We make smoothies with pineapple juice. I don't have exact measurements. Put a couple of bananas in a blender, a cup or two of ice and fill with juice then puree. Also tastes great with fresh or frozen strawberries added. If you want it sweeter, you can blend in some honey.

But, you can also use it when you do stuff with peeled and cored apples, just put them in the juice, it will keep them from turning brown, till you have all your apples peeled and such. :)

Then, just drink it. :)

Definitely drink it! My mother used to mix pineapple and oranges juices and give it to us for breakfast. Very refreshing! And lots of Vitamin C.

Well go figure.

I'll mix it with orange juice for sure.

Maybe find a recipe for some kind of sweet and sour sauce as well.

You can use it for glazing meats.

It also use it in recipes for vegetables. Parsnips baked in pineapple juice for instance.

Use it in baking too. Quick breads are one.

And of course as already mentioned it is a great ingredient for beverages.

Just don't use it in Jell-O. LOL.

Ahhh yes, my mom would also mix pineapple juice and orange juice. It is yummy!

jasdip..easy sweet sour..the juice, then equal equal amounts of vinegar and brown sugar (about 1 Tbs)...heat, and thicken with corn starch..i don't know exaxtly how much so add about ts at a time...as desired..

mix some with powdered sugar for a yummy angel food cake or pound cake glaze...

thicken again with corn starch and the tinest bit of sugar over ice cream...

sub it for water in any white, spice, or yellow mix...

I'm thinking it would be good for basting baked ham. Or drink it.

I always drink it, Sometimes I pour it into a little container and freeze it and use the frozen block in a smoothie or cook with it.

Freeze and make pineapple ice cubes. Bet it would be good in iced tea :o)

I never have any left over because I just drink it! I would never have thought to save it in the freezer! LOL

Here is one of our favorites. I usually use fresh chicken rather than the popcorn chicken. I cook it first in my wok then remove it and add back in at the end.

Sweet & Sour Popcorn Chicken

Ingredients

* 1 medium green pepper, cut into 1-inch pieces
* 1 small onion, thinly sliced
* 1 tablespoon canola oil
* 1 can (20 ounces) unsweetened pineapple chunks
* 3 tablespoons white vinegar
* 2 tablespoons soy sauce
* 2 tablespoons ketchup
* 1/3 cup packed brown sugar
* 2 tablespoons cornstarch
* 1 package (12 ounces) frozen popcorn chicken

Directions

* In a large skillet or wok, stir-fry green pepper and onion in oil for 3-4 minutes or until crisp-tender. Drain pineapple, reserving the juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to measure 1-1/3 cups; stir in the vinegar, soy sauce and ketchup.

* In a large bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture until smooth. Gradually add to the skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pineapple. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through.

* Meanwhile, microwave chicken according to package directions. Stir into pineapple mixture. Serve immediately. Yield: 4 servings.

I do like the idea of some in iced tea, so I'm going to take it out to thaw and plop some in.
