recipe: wanted: ham, potato and cheese recipe

We had a fourth of July party and someone brought a wonderful Potato Dish. I asked her for the recipe but got a snippy response, it's so easy all you do is:

take can diced potatoes

mix packaged dice ham

take a little mayo and mix this together

put in some cheese (think she said monterey jack)

and bake for 5-10 minutes

Does anybody have the correct measurements for this recipe?

In all due respect, MsMito, I don't find that answer snippy. Unless her tone of voice was off?

But it's likely she doesn't have an exact recipe, and just cobbles those ingredients together until it looks right. I mean, it does sound kind of simple.

The only real question in my mind, without having seen the dish, is the proportion of ham to potato. The words "can" and "pkg" are a bit nebulous.

And I think I'd use pepper jack to kick it up a little.

But, really, you shouldn't have much trouble replicating it.

Not having heard the tone of voice, I can't judge if the response was snippy or not so I'll take MsMito's word for it since she was there. I suspect she left some ingredients out since that's a common thing with people who really don't want to give out a recipe.

I'll look around & see if I can find anything like it.

Hey Alex...gotta share news with you! You recall what a fan my son is of the Eagles, I mean truly diehard. So much so it's a little bit worrisome! LOL Anyhow his GF, who we adore, gave him tickets to the home game in Philly mid December....maybe the 17th?. She also arranged to propose to him on the Jumbotron! Yes she proposed to him! What a hoot! Nothing could have been more memorable for this Eagles fan!

Here are my two favorite chicken recipes. LEBANESE CHICKEN Posted by: Linda_inTennessee (My Page) on Tue, Nov 25, 03 at 17:53 thought you might like this recipe I love lemon taste in my food List of Ingredients Yield: 4 servings 3/4 c Lemon juice 8 large Garlic clove(s), minced 2 tbs Thyme, minced or 2 tsp Dried thyme 1 tbs Paprika 1 1/2 tsp Ground cumin 3/4 tsp Cayenne pepper 2 Chickens (3 lb ea) Split lengthwise, backbones Removed and discarded Lemon wedges to garnish Whisk lemon juice, minced garlic, thyme, paprika, cumin, and cayenne pepper in small bowl. Place chicken in 13x9x2-inch glass baking dish. Pour marinade over; turn chicken to coat. Cover and refrigerate at least 6 hours or overnight, turning occasionally. Preheat oven to 425 F. Transfer chicken and marinade to large roasting pan. Season chicken with salt and pepper. Bake until chicken is golden brown and cooked through, basting occasionally with pan juices, about 50 min. Transfer chicken to plates. Garnish with lemon wedges. Pass pan juices separately. CHICKEN SAVOY 2 1/2- to 3-pound chicken, cut into 6 pieces (two drumsticks, two thighs, two breasts with wings) 2 tablespoons finely chopped garlic 1 tablespoon dried oregano Salt and freshly ground pepper to taste 6 to 8 teaspoons grated Locatelli or other Pecorino Romano cheese 1/2 cup red wine vinegar (preferably 7% acidity) In a 10 1/2-inch cast iron skillet or other heavy, oven-proof pan, arrange the chicken pieces skin side down and so that they do not touch each other. Sprinkle the chicken with garlic, oregano, salt, pepper and grated cheese, in that order. Place chicken in a preheated 500-degree oven for 35 minutes. Remove from oven and pour on all the vinegar at once. It should sizzle. Return the chicken to the oven for another minute or so. Arrange chicken on a platter and pour on the sauce created by the vinegar. Serve immediately. (Woodie's Note: I don't really use 500 degrees because my smoke alarm will go off, so I usually do 450 for 40-45 minutes, depends on which chicken pieces I'm using - we like dark meat the best. I also think that I use more vinegar, I don't measure, just pour it on, and I use any kind of vinegar, balsamic or red wine, doesn't really matter.)

No, this isn't that recipe but its really good so I'll post it anyway :-) (Yes, I KNOW it's Velveeta!)

INDIANA POTATO SALAD

8 potatoes, cut in small chunks

8 ounces Velveeta cheese - cubed
8 ounces Mayonaise
1 cup chopped onion

1/2 pound bacon

Cook potatoes til firm. Drain and combine with next 3 ingredients. Cook bacon til crisp and break into large pieces. Place on top of potato mixture. Bake 1 hour at 350.

Nobody's complaining about Velveeta here, Woodie. LOL That sounds good.

You didn't say anything about if there were other ingredients but if so, the one below calls for mayo & cheddar but she could have subbed Monterey Jack. I often do in lots of dishes. At least it might give you an idea of quantities.

Here's another with fewer ingredients but this calls for cream, not mayo. Again, the quantities might help you recreate the dish, though.

I have an Opa's Peppered Ham in the freezer.........will have to get it out and try these. EVEN the one with Velveeta, Woodie.LOL

Woodie and Ginger, thank you so much for the recipes. I love velveeta, will try that recipe as it without modifying it. Ginger, the second recipe I'm going to sub mayo for cream and try.

Calling the woman snippy was a nicer way of not saying she had a "girl dog" attitude.

Being a business analyst makes me want exact details and with the price of ingredients it hurts my feelings to have to throw away a pan of food because it didn't taste how I wanted it to turn out.
