The house we are renovating had a hot water tap at the sink. I was impressed. I'm a tea drinker, and it made it so easy. I also used it to clean a pot or pan, sort of a squirt of the very hot water to sanitize it. Of course I only used it one weekend we stayed at the house before demo. I took it out and didnt replace it for two reasons. One, even though we have well water, i prefer to drink (and make tea with) spring water. Two, my sink has two faucets , a soap and a sprayer. Thats a lot of bling already. Pot fillers. I put one in the kitchen in my old house 8-9 years ago. Loved it, could not do without it. If only you could drain the water too.

I've attached a link below. Note that many potfillers (including the one I'm installing soon) fold back on themselves. So...for example, the pipe for my faucet will come out of the wall 12" from the side of my 36" stove....one third of the way across the back. But it extends out 12", then folds back 12". So when not extended, but pushed back against the wall it looks centered....the pipes extending across the center 12" of a 36" backsplash. Of course, I can also fold it the other direction, so it goes across the left one-third of the backsplash instead of the center third. If you're on a well, residential well systems normally cycle between 40-60psi. There is a small pressure gauge at the base of your water holding tank. On municipal water, the pressure can either be nicely regulated, or it can be all over the place. One friend up in MA had 90psi! The high pressure was killing plumbing fixtures on his street. You can call your water service and ask the psi. But 40-60 is a steady target range. Valve manufacturers usually publish a flow vs psi chart, similar to the chart below: You might find it on a manufacturers website. You don't need to worry about your 2GPM shower head. The valve you choose will be capable of passing more than 2GPM through to the head, but the shower head itself will restrict the outflow to 2GPM. Example in the chart below, as PSI increases, the GPM flow out of the tub spout increases since the tub spout has no internal flow restrictor. But the shower head eventually caps out at 2.5GPM, since it's a "2.5GPM shower head".

MrsPete, they do have island/deck-mounted potfillers! Yes, but they're funny looking and extremely expensive (unless you're also placing the sink in the island and are bringing water into that area), which is why I called them "possible but not realistic". Be sure you have easy access to the water shutoff valve so you don't have to run to the basement (or wherever) to shut it off. I also wonder how long it would take to discover you have a pipe leak (pinhole or other) - especially if the leak is not enough to noticeably reduce the pressure. If you don't use it every single day and use a large quantity, I would think the water sitting in the pipes would be an issue - and since you don't have a drain beneath it, you can't run the water for a minute or two to get fresh water. Finally, if you must have a pot-filler, then be sure you can access the plumbing behind it in case you have problems with it - I don't think you'd want to have to chop a hole in the wall to get to it. I think these are "cons" to all plumbing. For example, I had an "invisible leak" behind my dishwasher and didn't know it until damage was done -- yet no one says, "Get rid of dishwashers because this could happen!" The fear of leaks is over rated. Definitely. Two valves would have to fail before you'd have a leak. You're right that you're much more likely to have a leak in the ice maker.
