I pre-cook my fried chicken in the oven at 350 for about 50 minutes, then transfer to our outdoor grill to crist up the skin.

How are you gonna cook it? grill, oven, etc?

Some people do precook it--either oven, microwave or even in boiling water.

Over charcoal on a grill? The best is low and slow. Make the coals all red hot but covered with ash. NO FLAME! biggest mistake for grilling over charcoal is to many people do not let the coals get hot but no flame. Flame burns Coals cook. Prep chicken pieces by trimming off excess fat, dry rub on seasoning and put on the grill about 6-8 inches high over coals. Watch to make sure fat dripping onto coals doesn't start flame ups. If a flame up starts spritz with a little beer or water. The steam wont hurt the chicken and the beer steam actually adds a bit of flavor. Turn direction (not flip to other side) of piece after about 15 min let cook another 10 min then flip to other side. turn direct at 15 min then baste on BBQ sauce cook for ten min and flip so BBQ sauce is down baste other side let cook another 5-10 min per side with sauce basting as needed. Once BBQ sauce is cooked on lifting the rack higher at least 12" over the coals, or spritz the coals to cool them down some, close the cover and let chicken sit for 10 min. Pieces should be all cooked thru evenly, juicy and tasty. Dearest Grandpa taught me this long long ago and I have never served a bad piece of BBQ chicken from the grill.

I'm cooking it on a gas bbq grill. I just want to make sure it turns out.

Keep the flame low and start heating at least 15 min before starting to cook, to heat up the "lava rocks" as hot as possible before putting chicken on the grill. Trim off as much fat as possible to keep from flame ups. Season chicken with dry seasonings before putting on grill. Always start chicken skin side down. Cook the same way as if on charcoal but don't spritz flame ups. They burn off real quick with the rocks.
Be prepared for mouth watering aroma to make everyone ask "When is that chicken going to be done?" every few min.

the best way I have found to do it is on one of those stands for the beer butt chicken, it helps to get them done from the inside and you can add so much flavor by putting something special in the can. You can now buy those stands everywhere I even see them at the grocery store.

the best thing about this method is how moist the chicken stays, it is so flavorful, if you do not want to use beer you can use apple juice or wine, other fruit juices.

Don't put any sauce or marinade on it that has sugar in it because it will make it burn before it is done. Wait until it is getting done and then start brushing with sauce.

Many people confuse BBQ with grilling, or even cooking with a BBQ sauce. They're very different cooking methods. It's very common to be confused. Even the hillbilly wannabees on America's Next Great Restaurant didn't understand the difference.

You can BBQ on a gas grill although purists would call it heresy. Start both burners to heat up the lava rocks, then turn off the one side. Either do the chicken in a "stand up" position or easier is to butterfly the chicken. BBQ requires indirect heat and will take a long time. You can do individual pieces just cut them so their comparable size and they'll cook faster and more evenly. Generally the breast pieces would be cut into 2 each, which works well since it's easier to eat that way anyhow.
