Just FYI ... (coffee in chocolate cake)

Many chocolate cakes include coffee for additional flavor. And it seems to me that people who like coffee can't taste the coffee in those cakes. They say things like, "It doesn't taste like coffee; the coffee just makes the flavor richer."

But just FYI, for those of us who don't like coffee - your cakes taste like coffee!

(Not that there's anything wrong with that, of course. I was just disappointed again by yet another terrific-looking piece of chocolate cake that made me gag with the coffee taste. Everyone else seemed to like it, though!)

As an opposite of what you posted I put chocolate milk in
my coffee......( I can only take one cup (or two tops) myself though)

When we make a big batch of chili my DH adds a little Hersey cocoa. It's not enough to taste but it helps cut the acid from the tomatoes.

Agreed. I wouldn't put it in a springform. I use a rolling boil but it probably doesn't matter urgently. I just drizzle it in while beating in the way one adds oil to mayonnaise. I'm told that the recipe at Add A Pinch is based on the Hershey's recipe--I haven't made the latter since I was a kid, I've made the Add A Pinch recipe a couple of times using Valrhona cocoa powder, which is a revelation if you want a real chocolate experience. It also calls for espresso powder. When I made it with the nine-year-old we left it out and it was still good. The bitterness of the espresso powder punches up the chocolate flavor and gives it complexity, but doesn't make it mocha. Which is a long way of saying coffee would be good. :) If you want to make it parve, you can sub out the milk. It will affect the crumb, but still make a fine cake. We've been using a Ghirardelli chocolate cake recipe for birthdays since the 50s. For frosting we always use some strong coffee as well as some milk. It's perfect. Dad's theory was that the purpose of cake was to deliver the frosting, and that mocha frosting was the best of all. :) He has a 4 yr old great-granddaughter, born many years after he passed away, who shares his opinion about the function of cake..

If you know the ingredients of mayonnaise it really shouldn't make you queasy to put it in cake. Mayonnaise is a flavor carrier, it can go sweet or savory. That's why I like it better than Miracle Whip, which has already committed to sweet . . . if I want a sweet condiment I'll add sugar to mayo . . . My big concern with a mayo chocolate cake would be keeping qualities. Moist desserts tend to mold on us before we can eat them all. Fruity cakes and pies often go moldy or languish way too long in the fridge to be at their best at our house. But freezing cupcakes would be a good way to go with this cake, preserving it longer because we don't eat sweets at a fast pace with just the two of us here who watch our diets pretty closely. My friend only made the cake because she was having a party, she also watches her diet, but entertains more than I do because she has a huge family and local circle of friends. They had a small outdoor socially distanced campfire gathering taking advantage of the short Indian summer weather we had last week.

I like coffee, but I don't like it in brownies or cake. IMO, it gives an off taste.

I don't think I've ever tasted coffee in cakes either. However, chocolate and coffee is probably my all time favorite combination of flavors so I'd more than welcome it!! When I get several scoops of ice cream, it is always chocolate and coffee. If three (decadent!) it is chocolate, coffee, and hazelnut/nutella.

Hmmm, I do like "mocha" flavor. and I have heard of using both coffee and /or unsweetened baking chocolate in Mexican mole sauces.

I don't like coffee....have never in my whole life drank a cup of coffee. However, I have a chocolate cookie recipe that calls for a couple of teaspoons of coffee, and I can't taste it in the recipe. It is one of my favorite recipes, and if I could taste the coffee, I wouldn't like it at all.

I am not a coffee drinker and can always detect it in food. I bake with chocolate quite a bit and do add a very small amount of espresso powder to many of my recipes. It gives the chocolate more depth without lending a coffee taste. I have done a side by side comparison of chocolate buttercream frosting with and without espresso powder. Everyone chose the one with the powder saying it had a richer chocolate taste.

I do agree that some bakers tend to put in too much coffee.
