Add sugar! Seems pretty obvious to me. If you wanted the health benefits of the undiluted cranberry juice... add sugar, or you can dilute the juice with a sweeter juice like white grape juice, or apple juice. Both of which are much higher in sugar than cranberry juice. Linda c

My hackles went up increasingly as I read this thread. It is so annoying when they decrease the size of items, it messes up my recipes (and if the Breyer's ice cream box gets any smaller, they may as well sell it in single-serving containers). I wish they'd just leave the size/amount alone and simply raise the price when they want to implement price increases!! But even worse, they put HFCS in everything these days. And with cranberries, it's not like you can make it from scratch every time, as fresh cranberries are not available year-round.

I got this recipe from a Homemaker friend over 40 years ago, and have been making it ever since. In fact, I'm doubling the recipe to take to my granddughter's early Thanksgiving dinner, this Sunday. It's very sweet, so a little bit is enough to satisfy one's taste buds. Here it is: Baked Cranberry Relish 1 # fresh cranberries 2 1/2 cups sugar (I have reduced this to two cups and it seemed O.K.) 1 cup coarsely chopped, toasted walnuts 1 cup orange marmalade Juice of 1 lemon or lime (I often omit this.) Wash cranberries and drain. In shallow pan, stir cranberries w/sugar. Cover tightly w/aluminum foil. Bake 350 degrees for one hour. Spread walnuts in separate shallow pan; toast walnuts about 10-12 minutes. Stir together the baked cranberries, walnuts, marmalade, and lemon or lime juice till well mixed. Chill. This is so rich, a little bit goes a long way, It's delicious!

Thanks Gary. I got the Speckled Cranberry from SSE, and the UWVC came in a trade from someone at T'ville. I suppose I'll have to do as you suggested and trial them both. The main subject of my interest, however, is an unidentified cranberry bean (or october bean of some sort) that I spotted at the farmers market a couple years ago. The farmer called it a Wooster bean and said his family's been growing it for generations. (I'm in western NC and that's pretty typical here.) Anyhow, he gave me some seed for it and I grew it last summer. It was the best bean I've ever grown. Gorgeous big round pink and white beans, grew like gangbusters, easy to shell, super productive, delicious, and it hardly took any time to shell a big pot full of them. It was the perfect bean. So I was thinking I'd trial THAT bean against whichever of the other two was a better bean. I've never grown any cranberry beans before. Maybe they're all good. But it sounds like I'll have to compare all 3. I'll be glad to send you some UWVC in the fall. I'll have lots. I grew 200 feet of the Wooster bean last year. I think I really like Cranberry beans.
