A roast can be cooked in another type of pan in the oven, though I don't think I would use a cake pan - they are thin compared to roasting pans. You could use another type of metal pan OR a glass/Pyrex dish (grease/spray it liberally with shortening or cooking spray,) OR an enamel over cast-iron, OR a cast iron pot OR even a disposable aluminum pan from the grocery store.

A Dutch oven is very versatile & is useful for many cooking techniques such as stewing, slow cooking, & even roasting. It's worth the purchase.

What type of electric roaster do you have? From what I have read, most are able to handle any type of roasting. I have the impression that they are comparable to "regular" ovens.

Yes, I agree - this form is wonderful. I'm doing a brunch for 12 people on the 28th & am relying pretty much on the recipes I have found here.

Oh good! I do have pyrex dishes. I'll try that along with Ann T's advice on cooking a Ribeye roast. I'm hoping to get a dutch oven for Christmas to replace that terrible NuWave oven I fell for. Thank you!!!

My favorite store for buying cooking pans and things is our local St. Vincent Depaul second hand store. Yesterday I purchased a very nice heavy aluminum 12" fry pan for $3.88. They also had several roasting pans for under $5.00. The best buy I saw there, but I already have one was a cast iron dutch oven with glass lid. This was new in a box for $15.99. All of my cookware is second hand and all of it is gourmet class. Since I cook for just my wife and I my roasting pan of choice is a stoneware 10" round with a rack which lifts the roast about an inch from the bottom. This pan allow me to start my roasts at a very high temperature and then hold the heat around the roast when Lower the temp for roasting. Cost? $1.99.
