Height of range hood, for a 25-inch deep hood?

We are installing a GE Monogram ventilation hood above our slide-in dual fuel oven/cooktop. This is a big hood, it is 25" deep and 36" wide. We have a 10-foot ceiling with a one-foot soffit above the cabinets. So the cabinet wall is actually 9 feet high.

The GE literature says the hood should be 24-30 inches above the cooking surface.

For 10-foot ceilings, the literature says this hood should be placed a MINIMUM of 30 inches above the cooking surface, but that would place it at 66 inches, or at 5-foot-6. I am 5-foot-10 and my wife is 5-foot-8. It seems like that wide range hood would be hitting us in the head if it is that low.

If it is too high, the controls would be hard to reach and I guess it wouldn't ventilate so well.

Any experience with this?
