Shut off valves for wall mounted vanity faucets

I am using two wall mounted faucets for my master bathroom in my loft. The vanity is a floating counter with 6" drawers below. It is open below(no cabinet box, so the drains (which are partially visible) are a decorative chrome version. My plumber has already run the PEX to the in-wall valves. I would like shut off valves for these fixtures, but I'm not sure what to use. Do they make in-line shut off valves (PEX or copper) that stick out of the wall? I could tuck them up under the counter out of site. What about using inline PEX ball valves in a small recessed box? Suggestions please.
