soapstone - rough sample

Hi,

I've seen so many samples of soapstone and some are very smooth/velvety feel and some are very rough/lots of ridges and dents to the touch. Even installed in kitchen showrooms this is the case.

The rough ones don't seem oiled, which is understandable. However, how does the 'smoothness' come about?

When fabricators install, do they sand so the slab is nice and smooth? Or, are some slabs smooth while others are rough and that's the way it is? I would really be disappointed in a rough slab.

I'm REALLY trying to stay with soapstone, but I came across a honed black granite that was nice and smooth and didn't scratch so I seem to be talking myself out of it!! Help!
