipe for a lonnnng time from Pat T.

PAT T'S NORTH CAROLINA PORK BARBECUE

1 (4 to 5lb) Boston butt
3 T brown sugar
2 T dry mustard
1 t salt
1 large onion, chopped
1-1/2 cups water
1/4 t ground red pepper
1 cup vinegar
1/4 t black pepper
1/2 cup ketchup
1/2 cup Worcestershire sauce

Place roast in roasting pan. Combine remaining ingredients, stir well. Pour mixture over roast. Cover and bake at 325 for 5 to 6 hours or until meat is very tender. Remove from oven, let cool.
Remove roast from sauce, place sauce in fridge until fat congeals.
Skim fat and discard. Remove meat and shred. Return meat to sauce in pan and stir well. Cover and bake at 325 for 15 minutes or until thoroughly heated. (From Grandma's Kitchen Cookbook.)

we've camped all around the southern side of asheville over the course of many yrs. it all depends on what you're looking for. there are lots of waterfalls on the southern side of 40, in the pisgah forest region. dupont forest is a must see if you are anywhere close. a lot of the last of the mohicans was filed there and it's full of great hiking trails. there are 5 stunning waterfalls within a reasonably easy half hour walk. http://dupontforest.com/ you can't camp there. if you do visit that area, be sure to see 'pretty place'- just ask directions once there; it's 5 mins from dupont. it's an open air chapel at the tip top of a mtn, right along a cliff. made of stone and wood, with 180 degree views. stunning. but, a campground just a few mins from dupont is http://www.blackforestcampground.com/ . has a bunch of stuff & is quiet. the owner is a bit bossy for my taste but fairly easy to avoid. because of her, the place is very well kept. it has lots of activities- a pool, playground, rec hall & more. plus the best pancake breakfasts to be found. we stayed at a place on the eastern side of asheville along 40 that was nice and close to a lot, near black mountain. right on a small mountain creek. more rustic than some of the others. the link is: http://www.campingnc.com/campground/ another old favorite is http://www.kiz.com/campnet/html/zp/nc/0738/0738pics.htm. they have tame huge trout in their stream that they feed each day, and a neat stone pagoda/fireplace gathering area. mostly rv'ers & older folks, though we didn't feel unwelcome with kids. there's a playground. a place we stayed many yrs ago near brevard that was quaint and quiet with lots of rec opps right there is: http://www.cascadelakerecreationarea.com/ last but not least, our very favorite campground is a place called earthbound lodging in canton, about 45 mins west of asheville. 5 mins from the parkway- and a very good area to do bike riding. right on a creek where you can tube. wonderful people who own & run the place. can't recommend it highly enough. http://www.earthboundlodging.com/amenities.htm if you are on the parkways and pass mt. pisgah inn, stop for the view and wonderful restaurant. that's how we end our camping trip each yr- we spend 1 night there. the food is very reasonable, tastes great, they get all types in there, and it's got a whole wall of glass with 180 degree views from anywhere in the restaurant. there is a campground across the rd, but we've never stayed there, so i can't tell you how good or bad it is. wherever you go, have fun!! tammy

Pork Skin -- What is it good for?

I have pictures of pork skin crackling in my other "Dork's Pork" thread. I said "The skin was made into a sheet of priceless cracklings. It was almost worth throwing away the meat just to have the skin. " In fact, recently I went to a fancy birthday party; one of the dishes was a whole roasted suckling pig. They only served the crispy skin which was considered a divine delicacy. They did not serve the meat. They just cut up the meat for whoever wanted to take it home. "----------- The skin is so thick and tough, almost impossible to cut with a knife. How does it end up crispy and fit to nibble on when it's just roasted?" The skin is not that tough, just very resilient. You do need a razor sharp knife to cut into it. Yes, RAZOR sharp. I actually use a surgical scalpel I got on eBay to do the scoring. That makes it very easy. You don't have to fry the skin. There are many recipes for roasting crispy pork rind on the WEB and on youtube. Don't throw away the best part of the pig!!! dcarch

Hi Mary, Here is the method of cooking a smoked shoulder that my mother-in-law taught me that she learned from her own mother and it always comes out delicious (they were French Canadians who came to live in Massachusetts). I still have her handwritten recipe: "Put shoulder in a pan of cold water. Add 1 1/2 tablespoons of mustard. Boil about 2 hours. Remove shoulder from the pan, throw water away. Rinse shoulder with cold water. Once more, set shoulder in a pan of cold water, add 1 tablespoon red cider vinegar. Boil about 3/4 of an hour. Remove from pan, but do not rinse. Set shoulder in a baking pan with a cover. Put it in the oven at 350 degrees for about 1 hour. Enjoy!" I use a deep stockpot when I cook it, and I follow her directions every time. The method takes the harsh saltiness out of the meat and leaves it tender and falling off the bone. It makes a great meal with scalloped potatoes and green beans (among other things!) I thought I was going to have to wait until I got home to find the brand of the sauce, but a few google searches popped up an image of its easy-to-remember label. Scott's Family Barbecue Sauce http://www.scottsbarbecuesauce.com/ For my birthday party in September I used about 5 pork tenderloins, as described above in two crockpots (a 4 qt and a 6qt) and cooked the meat over night. I then pulled it apart in the morning and returned it to the 6 qt crockpot which it nearly filled, and stirred in one bottle of the above BBQ sauce. At the party I had another bottle of the Scotts BBQ sauce, and two others to choose from (which I believe were Stubb's Hickory Bourbon, and Stubb's Smokey Mesquite) for people to use as they served themselves. After starting with nearly 15 lbs of meat, at the end of the party there was only enough left to make about 6 sandwiches the next day.

Ginger's recipe sounds good, but the sauce listed is more of the Lexington NC type of sauce. Eastern pulled pork is mainly vinegar with seasoning -- major portion of cayenne pepper -- some salt, little brown sugar. Any other type of sauce is usually served "on the side" with the pork, but not cooked or basted with the sauce as it would burn and hide the real flavor of pork roasted long and slow over coals.

There really are two types of bbq in North Carolina...Eastern and Western.

I'm certainly no expert, but was raised in Eastern NC. Eastern NC BBQ always has a vinegar based sauce. No ketchup, or tomato sauce of any kind. (That's western NC BBQ). All we ever used for the sauce was vinegar, salt, red pepper flakes (and some ground red pepper) and a sweetner-- usually pineapple juice, which I think sweetened and diluted the vinegar some without having to use water in the sauce. it's made "to your taste"-- in other words, if you like it hot, add more red pepper, etc. Just mix and taste-- the main thing is not to cover up the taste of the pork. We used to make it by the gallon, but for one Boston Butt, I would think about 1 cup vinegar, 1/2 cup pineapple juice, 2 tablespoons crushed red pepper, and maybe 1 teas. ground red pepper and 2 or 3 tablespoons of salt. Cook the pork first and then shred and add the sauce. It's best to cook outside on the grill, but the dutch oven method would work too. You do need to leave the lid off at the end of cooking to brown the meat though (I would think.) Hope this helps.

Check out this website. It's all about North Carolina barbecue. I read an article in Country Living while in my mom's eye doctor waiting room. It featured a father/daughter team who followed the North Carolina barbecue trail. The trail part intrigued me because my daughter wants to do something like that for her honeymoon. So I looked up both the article and the North Carolina Barbecue Society website.
