LOOKING for: Cake Or Brownie Recipe For 11x15 Pan

I have this pan...inside measurements 11x15 and would like to make a cake (chocolate) or brownies to feed a big crowd. I would greatly appreciate T&T recipes. Need to take these to a church supper tomorrow.

Texas sheet cake:
White Texas Sheet Cake

1 cup butter or margarine
1 cup water
2 cups all purpose flour
2 cups sugar
2 eggs, well beaten
1/2 cup sour cream
1 tsp. almond extract
1 tsp. salt
1 tsp. baking soda
Frosting:
1/2 cup margarine
1/4 cup milk
1 (1 lb) box Confectioner's Sugar
1/2 tsp. almond extract
1 cpu chopped nuts (I use pecans or almonds)

In a large saucepan, bring butter and water to a boil. Remove from heat; stir in flour, sugar, eggs, sour cream, almond extract, salt & baking soda til smooth. Pour into a greased 15 inch x 10 inch x 1 inch baking pan. Bake at 375Â° for 20-22 minutes or til cake is golden brown and tests done. Cool for 20 minutes. Meanwhile for frosting:
Combine margarine and milk in saucepan. Bring to a boil. Remove from heat; add sugar & extract & mix well. Stir in nuts. Spread over warm cake. Serves 16-20.

TEXAS SHEET CAKE

2 CUPS SUGAR
1/2 CUP BUTTERMILK
2 CUPS FLOUR
2 EGGS BEATEN
1/2 CUP OLEO
1 TSPN SODA
1/2 CUP SHORTENING
1 1/2 TSPN CINNAMON
4 TBSPNS COCOA
1 TSPN VANILLA
1 CUP WATER
SIFT SUGAR AND FLOUR INTO LARGE MIXING BOWL. COMBINE OLEO, SHORTENING, COCOA, AND WATER INTO SAUCEPAN AND BRING TO A RAPID BOIL: POUR OVER SUGAR AND FLOUR AND MIX WELL. ADD REMAINING INGREDIENTS IN ORDER AND BEAT THOROUGHLY. POUR INTO GREASED COOKIE SHEET (15 X 10) BAKE AT 4OO DEGREES FOR 2O MINUTES.

ICING-BRING ALL INGR. TO BOIL EXCEPT PECANS
BEAT WELL ADD PECANS AND POUR OVER CAKE WHILE HOT

1/2 CUP OLEO 1 BOX PWDR SUGAR 4 TBSPN COCOA 1 TSPN VANILLA
6 TBSPN MILK 1 CUP PECANS CHOPPED

This is refrigerated, not frozen: PINK TORTE 1 box coconut macaroon cookies 1 pint heavy whipping cream 1 can crushed pineapple, drained 2 egg whites 1/2 cup sugar 1 cup boiling water 1 pkg Jello (any red color) Crush cookies in a processor to make fine crumbs. Pour Jello into boiling water, stir until Jello is dissolved & refrigerate until partially set. Beat egg whites w/sugar until stiff. In a separate bowl, beat whipping cream until thick. Remove Jello from refrigerator & beat until foamy. combine egg whites & whipping cream. Fold in Jello until entire mixture is smooth, no lumps. (This will be the pink mixture). Grease bottom & sides of a springform pan (or you can use a 9x13" pan.) Sprinkle 1/3 of the cookie crumbs on the bottom & sides of the pan. Pour in 1/2 of hte pink mixture. Sprinkle with 1/3 of the macaroon crumbs, then layer all of the pineapple & then the remaining pink mixture. Finish topping with the last of the cookie crums. Refrigerate overnight.~~Kitchen Miracles HEATH BAR ICE CREAM PIE (make day before) - Serves 12 1 1/4 cups chocolate wafer crumbs 1/4 cup butter, mleted 12 (about 12 oz) Heath bars, refrigerated to harden 1/2 gallon vanilla ice cream, softened Mix chocolate wafer crumbs with 1/3 cup butter, mleted. Line 9x13" pan with crumb mixture. Pat down & refrigerate until firm. crush hardened Heat bars but placing unwrapped candy in a plastic bag & hitting with rolling pin or saucepan bottom. Mix w/softened ice cream. Put in crust & freeze overnight. Serve with warmed sauce. SAUCE: 1/4 cup butter 6 oz pkg chocolate chips 1 cup confectioners' sugar 6 1/2 oz evaporated milk (like Pet milk) 1 tsp vanilla Melt butter w/chocolate chips in top of double boiler. Add confectioners' sugar & evaporated milk. Cook 8 minutes or until thickened. Ad vanilla. Serve sauce warm over pie.~~Pass the Plate CHRISTMAS TRIFLE (serve 8-10) 12 ladyfingers, sponge cake pieces or pieces of yellow cake 4 TBL rum, sherry or brandy 1/2 cup raspberry jam 1/2 cup slivered almonds 1 large pkg vanilla pudding (NOT the instant type) 1 cup heavy cream, whipped Place ladyfingers in 1 layer in a glass bowl. sparinkle with rum. Cover with a thin layer of jam & slivered almonds, reserving a few almonds for topping. Prepare pudding according to pkg directions, cool & spread in an even layer over almonds. Spread whipped cream over pudding & sprinkle reserved almonds over top. Chill a few hours. To serve, cut straight down through all layers for each serving.~~Bound to Please

It shouldn't be a problem. My mother always made her pound cakes in loaf pans rather than a tube pan. She always froze the second one for later. You may not need to change much in terms of baking. Just check carefully for doneness with a toothpick, cake tester or piece of spaghetti (uncooked). Here's an interesting table on pan conversions. FROZEN MIDNIGHT LADY (serves 12) Two 3 oz pkg ladyfingers 1 qt vanilla ice cream 1 qt chocolate ice cream 1 qt coffee ice cream 22 oz fudge ice cream topping 12 oz brickle bits Whipped cream Line sides & bottom of 10" springform pan with split ladyfingers, standing rounded, uncut edges around inside of pan. Drop slightly softened vanilla ice cream by scoopfuls into bottom of pan; smooth ice cream using back of a spoon to form an even layer. Cover ice cream with 1/3 of fudge topping. Sprinkle 1/3 of brickle bits over fudge topping. continue layering next 2 ice cream flavors & toppings as described above. Freeze for at least 24 hours. I'm glad to see this thread because I've been thinking about getting a very similar cake pan from QVC. If I remember correctly, don't you just use a regular cake mix and your imagination. In the demo that I saw, they filled it with everything from ice cream, to pudding to fruit. I think they also used only one side and made a jello mold filling the indentation with fruit and a meatloaf topped (filled) with mashed potatoes. Wanda and Mary Ann -- I know you've only used your pan a few times, but were you pleased with it? Did the cake release easily? FABULOUS BROWNIES
1/2 cup butter, softened
1 cup sugar
4 eggs
1 cup flour
16 oz can chocolate syrup
1 tsp vanilla
1/2 cup chopped nuts, optional

Frosting
1 1/2 cups sugar
6 TBL butter
6 TBL milk
1 cup chocolate morsels

Cream butter & sugar. Add eggs, 1 at a time, mixing after each addition. Add flour, chocolate syrup, vanilla & nuts. Pour into a greased & floured jellyroll pan & bake in a preheated 350Â° oven for 15-20 minutes. (Watch closely)

To prepare frosting, place sugar, butter & milk in a medium saucepan. Bring to a slow boil; boil 30 seconds. Add chocolate morsels & stir until chocolate melts. Remove from heat & pour immediately over brownies. (Frosting will seem watery but will set.)~~Food for Thought

SNOW WHITE CHOCOLATE ROLL
6 TBL cake flour (not self-rising)
6 TBL unsweetened cocoa powder
1/2 tsp baking powder
1/4 tsp salt
3/4 cup granulated sugar
4 egg whites, stiffly beaten
4 egg yolks, beaten until thick
1 tsp vanilla
Sifted confectioners' sugar

Filling:
1 cup heavy cream, whipped
3 1/2 oz can coconut flakes (not necessary if you don't like)
1/2 tsp almond extract

Preheat oven to 400Â°. Grease a 15x10x1" jelly roll pan & line with waxed paper.
Sift the flour, cocoa, baking powder & salt together 3 times. Beat the sugar gradually into the egg whites. Beat in the egg yolks & vanilla. Fold in the flour gradually. Spoon evenly into the prepared pan & bake 13-15 minutes. Meanwhile, mix together the filling ingredients.
After baking, immediately turn the cake out onto a cloth covered with sifted confectioners' sugar. Peel off the paper & quickly remove the crisp edges of the cake with a sharp knife. Let cake cool a short time then spread with the filling & roll immediately, beginning at a narrow side. Wrap in cloth & place in the refrigerator until serving time.~~Cotton Country Cooking
