I have discovered Kale !

Kale...never tried it, it just looked too tough or something.

But bought some last week, and tried a couple of recipes. We both just love it.

Anyone else cooking with Kale ?

I eat it at least once a month. There is a Dutch recipe and it's the main ingredient. I buy it canned, my parents grow it, then freeze it.

I boil a big pot of potatoes with two rookworst (smoked sausage) sausages. Remove the sausages, then mash the potatoes. Meantime, I heat a large can of Kale, then strain them really good and then toss it in the food processor and process so it's not so coarse. Mash the kale with the potatoes adding a little milk and butter.

Serve a big heaping lump forming a 'volcano' on the plate. In the hole of the 'volcano', pour gravy. Each person gets 1/2 the sausage ring (I cook 2 for the 4 of us). Cut a piece of sausage, scoop some potato/kale on the meat, dip in the gravy and devour! It's loaded with vitamin K, which helps heal the body. I make sure to eat this one or two days before I donate blood.

My dad tells me the Dutch call this a 'poor mans meal'. It's called Boerenkole.

I've never cooked with it. I always eat it raw.

Not at all Jackie. Potted, flowering plants aren't sold as something for you to actually plant. They are disposible, like a bunch of cut flowers. Some of the tags indicate they can be planted, but no aftercare instructions nor any growth size, flowering times, etc. are offered because those tiny pots of color are meant to be thrown away, just like the $10 bunch of roses at the grocery store. If YOU decide to put them in the ground, any issues are on you as the grower/creator had no real intentions of selling you a garden plant. Those are marketed as garden plant, not a spot of inexpensive color meant not to be grown on. Yes, many of the smaller potted roses sold in color are actually floribundas and sometimes HTs. When you see a four to six inch pot with two to three inch flowers, expect a larger plant with larger flowers. If the blooms are an inch and a half or smaller, chances are the plant may be smaller, too, but not guaranteed. You won't find background information on the majority of them because they aren't tested to determine that. They ARE tested to see how quickly and easily they root; how quickly they will produce a bushy flowering plant; under what conditions they can be produced to retain quality; how durable they are to handle and transport; how long they'll usually last under the boxed conditions, etc. Garden performance doesn't enter into the equation. You never get garden performance information on your florist azalea, hydrangea, etc. Usually, those aren't selected for garden performance, either, just as florist variety roses aren't. If we plant them, it's for the adventure of what we may get. Americans LOVE "pigs in a poke", the potential of getting something for nothing or nearly nothing. My client didn't care what size the roses might eventually get as they are whacked to the nubs regularly and perform as expected because they are mostly treated as they were tested to be treated. Cut to nothing regularly to create the dense, bushy flowering plant. If they start to get larger, someone mows them down, just as they did to propagate and produce them as the four inch pots they were. They were sold as potted color - rose, and that is all they were. If they perform differently than you expected when you "mis used" them, that's your fault. They gave you what was promised, a little spot of color - rose. Okay, I've seen the High Line in a children's book, and do get the part about TJ's being far. The rest could have as easily been about Kamchatka, given how much I know about New York. :) TJ's has things that come and go, so if you're making a special trip, it might be worth calling ahead. I do the same with kale, in the low oven, but I cut out the heavy stems. Can't do it with kale sprouts, so did the hotter. They were probably too hot, but they got nice and crunchy. :) Your toasted garnish sound great! I was thinking more of the little shreds of veg that you're supposed to eat with the meat, which they also call garnish, but so much better yet to make the decorative bits into a snack! I think plenty of people in New York, at least among the people I know, are more like you with the less amount of meat. It's the chefs who don't get it! Or maybe not even the chefs there, but the ones who come here from there--maybe their fare wasn't what the New Yorkers wanted anyway. Or maybe an Eastern thrift thing of if you're paying $$$ or more, it should be for something with Calories. :) The French and German chefs seem to have at least a good acquaintance with vegetables. The Italians--the fine dining chefs here here--use them in the cooking, but it seems if you want one to actually bite into, it's in a salad, and the Brits promise all kinds of delightful veg, but it's really just a smear of puree meant to be eaten with the meat (high class substitute for ketchup) with a few micro greens and three twigs for color on top. The other fun thing that TJ's had this last year was "heirloom red spinach". I love that they're getting in these oddities, half cleaned and ready to use. :) I admire your vegetable garden. I have herbs and peppers, but I'm not a great gardener, and am not ready to commit to vegetables. Are there any you're planting now for the Spring?

I do--in fact, I just bought some today. It's a little milder than a lot of greens. This week I'm using it to make Zuppa Tuscana soup. Hopefully, it will turn out like we get at Olive Garden.

It's also good if you saute it in a little olive oil with minced garlic added.

We have to watch how much kale or any dark leafy vegetables we eat since Harry's on Coumadin. We sure enjoy it when we do have it though.

We love cooked kale, with a little vinegar and salt and pepper. One of my favorite greens.

I love kale. My favorite way is in a raw salad. Rub kale with a little bit of olive oil and salt and let it sit for a few minutes. It tenderizes it and takes away some of the bitterness. Then massage in some avocado and sprinkle with lemon juice. It's light, creamy and delicious.

When I was growing up, my mom cooked any and every kind of greens available. Kale was the only one I liked, and that had to be the Curly Kale, not the flat variety.

Overtime, I had kinda forgotten about kale, until a friend gave me a recipe for Black-eyed Pea Soup. One of the ingredients is kale. I have found canned, no frozen. A few days ago I saw beautiful fresh kale at Kroger. I didn't get any, just because I've gotten spoiled to using the canned. Shame on me!

Ingredients : Kale Chips
1 bunch kale 1 tablespoon olive oil 1 teaspoon seasoned salt
Directions
Preheat an oven to 350 degrees F (175 degrees C). Line a non insulated cookie sheet with parchment paper.
With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.
Bake until the edges brown but are not burnt, 10 to 15 minutes.

What took you so long, Monica? LOL

The Portuguese make a wonderful soup with kale and beans. The classic recipe uses sausage, onions, and garlic, but my version omits the sausage. Sometimes I just saute kale with onions and garlic. I've done other things with it, too, including salad. We used to grow several different kinds.

I love it so much I have a whole garden bed devoted to it. There are many different kinds of kale so experiment a little more with the different varities.........my favorite way is to just saute it with a little garlic in olive oil till just tender.

I made a salad to go with dinner tonight and it has kale in it. Chopped kale, chopped spinach, basil, cannollini beans, a little left over pasta, onion, garlic, tomato and vinegar and oil dressing......I've tasted it already and it's delish.

Kale is supposed to be a fantastic source of all sorts of good things for you. I can find only the leathery kind in our stores. Tried it julienned in soup, and it was ok. Still leathery.

I like it in soup! I use fresh kale and slice it (across the leaves) in pretty thin slices.
