Technical question about bloodwork in cats

When you take your cat for bloodwork, does your vet do a jugular draw and shave your cat? I do understand it is not an easy draw, and they would not shave if they could do otherwise. This is a very new approach to me. This is just a question.

A brief background:

We recently moved up to Maine from NY, and our vet in Albany (whom we miss a lot) drew blood from the leg (in front of us) and never needed to shave the cat. Now here in Maine, all they want to do is jugular draw and shaving. I'll pass the details, but right now we don't want to have our calico shaved for fear of her getting hurt in a fight with our 2 new cats. I just brought her home without the bloodwork done because I can't think under pressure. At least for now.
