Yummy turnip greens with the crust only of a cornbread muffin, and delicious fried snapper with tartar sauce.

I'm delightfully full!

Whole wheat spaghetti with hot and mild Italian sausage made from chicken. I bought it at Whole Foods. It is very, very good. Will add a side vegetable, probably broccoli, and a salad. Too many carbs in pasta to depend on it alone to fill up DH.

Taco potatoes.

Tuna Pasta salad served on a big leaf of Romaine lettuce.

I am using Omgea 3/Flax Pasta with tuna, fresh mushrooms, red, green pepper, cherry tomatoes, feta cheese, diced cucumber and onion with a light mayo/horseradish homemade dressing, sea salt and lots of coarse black pepper.

I am off to put the pasta on to boil. I can't wait to eat. Homemade brownie for dessert. I wish I had some vanilla ice cream to crumble the brownie on top since I overbaked the pan of brownies and they are a little dry even with the icing on top.

Today for lunch I had tuna salad and potato salad, rice pudding, and cranberry apple juice drink. Got it in a hospital cafeteria. Very tasty and reasonable prices.

Flat Iron Steak Sandwiches. Oh, I can't wait to get home!

A version of poulet grand mere (grandmother's chicken) that I found in an issue of Sunset magazine. This will be my first time making it, but it looks pretty simple.

Spagetti made with ground turkey and whole grain spaghetti noodles.

Country fried steak with just a little white gravy, seasoned string beans and potatoes.

DH makes our dinner every day (he's retired, I'm not). I think it's good old tacos on the menu tonight. We've got lotsa tortillas to use up.

Flank steak stuffed with spinach, olives and feta. Roasted potatoes and green beans with lemon zest.

Yummy Greek pasta salad.

We had baked chicken breasts smothered in garlic,black pepper and melted I Can't Believe Its Not Butter. What a yummy 2 ounces! LOL
I made a mixed vegetable casserole that we REALLY like. I wish I knew how to figure the calories etc.
I had leftover wild rice (1/3 c) and DH had a small baked potato.

OKay Gayle, how do you make a pea salad. Are the peas cooked or raw?

Italian sausage w/sauteed onion and bell pepper sandwiches. I had a headache and took a nap after all the kids left....he woke me up and dinner was all done. It didn't matter what it was...it was just nice to have it cooked for me for a change! It was really yummy though....he made curly fries to go with them. He did good!

Well, I see I'm the cook of the day!

Still trying to use up that ham from last Sunday. I made a ham and cheese omelette with garlic/chive cheese curds I picked up at the health food store. It was pretty good!

Don't cook the peas. Use frozen peas, chopped green onions, celery, shredded cheese. You can add a boiled egg, I'm allergic to eggs (but I love em). My MIL use to drown the salad in Mayo. I use a tiny tiny amount. Someone told me to try lite-Ranch instead. You can change the cheese to crumbled feta. MMMM Let it chill in the refrigerator before serving.

Just bake a big ol' potato, make you up some taco meat, slice open the potato and put the meat on top of the potato and add anything you'd add to a taco (well, I personally wouldn't use lettuce). Mine last night was baked potato with taco meat, shredded cheese, a little picante sauce and a dollop of sour cream. Or you could do a chili potato - same idea except put the chili on top of the potato.

There use to be a potato place across the street from where I worked and you could order a whole assortment of different potatoes.
