RECIPE: comfort potato soup

One of my older friends gave me this recipe for potato soup when I was first married 37 years ago. I have tried other potato soup recipes, but this is my husband's favorite.

8 medium potatoes (peeled and cut up)

1 can evaporated milk

1-4oz. cream cheese

1 large onion chopped

1 grated carrot

1/2 stick of real cow's BUTTER (not margarine)

4 cups of water (less is you want thicker soup)

Bring potatoes, onion, and carrot to a boil. Boil until potatoes are done and potatoes are somewhat falling apart and making a starch of their own. Do not boil too long as potatoes will turn to starch water. Do not drain water off. Add milk, butter, and cream cheese to potato pot. Simmer until cream cheese, milk and butter is intergrated with potato, onion,carrot and water. Garnish any way you want. Parsley, or chives etc. Good on a cold winter day!
