How Do You Make Your Pancakes?

Do you make them from scratch or do you use a mix. For years I made them from scratch, but now I use Krusteaz complete buttermilk mix. All I have to do is add water and I think they are really good. I buy the 3 1/2 pound bag at Walmart. I know Sam's sells a bigger bag. If I have to add milk, oil and eggs to a mix, I might as well make them from scratch. So how do you make yours?

I make them every Sunday from scratch like everything else I bake. I've never purchased a mix.

My cooktop buzzes a little no matter which size pan I put on which size hob. Not everyone has this experience - it depends on the brand of cooktop and the type of pans, how full they are and how hot they are. I haven't noticed that it matters if the pan is too big for the hob, and I wouldn't describe it as horrible buzzing. I know that not many places have demo induction, but do try to find one, bring your pans and some water to fill them, and listen. The buzzing doesn't bother me as much as the clicking, and the clicking, as far as I can tell, seems to be unique to Kitchenaid. By all means, avoid Kitchenaid induction. I cooked on an old Tappan gas range in a rented cottage this summer, and that gas made noise, too. It hissed. And the gas wasn't nearly as adjustable as my induction cooktop. An old Tappan is no comparison to Wolf, and a built in griddle, or a grill, like a Jennair, are wonderful features. But induction is pretty wonderful, too, for other reasons. The biggest one is probably ease of cleaning, and there are threads that list the many benefits, which I'm sure you've seen. Some people still find that a gas cooktop or range better fits their requirements, but don't be put off by the stories of induction's noise (except KA's clicks) or the lack of a built in griddle. Here is my recipe for Migas, which I have been making for decades. When I have leftover Mexican food, I generally make it into breakfast burritos. Migas 2 tbsp olive oil (approx) 1/4 cup minced onion 2 cloves garlic, chopped 1-2 jalapeÃÂ±o peppers (use Serrano chilies if you want it spicier) 1/2 red bell pepper, chopped 2 tsp cumin* 1 tsp oregano* 4 corn tortillas, cut into 3/4" squares 3 eggs 2 tbsp green salsa salt, to taste 1/3 cup cooked beans or 1/4 cup bean dip (heated in MW) 1/4 cup warmed Spanish rice (optional) 1/3 cup grated Manchego or chopped Cotija cheese 1/3 cup chopped cilantro Heat olive oil in large skillet. Add onions and saute for a few minutes - then add the garlic and peppers and saute for 2 minutes more. Add the cumin and oregano and stir in to blend together. Add the tortillas squares and saute, stirring to make sure that all sides of the tortilla square get coated with seasoned oil. You may need to add a small amount of oil at this point, but it should be minimal. Beat the eggs with the salsa, and add about 1/2 tsp salt, if needed. Pour the egg mixture over the tortilla mixture, and scramble until the eggs are almost done. Add the beans or bean dip (and rice, if you have it) and stir to combine and finish cooking the eggs. Reduce heat, add cheese, and stir to combine. Turn off heat, and stir in cilantro. Serve on warmed plates with tortilla chips, if desired, and guacamole. *If you use bean dip that has been seasoned with a lot of cumin and oregano, you can omit the cumin and oregano here. Options: Add chorizo or other sausage to the sauteed vegetables. You can use chopped tomatoes instead of salsa. Serves three. To make a breakfast burrito, I make a simple omelet using two eggs in a 7" non-stick pan, cover, and set aside. Then I take a large flour tortilla (12" diameter) add 2-3 slices of smoked turkey breast or ham, and top that will a thin layer of bean dip, Spanish rice, sauteed onions and bell pepper and then half of the omelet (I usually make two at a time and use two skillets). Then I top the egg with Habanero hot sauce and grated melting cheese (usually cheddar or Swiss), and then transfer the tortilla to a heated 12" skillet, cover it, and leave it on medium heat for 5-7 minutes, or until the cheese has melted and the tortilla is slightly crisp. Then I remove it to a plate and fold over the sides. It's probably not a burrito because the tortilla gets crisp, but I'm not sure what else to call it. Yummy! I will frequently choose IHOP when I'm out shopping for the day in a city just down the highway (it's not like there are no stores nearby, that place just has all the stores I need together). Pancakes -- regular buttermilk stack, love that melted butter (will have to try the "hole in the middle" technique!) and regular "maple" syrup (I think I'd pass out if I ever tried the real stuff!). With scrambled eggs (not runny) and, um, some pieces of meat which I shouldn't eat. And usually a glass of iced tea. Last year I was out shopping and stopped into the IHOP. Noticed the parking lot was crowded. Yup, it was free pancake day, and I didn't realize it. Service was kind of slow and the place was too noisy for me, so I avoid free pancake day now. Try as I might, I cannot make good pancakes at home! Somebody recently told me that you have to toss the first 2 pancakes, because they're never good. I doubt, tho, that's gonna make me a winning pancake maker! Thank goodness for IHOP!

I just tried a simmering potpourri for the first time and it made the whole house smell so Christmas-y! I had fresh peel from my breakfast orange, so I put it in a saucepan w/ water, a couple of broken up cinnamon sticks and a spoonful of whole cloves & put it on the stove over low heat. It's still going right now & I'll definitely do it again. I also get the free trimmings from HD and arrange them around the house, since our tree is vintage aluminum. They don't sell balsam, though & that's the most fragrant, IMO.

Krustez buttermilk pancake mix...to which I add a slight heaping tsp of sugar and a dollop of vanilla extract. This is for the 1 cup of mix batter.

Yep Kurstez here too from Sam's. That is until Sam's closed it's stores in Ontario. That's the best mix I've ever had.

I don't make them very often, but usually we use use Bisquick that I add some vanilla and a touch of vanilla.

AJ Complete---Just add water. Mother always said "If you find mix as good or better than you can make from scratch, use it." (I live 75 miles from the nearest Sams so that's out.)

Let IHOP make mine!

And I like one topped with eggs over easy!

Used to bake pancakes topped with peaches and sausage. Yummy!

I NEVER use a mix. I make this recipe from scratch and it's the BEST pancake mix my family & I have ever had.
This is imported from All Recipes:

BROWN SUGAR OATMEAL PANCAKES

INGREDIENTS

* 10 tablespoons quick cooking oats
* 1/2 cup whole wheat flour
* 1/2 cup all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 teaspoon salt
* 1/3 cup packed brown sugar
* 1 egg
* 2 tablespoons vegetable oil
* 1 cup buttermilk

DIRECTIONS
1. In a small bowl, combine the oats, flours, baking soda, salt and sugar. In another small bowl, beat the egg, oil and buttermilk. Stir into dry ingredients just until moistened.
2. Pour batter by 1/3 cupful onto a greased hot griddle. Turn when bubbles form on top; cook until the second side is golden brown.
Serves: 5

I always add about a TBLSP of Vanilla Extract because I think it adds something to the mix. I have also heard of using a Maple Extract too, but I don't have any access to that around here.

I make my pancakes from scratch; I normally don't have things like Bisquick in the pantry.

Can't really answer your question with one definitive answer. Some times I make them from scratch--but I don't use a recipe--I make them many different ways--plain, cinnamon apple, whole wheat, buckwheat, corn, blueberry, etc etc etc. Sometimes I use bisquick. Sometimes I'll use a mix--various different ones.

As fast as pancakes disappear, I don't figure it makes that much difference what you make them from--haven't had anyone turn one down yet--LOL!

Sorry, Susan, but I've got to ask: What happened??:)

Our pancakes are made from scratch here at my house. Been doing it for years, but every once in a while will suddenly realize--too late!--I have forgotten to add salt, sugar, or something, agh!!
Yes, I can blame "age"!!:(

When I was growing up, all we ever used were the mixes.
One of my friends married at age 19, and I was visiting them one morning when she decided to cook pancakes for breakfast, and she was making them from scratch!! That absolutely amazed me!! I didn't know you could make them from scratch!! Was I goofy or what?:)

Twinkelnose (hello, by the way, I don't think I've "met" you before), it's not dramatic but it's yucky. I started craving pancakes yesterday, so this morning I pulled the mix out and there were bugs in it-gross! I'm ruined for pancakes for a while now, I'm sure.

I hope when you are making those brown sugar pancakes you aren't counting out 10 tablespoons. 10.67 Tbs. is 2/3rds of a cup, which wouldn't make that much difference, or, if you want to be accurate, 1/2 cup plus 2 tablespoons. It drives me nuts when I see my son-in-law putting in 7 scoops of coffee when I have measured and know it is almost 1/2 a cup. Maybe because I am the impatient kind.

I can't eat more than a pancake or at most two so I just go out for them if the craving hits. Our local Coco's has great pancakes.

I do make my own crepes and French toast at home because I have never found a restaurant that does them well.

I have to agree that Krusteaz is the only mix that tastes good.

I make mine from scratch. I have this lovely recipe. You seperate the egg yolks and whites. Mix the eggs yolks into the batter. Whip the egg whites into soft peaks and fold into batter mixture, lightly. Your pancakes will be so light you will have to hold them down with your spatula.;) Well, almost.

Most of the time I use the Aunt Jamima mix where you do have to add egg, milk and oil. My kids don't care, but I do eat a couple and I don't like the texture of the "complete" mixes. But I am willing to try the Krusteaz complete mix if I see it next time. If I don't have any mix, I will make them from scratch. But I am just as likely to be out of one ingredient or the other.

Sometimes I add stuff to the mix, like vanilla or fruit or cocoa. But once I reached for the vanilla and accidentally grabbed the peppermint extract. Didn't notice until they started cooking and smelled kinda different ;o) I let a kid try one, but we ended up throwing it out and starting over... from scratch, that was the last of the mix.

DS spent the night with a friend a few weeks ago and his mom made pancakes "from a can that looks like whipped cream, you spray it on." Sure enough, next time I was in BJs I saw it, in a can you hold upside down and push the nozzle. So I agreed to try it. The kids still didn't care, but I thought it made tough pancakes, not fluffy. Last week I saw the same stuff featured on the Today Show with Kathy Lee and Hoda. I will not buy it again. That's my review: thumbs down.

I usually use Hungry Jack complete, but I always add a spoon or 2 of apple sauce in the mix, makes them great!

Stephanie-I've heard of that stuff too, looks funny. I think it's called Better Batter or Batter Buster or something like that. Never tried it, but it got a good review on our local station.

I usually use one of the complete mixes. Whichever one you can add water and shake right in the container (betty crocker or hungry jack?) But so many of you talk about Krusteaz that I may try them next time.

My pet peeve about pancakes is having that crusty ring around the edge if you use too much oil-ICK!@ My DH loves them as his mom makes them that way.

Also I laugh at the all you can eat pancakes at IHOP. I can usually eat about 2-3 small ones and I'm sick of them! so, I'd never get my money worth there!

I pick the blueberries...
I measure the flour,
the buttermilk and the eggs,
and then I add a little oil and...
SURPRISE!!!! a good hit of punkin pie spice (ciniimiiiniiin, nutmeg and clove)
and...

.... I think I'm embarrassing myself.

I guess I have to admit that I use frozen blueberries for most of the year, but gosh, they are MY blueberries. Tiffblue and .. .like you really care?

Use to make them all from scratch till i found Krusteaz. You can find the Sam's size at any Wal-mart store,it's down in the restaurant size stuff.

Don't make them often and use Bisquick. I'll have to try Krusteaz.

I do make Swedish Pancakes from scratch. Love those things and one of the few things I'll freeze and re-heat.

Swedish pancakes.

3 eggs
1 Tbs. sugar
1 cup flour
1/2 tsp. baking powder
1+1/2 cups milk
3 Tbs. melted butter

Whisk flour, sugar, and baking powder into bowl. Add eggs one at a time. Mix well. Add melted butter and milk, stir until smooth. I make double batches and freeze with waxed paper in between and just pull out what I need. Put frozen crepes in microwave and DEFROST. It just takes a few seconds.

When I use a mix I use Krusteaz's Wheat and Honey. The Buttermilk mix is good too. But MY favorite is either Oatmeal or Cottage Cheese pancakes. The Cottage Cheese ones kind of remind me of Blintzes.

OATMEAL PANCAKES

2 eggs, beaten
2 c. buttermilk
1/2 c. flour
1 tsp. baking soda
1 3/4 c. oatmeal
1/2 tsp. salt
3 tbsp. brown sugar
1 tsp. cinnamon
1/4 tsp. allspice

Soak the oatmeal in the buttermilk for 20-30 minutes. Mix together the eggs and buttermilk. Mix together rest of ingredients and add to the liquid. Mix well but do not beat. Cook on griddle until golden. Makes 15 pancakes.

COTTAGE CHEESE PANCAKES

1 cup cottage cheese or ricotta
4 eggs, beaten
1/2 cup flour, sifted
6 tablespoons butter, melted
1/2 teaspoon vanilla
1/4 teaspoon salt

Using a potato masher or hand mixer, mix cottage cheese or ricotta with other ingredients.
Heat a griddle or frying pan. Melt a pinch of butter on the surface of the pan and swirl around to coat evenly, or alternatively, use a paper towel dampened with vegetable oil to wipe the hot pan down.

Spoon the mixed batter onto the hot surface, creating pancakes 3 inch diameter pancakes.

Turn only once to cook both sides evenly.

Some of you are talking about the Krusteaz pie mix. Where are you finding this. I found the corn bread but not pie mix.
