The tukey is in the oven!
I just bought a small bird. Okay, we didn't buy it. It was free when we spent $250 at Superstore. But it is a smaller turkey, but more than enough for the four of us. I'm sure I'll get a good decent pot of soup out of it tomorrow and maybe some Clubhouse sandwiches too.
So, I was putting together my stuffing when I realized I made a boo boo, but it's a good one. About a year ago, someone told me how his sister makes her stuffing. So I copied his idea and tweeked it. Today I tweeked it more, by mistake. LOL I buy hot Italian sausage and remove the meat from the casing and fry it up. I add that to the stuffing along with a little bit of the grease. I mix the stuffing as normal adding spices and herbs, onions and celery, egg and melted butter. Normally, I put strips of raw bacon over the turkey. When the turkey is done, I crumble the bacon and add it to the stuffing. Well, I had a moment. I opened the bacon, sliced it into 1/4" pieces and fried it up. Only when i was almost done frying it, did I realize I wasn't supposed to do that. LOL I removed the meat from the pan and added the sausage meat and fried it in the bacon grease. Then I added ALL the meat to the stuffing, then stuffed the bird. I have way to much to fit the bird, so I have a pan in the fridge ready to go into the oven in 2 hours, about an hour before the bird is done. I saved the neck to put on top so the turkey flavouring from that meat goes through the stuffing.
I had to quickly thaw another package of bacon to put a few strips over the turkey. It adds a wonderful flavour to the meat and gravy. Now I can't wait for the bird to come out of the oven to see if my mistake makes the stuffing even better. LOL
