Coconut cake, do you have a favorite recipe?

My grandmother always made a coconut cake for my birthday. It was awesome...BUT, someway the recipe got smudged(water damage) and you cannot read it any more. My husband and I LOVE coconut cake. I do remember my grandmother's cake had filling between the layers. (different than the frosting) I know that she used cream of tartar in the frosting and maybe boiled it? Cannot remember..She used real coconut and the juice out of the coconut for either filling or frosting. If my memory serves me correctly (not sure of this) She would pour the coconut juice on the layers after she poked holes in each layer. Have any of you heard of this recipe or one like it? Your recipe does not have to be like my grandmothers, but I am looking for a really moist coconut cake recipe.

My favorite:

3 Day Coconut Cake

Icing
1 8 oz. frozen flake coconut
16 oz Sour Cream
1 1/2 cups sugar
Mix all together and refrigerate for 24 hours.

I box Yellow cake mix
Bake in 2 layers, according to directions.
Cut each layer into two layers.
Spread icing between layers and on top.
Refrigerate for three days.

This is a beautiful, moist, flavorful cake. I like to make it especially for Easter.

This is my all time fave cake with coconut it is not the typical type but it is so good.

Snowball cake
1box white cake mix
1 (6oz) can crushed pineapple drained
1 (6oz) can pineapple juice
1 large box vanilla instant pudding
1 (8oz) pkg. Cream cheese
1 (9oz) container cool whip
1 large can coconut

cook cake as directed. When cake is cooled, remove from pan. Punch holes in cake with a fork or skewer and pour pineapple juice over it.
Top cake with crushed pineapple. Set cake aside. Prepare pudding as directed on package. With electric mixer, mix cream cheese with pudding. Spread over crushed pineapple. Frost entire cake with cool whip. Sprinkle on coconut. Refrigerate

I've always loved beets and I like borscht a lot. I do like cabbage in mine, and I use beef bones or beef stock as the base. I usually start with home canned beef broth so that negates the need to let the broth simmer then sit so the fat can be skimmed. Borscht Recipe You need: ◦8 cups beef broth ◦1 pound slice of meaty bone-in beef shank ◦1 large onion, peeled, quartered ◦4 large beets, peeled, chopped ◦4 carrots, peeled, chopped ◦1 large russet potato, peeled, cut into 1/2-inch cubes ◦2 cups thinly sliced cabbage ◦3 Tbsp red wine vinegar ◦1 cup sour cream ◦Salt and pepper to taste Preparation: Bring 4 cups of the beef broth, the beef shank, and onion to boil in large pot. Reduce heat, cover, and simmer until meat is tender, about 1 hour 30 minutes. Transfer meat to work surface; trim fat, sinew and bone and discard. Chop meat; cover and chill. Cool broth slightly. Chill in pot until cold, at least 4 hours and up to 1 day. Spoon fat from top of chilled broth and discard. Add remaining 4 cups broth, beets, carrots, and potato; bring to boil. Reduce heat, cover, and simmer until vegetables are tender, about 30 minutes. Stir in meat and cabbage; cook until cabbage is tender, about 15 minutes. Season to taste with salt and pepper. If you want to be decadent (and I do!), drizzle some chocolate sauce over it before serving. Line bottom with buttered parchment or wax paper (buttered side up), cut to fit. In the large bowl of an electric mixer, cream butter until it is soft and smooth. i LOVE from scratch coconut cake, i don't make it any other way. Martha Stewart has an awesome recipe that has a filling like very thick pudding w/ flake coconut and a 7 minute frosting (boiled type), it was her mother's recipe i think. my DH makes it for my b-day every year ~ liz

I have a white cake mix I bought last week for it and spaced out the cool whip.DH and I both love this!

Coconut Poke Cake

Ingredients

* 1 (18.25 ounce) package white cake mix
* 1 (14 ounce) can cream of coconut
* 1 (14 ounce) can sweetened condensed milk
* 1 (16 ounce) package frozen whipped topping, thawed
* 1 (8 ounce) package flaked coconut

Directions
1. Prepare and bake white cake mix according to package directions. Remove cake from oven. While still hot, using a utility fork, poke holes all over the top of the cake.
2. Mix cream of coconut and sweetened condensed milk together. Pour over the top of the still hot cake. Let cake cool completely then frost with the whipped topping and top with the flaked coconut. Keep cake refrigerated.

Thank you all so much, I appreciate your recomendations! Although they are different than my grandmothers, they all sound really good. The one that Nodakgal posted and Sue posted are definitely going to be tried. The one that raven posted I will have to try at a later day. I know my husband would love that one as it has pineapple in it. I copied and printed all so I could have a hard copy. Again, thank you!

This reminded me of the pineapple cake I make with Angel Food cake mixed with Pineapple (with it's own juice). Is there a simple (not too sweet) Coconut frosting mix to top it with - right now, I just use cool whip - hey could I add coconut to the cool whip or maybe just sprinkle some on top??? Any suggestions are welcome.

Yum!!!!!!!!!!

I didn't have any Coconut Cake Recipes and now I have several... all saved on my PC hard drive AND printed off for my recipe notebook.

It will be a little bit before I try the first one because I'm just going to make my first Chocolate Cake from that recipe thread this afternoon.
