I haven't tried it, but there is one on the KT recipe list. I think Glenda posted it?? Easter would be the perfect time to try! :)

This is the one I have made many many times, and shared with KT.

Caution: grate your own cheese, do NOT use preshredded, as it does not melt right with the pineapple.

Plus I always double the recipe.

Pineapple Casserole

Glenda's Baked Pineapple Casserole

1 (20-ounce) can pineapple chunks, drain, keep juice
1/2 cup sugar
3 Tbsp all-purpose flour
1 cup shredded Cheddar cheese
1/4 cup butter or margarine, melted
1/2 cup crushed Ritz crackers

Drain pineapple, save 3 Tbsp of juice.
Combine sugar and flour with 3 Tbl pineapple juice. Add cheese, pineapple. Mix well. Put in greased 8 x 8-inch baking dis).
Mix crushed crackers and melted butter together; sprinkle over pineapple mixture.
Bake for 25 minutes at 350 degrees F.
or until bubbley

I tried two other recipes before Glenda posted hers and, believe me, hers is the best. You will need to double it for a family dinner, though. Shoot, I double it when there's only the two of us!! Yum!

dumb question...if I double do you think it's best to use two dishes? There will be 20 people, plus picky little ones. Is doubling enough for 20? The recipe is tough for me to picture the volume.

ACKKK! I hate trying to guess how much to make for a crowd...there are always so many other great dishes one never knows exactly how much to make with either running out or eating leftovers for 8 days....

Hashbrown casserole goes great with the pineapple. It makes a lot, but for 20 you need to make two hashbrown casseroles.

If it were me I'd make one 13x9" casserole. With that many people, there will be tons of food and most people just take a little of each thing or things they know they like if they aren't adventurous. After people taste it, they WILL be back for seconds :-) The best thing that can happen is you won't have any to take home.

What do all you think about tripling the recipe and put in 2 round casseroles - I think they are 2 qt Corningware dishes

Put it in two 2 quart casseroles and double for each casserole.

To ensure that you get equal amts of everything in each casserole, ME, I'd make it twice, doubled.

It doesn't take that much time to put together except for the grating of the cheese. I use my food processor to grate the cheese.

REMEMBER: no preshredded

Pineapple Casserole

ingredients

* 1 cup sugar
* 6 tablespoons all-purpose flour
* 2 cups grated sharp cheddar
* 2 (20-ounce) cans pineapple chunks, drained, and 6 tablespoons pineapple juice reserved
* 1 cup cracker crumbs (recommended: Ritz)
* 8 tablespoons (1 stick) butter, melted, plus extra for greasing pan

Directions

Preheat the oven to 350 degrees F.

Grease a medium-size casserole dish with butter.

In a large bowl, stir together the sugar and flour. Gradually stir in the cheese. Add the drained pineapple chunks, and stir until ingredients are well combined. Pour the mixture into the prepared casserole dish.

In another medium bowl, combine the cracker crumbs, melted butter, and reserved pineapple juice, stirring with a rubber spatula until evenly blended. Spread crumb mixture on top of pineapple mixture. Bake for 25 to 30 minutes, or until golden brown.

Sweet Pineapple Casserole Recipe

Ingredients

* 2 eggs, beaten
* 2 cans (20 ounces each) unsweetened crushed pineapple
* 1 cup sugar
* 1/4 cup cornstarch
* 1 teaspoon ground cinnamon
* 1 teaspoon butter

Directions

* In a large bowl, combine eggs and pineapple. In another bowl, combine sugar, cornstarch and cinnamon. Stir in pineapple mixture.
* Transfer to a greased 2-qt. baking dish. Dot with butter. Bake, uncovered, at 350� for 1-1/4 hours or until golden brown. Yield: 10-12 servings

As pattico said, it's good hot or cold.

When I first started making the recipe, and my son was still at home, I caught him standing with the refrigerator door open, eating it right out of the bowl.

I've tried lots of pineapple casserole recipes over the years but once I tried Glenda's I've only used it!! It's delicious!!!!!!

Glenda's pineapple casserole is fantastic. We are having it on our Easter table. I've made it so many times I've lost count.

Not to take away from Glenda at all - this recipe s quite different.

My Mother gave me this recipe years ago - super easy & wonderful for either dinner or brunch:

Pineapple Dressing

1/2 cup butter (I have used margarine & "spreads")
1 cup sugar
4 eggs
1 cup crushed pineapple, drained
5 slices white bread, sliced (I have used wheat & other)

Cream butter and sugar, add eggs one at a time. Add in pineapple. Fold in bread. Put in a greased 1 quart casserole dish (I use non-stick spray). Bake at 350 degrees for 1 hour.

I think Glenda's would have to be tripled to go in a 9x13 too. I tried it for the first time a couple weeks ago and that was the first time DH ever really liked a dessert. I doubled it (to use the whole 8oz. block of cheddar) and it seemed to fit just right in a 12x7x2 Corning pan. Just the two of us and it didn't last long.

I'm taking one to his aunts for Easter. Only 7 of us but thinking I might triple it.

Glenda, I made your recipe for a family get together. I have made this several times. My family thinks you are a part of our family. Whenever we plan, first thing I hear is bring Glenda's pineapple casserole. I make this recipe at least once a month. You are very popular with my family. So you know it will be on the table Sunday.
