Help my MIL pick out a countertop (pics)

Hoping you can help my mother-in-law pick out a new countertop. She has to replace her old yellow Formica counter because the area all around and below the double sink is rotted and has to be cut out.

She wants to keep a light-colored counter. Her first instinct was another Formica counter, but for re-sale purposes and less staining/scratching, she's willing to consider another solid surface or one of the less expensive granites. Cost is a consideration - she knows she can't do this for $50 but she's not going to pay several thousand for marble or a rare granite.

The white appliances, yellow cabinets and (relatively new) neutral vinyl floor are all staying.

What do you think, on color first and then materials?
