RECIPE: Irish Potato Candy

No potatoes were harmed in the making of this recipe.

It is named after the fact that the resulting confections resemble miniature potatoes.

Someone brought them to our St. Patty's feast today, and they were an instant hit. Don't be misled by the simple ingredients, these are GOOD. Coconut is optional. I suspect they would tast more like cinnamon cake donuts if the coconut was eliminated.

Irish Potato Candy

Amount Measure Ingredient -- Preparation Method

1/2 stick butter

1/2 the 8oz cream cheese

3 cups powdered sugar

1 tsp. vanilla

2 1/2 cups coconut flakes (optional)

Cream butter and cream cheese until smooth. Add powdered sugar and

vanilla and beat until smooth.

Add cocconut flakes (i prefer toasting the coconut flakes) and beat until smooth.

Roll into small balls or small potato shape. Roll in cinnamon sugar (add a little cocoa powder) and refrigerate.
