I haven't made this recipe, but it sounds good and really simple and I'm keeping the recipe handy to give it a try.

Quick and Easy Vegetarian Black Bean Soup. A healthy, low fat vegetarian soup recipe that will warm up your family in less than 15 minutes flat. Make it vegan by simply omitting the cheese and sour cream. Recipe courtesy of Bush's® Beans.

INGREDIENTS:
2 15 ounce cans black beans, undrained
1 16 ounce can vegetable broth (or chicken broth)
1/2 cup salsa
1 tbsp chili powder
shredded cheese (optional)
sour cream (optional)
chopped onion (optional)

PREPARATION:
Mash one can of beans with potato masher or food processor.
Pour both cans of beans into medium saucepan. Add vegetable broth, salsa, and chili powder. Bring to a boil. If desired top with shredded cheese, sour cream, onion, and cilantro.

Serve with warm homemade bread

The recipe below for Cowboy Caviar is very good as a side dish or eaten as a dip with tortilla chips. Choose a healthy italian dressing or make your own and you'll be good to go!

I love black beans and I cook them from scratch or from cans. I even can my own beans so that when I want some quickly they are ready and waiting. When I am in a hurry, I take black beans that have been cooked, add some extra water or stock is better and a jar of salsa...I make my own salsa but store bought would be fine. Cook for 15 minutes or so and serve over rice....need that rice (preferably brown) for that protein link)

Ruthieg--that's what I'm making tonight. Black beans, salsa from a jar, frozen corn, chopped cilantro. Yummy and healthy too.

Forgive me, because I don't measure - but you will get the idea.
I soak my beans for 6-8 hours and discard the water.
Then I saute a small, diced onion, garlic, green pepper and red pepper.
I then add the beans and water to cover.
When they are mostly cooked, I add cumin, salt, cayenne and a can of Rotel tomatoes.
A couple of hints - don't add acid or salt until the beans are softened and don't add cool water to a hot bean pot - it will split the beans.

Regardless of how I cook black beans I always add a good splash of lime juice. Makes good beans GREAT.

This doesn't sound good, but it's yummmy. It's a Weight Watcher recipe...two ingredients (my kind of cooking)
A brownie mix
A can of black beans

Drain the beans and put them in the blender and blend until smooth...if you are in a lazy mood, you can smush them with a fork.

Add them to the brown mix and....walla...healthy brownies with lots of fiber

GRANDPA ARROYO'S CUBAN BLACK BEANS & RICE

2 lbs. black beans
2 lg. bell peppers
1 c. olive oil
1/2 c. sugar
2 lg. onions
8 oz. diced pimentos
1 c. vegetable oil
1 1/2 c. sherry
1 1/4 to 1 1/2 c. vinegar (to taste)
2 c. rice
Salt & pepper to taste
Soak black beans overnight. Cover in pressure cooker with water 2 inches over top of black beans. Cook in pressure cooker for 45 minutes. Do not drain any remaining fluid. Dice onions. Cut bell peppers into 1/2 inch by 3/4 inch slices. Add all ingredients to black beans. Simmer for 2 to 4 hours. Beans should make their own broth.
Add liquid when necessary to prevent drying out or burning, but keep broth thick. Serve over rice. Use as side dish to chicken or steak, or main dish on its own. Also, try in flour tortillas to make unique Cuban burritos.

Here is one I do:

Canned black beans
Diced onions (I cook mine first so they're not raw)
Garlic powder
Cumin powder
1 can coconut milk
1 can chicken broth

Simmer all in pot, yummy soup. You can delete the chicken broth and simmer together and serve over rice.

Haven't made this yet, but it's full of stuff I like! I think it'd be better if it was refrigerated for a while, and I'd probably put in 2 or 3 cloves of garlic. I got it off "Recipes from Friends" site.

BLACK BEAN & CORN SALAD

1/3 cup fresh lime juice
1/2 cup olive oil
1 clove garlic, minced
1 teaspoon salt
1/8 teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 1/2 cups frozen corn kernels
1 avocado - peeled, pitted and diced
1 red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro (optional)

Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.

In a salad bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve. Serves 6.

White and Black Beans with Onions and Peppers

Ingredients

 1 cup red onions, chopped
 2 cloves garlic, minced
 2 Tbs olive oil or vegetable oil
 1/3 cup red wine vinegar
 ¼ cup green bell pepper, chopped
 ¼ cup red bell pepper, chopped
 2 Tbs parsley, minced
 2 Tbs Equal® Spoonful
 ¼ tsp salt
 ¼ tsp pepper
 1 can (15oz) great Northern beans, rinsed and drained
 1 can (15oz) black beans, rinsed and drained
 1 each red and green bell pepper, sliced into rings

Directions

1. Cook and stir onions and garlic in oil in medium skillet until crisp-tender. Remove from heat and cool.

2. Stir in vinegar, chopped peppers, parsley, Equal®, salt and pepper.

3. Pour onion mixture over combined beans in serving bowl; mix well.

4. Garnish with green and red pepper rings.

After I cook my black beans with onion, potato, celery, spices, etc. I add some lemon juice before serving.
