recipe: iso rotisserie recipes

I got a George Foreman Jr. Rotisserie last week and would like some recipes to use it, What have you made?

please post rubs, marinades etc. Thank you

Woodie posted this one some time back & I tried it & really like it. (I didn't use a rotisserie but it would work.)

This is really good, and really easy. The yogurt mixture really sticks to
the chicken and makes it tasty and tender. Keep in mind it has to marinate
for at least 8 hours.

8 hours 25 minutes (8 hrs prep, 25 min cooking)
4-6 servings

1/2 cup plain fat-free yogurt
3 cloves minced garlic
2 tablespoons lemon juice
1 tablespoon canola oil
1 teaspoon sugar
1 teaspoon chili powder
3/4 teaspoon ground ginger or 1 tablespoon minced fresh ginger
1/2 teaspoon salt
1/2 teaspoon ground cumin
4 to 6 boneless chicken breasts

1 Combine first nine ingredients,and pour into a large ziploc bag.
2 Add the chicken to the bag, seal, and turn bag to coat chicken
with mixture.
3 Refrigerate 8 hours or overnight.
4 I think overnight is best.
5 You can grill over indirect medium heat until done.
6 But I used my Showtime Rotisserie.
7 If you have one, (and if you don't, they're very cool), use the
flat basket and cook for about 25 minutes.

Have not installed my Capital yet and have only done this on my grill.But did not want to leave you in a panic hitting the refresh button:) New Years and beef usually mean Prime Rib. I don't think you want to deal with the bones. So 4 lbs Boneless Ribeye Roast. (BTW saw some really nice ones at my local Costco) 3 teaspoons Kosher salt 1 teaspoon ground black pepper 8 medium minced garlic cloves (If you are not a fan of garlic,at least 4 cloves) About 4 hrs before dinner rub ingredients into roast. Let sit at room temperature, not in fridge.No it will not spoil. About 1.5 hrs before dinner put in oven. Turn on rotis and broiler. An hour in turn off broiler then check temp. 125 degrees for medium rare. Don't serve good cuts of meat burnt. Remove and cover with aluminum foil and let rest for 15-20 minutes. Cut and serve. I don't like to eat meat with various sauces. Do you? I know some peole like gorgonzola suauces or what not but I prefer to taste the actual beef.

How about rum balls made with oreo cookies (found at Chowhound): Midnight Rum Balls 1 small package (8.5 oz.) Oreo cookies 1/2 cup confectioner's sugar 1 cup finely chopped nuts (optional - I leave 'em out) 3 Tbsp unsweetened cocoa powder (sweetened cocoa is fine, too) 2 Tbsp corn syrup 1/3 cup rum (don't use more!) granulated sugar Put whole cookies in food processor and whiz until finely crushed. In medium bowl, combine crumbs, powdered sugar, nuts, and cocoa. Blend in corn syrup and rum. Wet hands and shape mixture into one-inch balls; roll in granulated sugar. Store covered, in a cool place. (Rum balls are better after they have "mellowed" for a day or two.) Variation: Prepare marinated cherries: soak a jar of sour cherries in rum or kirsch for a week or two. When ready to use, drain cherries well, then pat dry. Wrap mixture around a cherry and roll in sugar as above. I've also made these cookies with a different alcohol - Chambord (black raspberry liqueur) is really nice. I'll bet an orange liqueur would be good, too.

Cuff's does your rotisserie (oven) have a manual? My Ronco does and when I can get it out, I'll post what it says on a per pound timing. A marinade coating I always use on pork loin is this: Mix Paul Newman's olive oil and vinegar salad dressing with Grey P. mustard or the other brand that has champagne in it (can't think of name) Starts with an M, I think. Anyway, just NOT a hot mustard or a regular hotdog mustard. I can't really tell you ratios but the consistency will be like a little thicker than salad dressing. Maybe the ratio is like 50/50 or so. Taste it, shouldn't be over mustardy,,just a kick. My SIL started me on this and I keep a jar of this Mustard and that salad dressing just for this marinade. Maybe for the R. oven you'll want it a little thicker but I've done mine on Rotisserie with this marinade and it comes out great. Good luck.

LOL! Substitute ”leftover” for ”rotisserie” and you've got a lot of classics there, very Southern creamy. You remind me of my first try having a couple dozen cousins over for Succoth. Trying to get the Succah up and decorated and chickens cooked and stored and vegetables prepped, even with minions, was making me nuts. My mother suggested the rotisserie chickens, which were cooked in store from quality birds. I can't remember if I brought them nome and broke them down to store, but I actually think one of the minions fetched them day of. I made four lasagna sized dishes of harvest chicken pot pie with biscuit crust. Mostly vegetables, with a portion of chicken. It worked out great. I used a simple recipe for stock based chicken gravy and let the root vegetables help with the thickening. I did the rotisserie chicken to make dishes several other times. Since I remodelled my kitchen more than a dozen years ago, and have better and bigger ovens and more refrigeration, cooking them myself is much less of an issue. Not that I wouldn't do it again! It's a great trick.
