How about a cheese ball? HAM CHEESE BALL (serves 12-15) Two 8 oz pkg crema cheese, softened 1 cup ground smoked ham 1 TBL grated onion 2 tsp dried parsley flakes 1/2 tsp seasoned pepper 1/2 cup finely chopped pecans Combine first 5 ingredients in medium mixing bowl. Cover & chill 30-60 minutes. Shape mixture into a large ball & coat w/chopped nuts. Wrap w/plastic wrap & refrigerate. Serve chilled w/assorted crackers.~~Food for Thought This is good with corn chips: 5 green onions, chopped 8 oz can water chestnuts, drained & chopped 1 cup sour cream 1 cup mayonnaise 2 TBL soy sauce In a bowl, mix together green onions, water chestnuts, sour cream, mayo & soy sauce. Pour in a container & refrigerate.~~Kitchen Miracles KINGSTOWNE WRAPS 1 1/2 cups shredded cole slaw mix 1/2 cupwater chestnuts, finely chopped 1/4 cup thinly sliced green onions 2 tsp Asian sesame oil (the dark kind) 4 TBL plum sauce 4-6 flour tortillas combine first 4 ingredients & 3 TBL plum sauce, mixing well. Spread remaining 1 TBL plum sauce evenly over tortillas; spread 1/2 cup cole slaw mix on each tortilla to within 1/4" of edges. Roll tortillas up tightly & wrap in plastic wrap. Thanks for the recipes and suggestions! Linda- I'm not familiar with Kaukana Club cheese spread, is it a regional thing? Ginger- Don't have a mixer w/ dough hook, but will wing it with food processor up to adding the RKs, do that by hand so they don't get pulverized. Good thing I built up muscles turning over garden beds all summer. We have lots of great local cheddars here. I may try G's recipe using smoked or garlic-herb. Odd I checked the email reply box when posting, so far have only received Ginger's. Depends on what you have on hand and how much time you have, but here are some easy recipes: Nacho Cups 4 (12 inch) flour tortillas 6 oz Monterrey Jack Cheese, shredded 3 roma tomatoes, diced ½ red bell pepper, chopped 4-5 green onions, chopped 1 (14 0z) can black beans with cumin & spices ¼ c salsa 6 oz Sharp Cheddar Cheese, shredded Preheat oven to 425 degrees. Spray two 12 cup muffin tins with cooking spray. Cut each tortilla into 6 wedges, and push each wedge into muffin pan to form a cup. Layer approx. 1 tsp each of cheese, tomato, pepper, onions, beans, salsa and cheese in each cup. Cover loosely with foil and bake 5 minutes. Remove foil and bake 10 minutes more until bubbly and cheese is golden. Makes 24 appetizers **You could use any ingredients you like in these, try cooked taco meat, diced jalapenos, Mexican rice, pepper jack cheese, etc. for different flavor combinations. In a medium bowl, mix marinated artichoke hearts, Parmesan cheese, red onion, tomatoes and mayonnaise. Top French baguette slices with equal amounts of the artichoke heart mixture.
