RECIPE: Flour Tortilla Recipe

Ok, I give! I'm not going to find the perfect tortilla in the store -- please post your t & t recipe for making homemade tortillas. I really am not a fan of anything I have to roll out, but I need to mature I guess . . . TIA

Iris, this is the recipe that I use. Tried and True many times over. So much better than anything you can buy in the grocery store.

Home Cookin Chapter: Recipes From Thibeault's Table

2 cups flour
1/2 teaspoon salt
1 tablespoon to 1/4 cup lard/shortening
1 teaspoon baking powder
1/2 cup warm water (might need a bit more)

Place the flour, salt, baking powder in food processor and pulse to
mix. Cut in the shortening and then add the warm water and process to
make a soft dough. Dough should be soft but not wet and sticky. Wrap in
plastic and let rest for at least 30 minutes.

Divide dough into 10 or 12 pieces and shape into balls. Keep covered.

Roll each ball out into a 7 to 9 inch circle. Dough should be thin.

Cook on a dry hot grill or frying pan on medium heat, turning once. Do
not over cook or they will be hard. Butter and roll up and wrap in
teatowel to keep warm as you cook the other tortillas.

(I place the ones wrapped in the towel in a low 200 oven to keep warm,
while I am cooking the rest.)

No I do not believe a corn tortilla ever includes any baking powder. ..A real tortilla is a very very simple product. That is not to say that many fancy mexican places don't make them with extra ingredients but a real Mexican tortilla is a simple 2 ingredient bread. If you want them to puff up in the middle the way they do around the edges, just take a spatula and press the center area after you turn the tortilla..not hard...gently. I learned to make and cook them from Mexican women and most of them use their fingers or a clean dish towel and just gently press down on the tortilla and it will puff. You cook them for a few seconds (10 or 15) on one side until it starts to have a few brown spots,... flip and cook this side for a few seconds...press it very lightly to make sure it is in contact with the griddle...It doesn't take long but they get a definite color change with browned spots and this will make a tortilla puffy.,,,I cook my tortillas on a heavy duty comal but a non stick skillet will work. They may not look as puffy after you take them off the grill but they will be two sided like pita with lots of puffiness...They do need to be nice and thin to start with as well. I think what kfc made might be very tasty but she asked for a corn tortilla recipe and what she made was not a corn tortilla and probably isn't going to be the dreamed of puffy home made tortilla de maize...

Terri, I don't use the press for flour tortillas. I roll them out. I only use the press for corn tortillas. The Taco Soup recipe I use makes 10-12 servings (or more) and sometimes I double it if I am preparing it for a bunch of hungry firefighters. I usually make it in a big stock pot, but you can make it in a crock pot if your crock pot is large enough (my largest crock pot can hold a single batch of this recipe but my smaller one cannot, and if I double it, I have to cook it in a large stock pot on the stove). This one gets rave reviews whenever I make it and it often is my go-to recipe when I'm cooking food to take to a bereaved family. I think the one thing that makes this Taco Soup more flavorful than any other taco soup recipe I've ever used is the packet of Hidden Valley Ranch dressing mix. Paula Deen's Taco Soup Recipe For chicken tortilla soup, I don't usually use a recipe, although I am sure that the first time I made it, I did use a recipe. Since then, I just wing it and vary how I make it depending on what sort of tomatoes and peppers I have on hand. Since I am a "pinch of this" and a "handful of that" type cook, it can be hard to translate that sort of cooking style into a recipe unless I were to go into the kitchen right now, whip up a batch and measure everything precisely as I did it. However, I looked online to find a recipe that is most like the one I use and I found the one from Rick Bayless. This one is so similar to what I do that I wonder if the first recipe I tried was indeed his. The only thing I do differently from the way he does it (and his way is superior, of course, as it gives you a smoother soup) is that I just throw everything in the pot and cook it. This you need to sort of go by feel but this recipe is the best one I've tried.
FLOUR TORTILLAS
2 cups flour
1 tsp salt
1 1/2 tsp baking powder
1 1/2 tsp oil (corn or canola)
3/4 cup lukewarm milk or water

Sif the flour \, salt & baking powder into a large mixing bowl. Into the dry ingredients pour the oil & mix with your fingertips to combine. Add the milk or water, working the liquid into the dough until a sticky ball forms.
Lightly dust a counter or pastry board with flour & knead the dough vigorously for 1 minute. The mixture hsould be "earlobe-soft" & no longer sticky. Let the dough rest, covered with a damp cloth for about 15 minutes. Dive the dough into 6-8 balls, cover them again with the damp cloth & let them rest another 15-30 minutes (or you can refrigerate them covered up to 4 hours.)
Lightly dust a counter or pastry board w/flour & roll out each ball of dough into a circle or oval approximately 1/4" thick. If you want nicely rounded tortillas, trim off any ragged edges & discard. Don't roll the dough out more than once or the tortillas will be touch so you should reroll any scraps.
Heat a dry griddle or heavy skillet over high heat for 5 minutes. cokk the tortillas 30 seconds on each side or until the dough looks dry & slightly wrinkled & a few brown spots form on both surfaces. Serve warm.~~
