Add sugar! Seems pretty obvious to me. If you wanted the health benefits of the undiluted cranberry juice... add sugar, or you can dilute the juice with a sweeter juice like white grape juice, or apple juice. Both of which are much higher in sugar than cranberry juice. Linda c

Here's the recipe. It's not actually sour beef (Sauerbraten), but it's what my kids called it. Boeuf Bouilli  Boiled Beef A good pot roast Bring to a boil - 6 cups water Put in 3 pounds beef  brisket, bottom round, chuck, etc, etc. Bring to a boil and add: 1 onion stuck with three cloves ½ cup sliced carrots ½ cup sliced celery with leaves 1 tsp. salt (1 sliced turnip) Cover and simmer until tender  3-4 hours Drain and reserve the stock Melt 4 tbsp. butter and ¼ cup onions, brown the onions Then stir in 2 tbsp. flour Stir in 2 cups of the degreased reserved stock Season the sauce with 2 tablespoons freshly grated horseradish or prepared horseradish (more or less to taste) 1 cup sour cream salt vinegar or lemon juice - adjust to taste if using prepared horseradish, which already has vinegar (coarse mustard) Cut the meat into thin slices, against the grain, and reheat in the gravy. You can make the horseradish sauce separately, chill it and serve it on the side, but I always reheat the meat in a hot gravy, too. Can be done in a crockpot, great with mashed potatoes. Good comfort food with a nice kick.

I've canned the popular cranberry mustard (as well as canning cranberry sauce to have throughout the year). I've already given many folks both the cranberry mustard and cranberry sauce to have with turkey and turkey/ham sandwiches. Just made another batch of sauce yesterday. One of the discount food chains (Aldi's) had Ocean Spray cranberrys for 99 cents! Harris Teeter 2.99 Walmart 2.29 Food Lion 1.99 Such a range of prices for the same thing!! 12 oz.bags. I also want to make some sugared cranberries to give out at Christmas, so they are in the freezer at the moment, as they only last a week. Sugared Cranberries Because of the contrast between the tart cranberries and sugary coating, the flavor of this snack pops in your mouth. The berries are steeped in hot sugar syrup to tame their tangy bite. When entertaining, serve these in place of nuts. For gift-giving, package in parchment-lined tins. Present with a small bottle of the reserved cranberry cooking syrup for the recipient to use as a cocktail mixer. If you can't find superfine sugar, make your own by processing granulated sugar in a food processor for a minute. 2 cups granulated sugar 2 cups water 2 cups fresh cranberries 3/4 cup superfine sugar Combine granulated sugar and water in a small saucepan over low heat, stirring mixture until sugar dissolves. Bring to a simmer; remove from heat. (Do not boil or the cranberries may pop when added.) Stir in cranberries; pour mixture into a bowl. Cover and refrigerate 8 hours or overnight. Drain cranberries in a colander over a bowl, reserving steeping liquid, if desired. Place superfine sugar in a shallow dish. Add the cranberries, rolling to coat with sugar. Spread sugared cranberries in a single layer on a baking sheet; let stand at room temperature 1 hour or until dry. Note: The steeping liquid clings to the berries and helps the sugar adhere. Store in an airtight container in a cool place for up to a week. June Lynn

Thanks Gary. I got the Speckled Cranberry from SSE, and the UWVC came in a trade from someone at T'ville. I suppose I'll have to do as you suggested and trial them both. The main subject of my interest, however, is an unidentified cranberry bean (or october bean of some sort) that I spotted at the farmers market a couple years ago. The farmer called it a Wooster bean and said his family's been growing it for generations. (I'm in western NC and that's pretty typical here.) Anyhow, he gave me some seed for it and I grew it last summer. It was the best bean I've ever grown. Gorgeous big round pink and white beans, grew like gangbusters, easy to shell, super productive, delicious, and it hardly took any time to shell a big pot full of them. It was the perfect bean. So I was thinking I'd trial THAT bean against whichever of the other two was a better bean. I've never grown any cranberry beans before. Maybe they're all good. But it sounds like I'll have to compare all 3. I'll be glad to send you some UWVC in the fall. I'll have lots. I grew 200 feet of the Wooster bean last year. I think I really like Cranberry beans.
