Amaretti Ice Cream Balls Recipe courtesy Rachael Ray, 2007 24 amaretti cookies 1/4 cup amaretto liqueur 2 pints vanilla ice cream Chocolate sauce Whipped cream Crush cookies by hand or in plastic bag. Place onto a sheet pan. Dampen the cookie crumbs with the liqueur. Scoop ice cream balls onto the sheet pan and roll around until covered. Place the balls into a serving dish and top with chocolate sauce and whipped cream. DAIQUIRI PIE This is a wonderful holiday dessert -- and soooo easy! Daiquiri Pie 1 package lemon pudding (not instant) 1 package instant lime jello (or strawberry, or whatever flavor you want - Use strawberry for Strawberry Daiquiri Pie, banana for Banana Daiquiri Pie, etc.) 1/3 cup granulated sugar 2 eggs 2-1/2 cups water 1/2 cup rum (more doesn't hurt it - I used dark rum and stuck to 1/2 cup) 2 cups Cool Whip (thawed) Graham cracker pie crust Mix the pudding, jello, sugar, add 1/2 cup water and two eggs. Beat well. Then add in the rest of the water and mix. Cook over medium heat until it comes to a full boil, stirring occasionally. Remove from heat and add the rum. Let it cool for two hours -- it will thicken. Then add the Cool Whip and mix well again. Pour into the pie crust. Chill until set. Source: Bacardi Recipe book The alcohol in the rum evaporates since it is added to the hot liquid. I decorate the strawberry one with sliced strawberries and the banana one with sliced bananas. They look real pretty. Barbara 52's Frozen Lemon Cream Sandwiches one 7-oz container chilled creme fraiche 1/4 cup lemon curd finely grated zest of one lemon 12 crisp butter waffle cookies 1/4 cup chopped unsalted pistachios Line a small baking sheet with wax paper. In a chilled bowl, beat the creme fraiche with the lemon curd and zest until firm peaks form. Arrange half of the cookies on the baking sheet and spoon the lemon cream onto the centers, letting it ooze gently to the edges. Top w/the remaining cookies, pressing down very gently. Transfer the baking sheet to the freezer and freeze the sandwiches until firm, at least 4 hrs. Spread the nuts on a plate and roll the edges of the sandwiches in them. 6 servings (Can be frozen in an airtight container up to one week.) NOTES: Jules Destrooper Crisp Butter Wafers (from Belgium) are available from specialty shops in the US. They are, as their name implies, wonderfully crisp and buttery ... accept no substitute! Use any good brand of lemon curd. I used Nelson's, from England. GRASSHOPPER PIE 6 tablespoons melted butter 24 Oreo cookies (take out the middles) 1/4 cup Cre De Menthe 1 cup heavy cream 1 small jar marshmallow fluff Crush cookies and add melted butter. Press into 9 inch pie pan. In a bowl, whip the heavy cream. In another bowl, mix the marshmallow fluff and Crème De Menthe and add to the heavy cream. Spoon into pie shell and freeze until ready to eat. Decorate with Oreo cookie crumbs. JOYCE'S RICE PUDDING 1 quart milk 1 quart half and half dash of salt When mixture comes to a boil stir in one cup regular long grain white rice. Stir for about 40 minutes at medium high until mixture starts to thicken. Combine 2 eggs, 1 cup sugar and 1 tsp vanilla. Add to mixture and stir another 8 minutes. Pour into 9 x 13 pan and chill. Best if made a couple days ahead of time. Enjoy. STRAWBERRY CHEESECAKE TRIFLE 2 pints fresh strawberries, sliced 1 cup sugar, divided 2 packages (8 ounces each) cream cheese, softened 3 tablespoons orange juice 3 cups heavy cream, whipped 1 loaf (10-3/4 ounces) pound cake, cut into 1/2 inch cubes 3 squares (1 ounce each) semisweet chocolate, grated Garnish - chocolate curls and additional strawberries In a bowl, toss strawberries with 1/2 cup sugar and set aside. In a mixing bowl, beat cream cheese, orange juice and remaining sugar until smooth. Fold in the whipped cream, set aside. Drain strawberries, reserving juice, set berries aside. Gently toss cake cubes with reserved juice. Place 1/2 of cake in a 4 quart trifle dish. Top with 1/3 cream cheese mixture, 1/2 of strawberries and half of grated chocolate. Repeat layers. Top with remaining cream cheese mixture. Garnish with chocolate curls and strawberries. Cover and refrigerate for 4 hours (at least). 14 servings Not Yo' Mama's Banana Pudding Recipe courtesy Paula Deen 2 bags Pepperidge Farm Chessmen cookies 6 to 8 bananas, sliced 2 cups milk 1 (5-ounce) box instant French vanilla pudding 1 (8-ounce) package cream cheese, softened 1 (14-ounce) can sweetened condensed milk 1 (12-ounce) container frozen whipped topping thawed, or equal amount sweetened whipped cream Line the bottom of a 13 by 9 by 2-inch dish with 1 bag of cookies and layer bananas on top. In a bowl, combine the milk and pudding mix and blend well using a handheld electric mixer. Using another bowl, combine the cream cheese and condensed milk together and mix until smooth. Fold the whipped topping into the cream cheese mixture. Add the cream cheese mixture to the pudding mixture and stir until well blended. Pour the mixture over the cookies and bananas and cover with the remaining cookies. Refrigerate until ready to serve.

My son is allergic to dairy - most recipes can easily be adapted to non-dairy. If recipe calls for butter, use a dairy-free margarine; if it calls for milk, you can use rice or soy milk. (I prefer rice milk; SuperTarget, Albertson's, Tom Thumb all generally carry rice milk.) I have also used coconut milk with some success. (Great in sorbet, but I think it just failed in fudge! Waiting another hour to decide on that one.) There is even soy cream cheese available. (Probably have to visit health food store for this item.) Okay, I hate this stuff plain, but it is cook in baking. I have used it in fruit pizza and cream cheese icing and it tasted great. (Plain, it has a funky 'mouth feel.') Here are a few recipes that I make. First is Marilyn's carrot cake. If you don't want to try the soy cream cheese icing, then omit and dust with powdered sugar. Carrot Cake 2 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 2 teaspoons cinnamon 3/4 teaspoon ground ginger 1/2 teaspoon ground allspice allspice substitute is equal amounts each: ground cloves, cinnamon, nutmeg & pepper 1 cup vegetable oil 4 eggs 1 cup granulated sugar 3/4 cup dark brown sugar 1/2 cup orange juice 1 teaspoon vanilla 2 cups shredded or grated carrots 1 cup chopped pecans Pre-heat oven to 350°. Grease and flour two 9-inch cake pans. Sift flour, baking powder, soda, salt and spices together. Beat oil, eggs, sugar and brown sugar at medium speed for 2 minutes or until well blended. Stir in orange juice and vanilla. Beat in flour mixture on lowest speed, just until blended. Stir in carrots and nuts until combines. Bake 35 to 40 minutes or until wooden pick comes out clean. Cool completely before filling and frosting with 1 recipe Cream Cheese Frosting. Cream Cheese Frosting 1 pound powdered sugar (4 cups) 8 oz. Cream cheese; softened 1 stick butter or margarine; softened 2 teaspoons vanilla 1 cup chopped pecans (optional) Combine all ingredients and mix well with electric mixer. Chocolate Crinkles 3 beaten eggs (I used Ener-G egg replacer) 1 ½ cups sugar 4 squares (4 ounces) unsweetened chocolate, melted ½ cup cooking oil 2 teaspoons baking powder 2 teaspoons vanilla 2 cups all-purpose flour Powdered Sugar In a large mixing bowl stir together beaten eggs, sugar, melted chocolate, cooking oil, baking powder and vanilla. Gradually stir in the flour till thoroughly combined. Cover and chill for one to two hours or till the dough is easy to handle. Shape dough into 1-inch balls. Roll balls in powdered sugar to coat. Place two inches apart on an ungreased cookie sheet. Bake in a 375 degree oven for 8 to 10 minutes or till edges are set and tops are cracked. (Do not overcook!) Remove the cookies from the cookie sheet. Cool on a wire rack. If desired, sift additional powdered sugar over cookies. Makes about 48. Chocolate Upside Down Pudding Cake 1 cup flour 1 tablespoons baking powder ¼ cup cocoa powder ¼ teaspoon salt ½ cup sugar ½ cup margarine ½ cup milk (I use rice milk) 1 teaspoon vanilla extract Sauce: ¾ cup sugar ¼ cup cocoa 2 cups boiling water Preheat oven to 350 degrees. In a large bowl, stir together the flour, baking powder, cocoa and salt. Add the sweetener, margarine, milk and vanilla and mix together until just mixed. Spread in a lightly oiled casserole dish. Set aside. In a medium bowl, mix together the sugar and cocoa. Sprinkle evenly on top of the cake mixture. Carefully pour the boiling water over top. NOTE: DO NOT MIX THIS TOGETHER! It will do its own thing in the oven. Bake for 40 minutes. To serve, scoop out portions the cake will be on top and the pudding will be on the bottom. ~ Suzie

You didn't mention if your meal would be sitting out for any length of time, but here are some more ideas. Some include mayo, so use your own judgement on whther they will work for you or not. This one will serve 6 people, maybe more, and is easy to double or triple, if necessary. Tequilaberry's Salad Dressing: 1 cup Hellmann's Mayonnaise (not Miracle Whip!) 1/4 cup sugar 1/4 cup milk 1 pound bacon-cooked until crisp and crumbled (can use real bacon bits) Salad Base: 2 pounds bagged Dole Salad Mix ( I use my own mixed greens) 1/2 head of cauliflower, cut in small pieces 11/2 cup shredded Parmesan cheese Mix dressing ingredients until they are the consistency of heavy cream. If needed, add extra milk or sugar to taste. Toss together the Salad ingredients and pour the dressing on. Toss until well coated. This one makes enought ot feed probably 8 people. Again, easily doubled. Caesar Pasta Salad From Cooking Light 3 c. cooked Penne pasta 2 c. chopped Romaine lettuce 1\-1/2 c. halved cherry tomatoes 1/2c. chopped fresh basil 1/2 c. chopped green onion 1/3 c Caesar dressing 1/4 c. chopped fresh parsley 4 oz. crumbled Feta cheese 1 garlic clove, minced 3 c. shredded cooked chicken breast I think it was Ruthanna who posted this one a few years ago. Sorry if I am mistaken. Simple but very good! GEORGIA PEACH POUND CAKE 3 cups flour 1/4 teaspoon baking soda 1/2 teaspoon salt 1 cup butter, softened 3 cups granulated sugar 6 eggs (at room temperature) 1 teaspoon vanilla extract 1/2 teaspoon almond extract 1/2 cup sour cream 2 cups chopped, peeled peaches Preheat oven to 350 degrees F. Grease and flour a 10-inch tube pan. Mix the flour, baking soda and salt in a small bowl. Cream the butter and sugar in a mixer bowl until light and fluffy. Add the eggs, 1 at a time,mixing well after each addition. Stir in the vanilla and almond extracts. Add the dry ingredients and mix well. Fold in the sour cream and peaches. Pour into the prepared pan. Bake for 75 to 85 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pan for 10 minutes. Invert onto wire rack and cool completely. Icing 8 ounces cream cheese, softened 1/4 cup butter, softened 1 tablespoon milk 1/2 teaspoon almond extract 1 (1 pound) box confectioners' sugar, sifted Cream the cream cheese and butter in a mixer bowl until light and fluffy. Add the milk and almond extract and mix well. Add the confectioners sugar gradually, beating until smooth. Frost cake. Store leftover cake covered in refrigerator. CREAMY DUTCH APPLE DESSERT 1/4 c. butter 1 1/2 c. graham cracker crumbs 1 (14 oz.) can Eagle Brand sweetened condensed milk (not evaporated milk) 1 c. (8 oz.) sour cream 1 (3 oz.) cream cheese 1/4 c. Realemon lemon juice 1 can Comstock apple pie filling 1/4 c. chopped walnuts 1/2 tsp. ground cinnamon Preheat oven to 350 degrees. In a 1 1/2 quart shallow baking dish (10 x 6 inch) melt butter in oven. Sprinkle in crumbs; stir well. Press on bottom of dish. In medium bowl, mix together sweetened condensed milk, sour cream and lemon juice and cream cheese. Spread evenly over crumbs. Spoon pie filling evenly over creamy layer. Sprinkle with walnuts that have been mixed with the cinnamon. Bake 25 to 30 minutes or until set. May be served warm or cold. Refrigerate leftovers. Variations: Omit cinnamon, substitute blueberry, cherry or peach pie filling for apple pie filling. Linda
