I've had my rangetop for over a year and I love the burners; but there are some problems. The simmer is a joke even after it was adjusted. I can bring water to a boil on simmer! So I just push the pot off to the side. Does anyone know if they made a fix for this? The other problem is the griddle. the sides are cold and the middle hot, so cooking pancakes or anything else on it means waiting till the middle is almost burned before you turn turn the pancake around to cook it evenly. Is there a fix for this or do I just have to deal with a bad design on both the simmer and burners? The simmer should have been designed to only light the center part of the burner. Did they even test this before they put it on the market?? I hope Trevor or someone else who is aware of this has some answers. I know that a year ago there was talk of a fix and never heard back about it. If nothing else they should make an iron plate to put over a burner so you can put something on a true simmer. My old Wolf burners also had a couple of heat rings, and on simmer only the middle ring was employed. For as much as I love the burners on this range top, if I had to do it over again with the problem with the simmer and the griddle (which also sticks by the way which my Wolf didn't), I would buy the Wolf range top. Capital Culinaria has a chance to really fix their product and I hope they do. The materials used are of a high caliber and those burners are to die for if they could get that simmer issue re-designed, and the uneven heating on the griddle fixed.

Thank you, thank you for all the wonderful feedback. I do want to stick with getting the grill and am going to do so. We probably will be cooking steaks outside most of the year (Jersey Shore), but in the dead of winter (especially like the last one) we would be cooking inside for 3 months or so. I want to grill vegetables, romaine, etc. inside. Two of you mention that you have the Wolf hood. Did you entertain the Best one? I have not priced the Wolf, but based on your comments will look into it. I had thought of Modernaire, Best and now Wolf. I do think I want to go a bit higher than the 1200cfm just because we have had such problems with setting off alarms. I will definitely try seeing how a 27" looks/feels - my hubby is 6'1" and because of his height we have had to scrap buying cute little converible :( so want to make sure he is okay with the height of the hoodt - he is the steak pro at our house! JScout - where do I look up more info regarding make up air. Would it only go on when the fan was on? Where should it be installed, how much, etc.... We keep finding and adding things in $$$$$! But, this is our dream house and we are so looking to doing it the way we want. Again, to all of you who took the time to write in - THANK YOU! Overall, we've been really happy, and we've been having pretty good results with ours. We managed to get the grates just in time to cook Thanksgiving dinner on the thing. Very glad I heard about the Capital before going for Blue Star. The wok burner was a big selling point, and so far we've been very happy with it. The wok grate holds the wok very securely (we tested this when we visited the factory, so it wasn't surprising). Boiling water, even large quantities, really is quite fast on this thing. While I still think that anyone who tries to justify purchasing a $4k+ range because it will "save time" is engaging in a high degree of rationalization, there definitely are cases where you notice a few minutes being shaved off here or there. Using the burners on "normal" settings is also very satisfying; I haven't found that getting used to that much power has required too much adjustment. We have all 23k burners, and the lowest flame really does get down pretty low (though it's still high enough to keep a ~4.5 qt saucepan at a pretty active simmer, so if you want to do really delicate stuff, you might still want one of the smaller burners). Baking and broiling (so far, broiling has been limited to making tomatillo salsa) have been going pretty well. Adjusting to using convection has, of course, required some experimentation, but the oven seems to bake evenly and well. Even with reduced heat *and* reduced cooking time, the cookies I've made so far have still been a little dry with convection; thinking of taking the advice of a pastry chef friend to just leave convection off when making cookies. A few minor issues / irritations so far: 1) Slight buzz sometimes when the convection fan is on - this happened more before we got the grates, but even with the grates on, something seems to rattle / buzz occasionally (besides the sound of the fan itself). 2) Burners constantly re-igniting. This happens most with one of the burners (front right), usually when it's just been turned on and when it's turned up all the way. If you back the heat off, it will usually stop re-igniting, and then you can bring the heat back up after a little bit. Seems to happen even when all / most of the holes have flame coming out of them. 3) Occasional constant re-igniting when burners are on simmer... this is probably due to flame from some of the holes going out, so maybe not a "bug", but it's still kind of annoying. On a more cosmetic level, I don't think they did a great job with the center grate for the 30" -- it just doesn't really fit in - the height seems just a tiny bit higher than the grates, and having the solid bar across the sides makes it look awkward. It's almost as if it were designed for a different range - at first, I thought it was actually from the Precision, until I looked at the iamges of the Precision online. Something closer to what Blue Star has (where the cross-hatch pattern kind of "mates" with the grates themselves) would look better IMHO. There is a little bit of "fuzz" with the way the grates fit in the top - I'm not sure whether this is intentional or not, but there's no obvious way to tell exactly how the grates should be positioned (other than trying to visually line them up so the burner's in the center). We didn't want a self-clean range, but the setup for the rails on the self-clean model does look a little nicer. Looks-wise, I don't really love the logo, the black sides of the knobs (and the red knobs are even uglier), or the rounded corners on the bar to open the oven. I know people make a big deal about the look of the Capital, but I have to say that from a purely aesthetic point of view, I personally much prefer the Wolf, or even the Blue Star. But still glad we went with Capital.

As long as you have adequate make-up air (MUA) to go along with the 1200 CFM, you should have no issues. I have 1500 CFM with a passive MUA. 1200 should be more than enough. I have a friend who put in a Viking and a 1200 CFM and it smoked. After talking to him, it turns out that he didn't factor in MUA at all. I advised him to open his windows BEFORE grilling, while the grill was warming up. That made it much better, to the point where he could use the grill again. I have a 48" CC with the 12" grill and I use it all the time, at least weekly. I even use it in the summer instead of my Weber outside. The CC's grill is a much better grill and I prefer cooking on it. If you do get the grill, your only regret might be that you didn't get the 24" grill.
