LOOKING for: basic, simple tried and true crepe recipe

My 11 year old son wants to make crepes. We have done it a couple of times, but have had trouble. One browned too much even on fairly low heat (too much sugar, I think)and the other just did not taste like crepes I have had before. It was sort of floury tasting.

Any vegetarian (lacto-ovo) ideas for fillings are welcome, as well.
