Roasting Pan

Can a ribeye roast be cooked in a cake pan or other type of pan in the oven? I don't have a roasting pan. I bought an electric roaster, but then saw suggestions not to use it & to use oven. I want to save up for a dutch oven. The roasting pans were minimum $25.00 & don't want to buy if I don't have to. Thanks!!

So far I have tried Ann's maple fudge, Marigene's Gorgonzola pasta sauce, & a cheese dip. I'm going to attempt this ribeye beast. This forum is awesome.

Hi mistihayes,

A roast can be cooked in another type of pan in the oven, though I don't think I would use a cake pan - they are thin compared to roasting pans. You could use another type of metal pan OR a glass/Pyrex dish (grease/spray it liberally with shortening or cooking spray,) OR an enamel over cast-iron, OR a cast iron pot OR even a disposable aluminum pan from the grocery store.

A Dutch oven is very versatile & is useful for many cooking techniques such as stewing, slow cooking, & even roasting. It's worth the purchase.

What type of electric roaster do you have? From what I have read, most are able to handle any type of roasting. I have the impression that they are comparable to "regular" ovens.

Yes, I agree - this form is wonderful. I'm doing a brunch for 12 people on the 28th & am relying pretty much on the recipes I have found here.

Oh good! I do have pyrex dishes. I'll try that along with Ann T's advice on cooking a Ribeye roast. I'm hoping to get a dutch oven for Christmas to replace that terrible NuWave oven I fell for. Thank you!!!

Ammonia would have done the trick without elbow grease. I try to cover the really bad areas with newspaper (just to keep it concentrated there)then put it in a plastic bag and pour a little ammonia in there wetting the paper. Seal and put it aside for a day or two, or until you remember it, and the yuck will come right off. I found Mom's old SS double boiler in the garage recently and told DH he could give it to one of the locals where he hunts. Around the handles and rim looked kind of grungy--that stuff that just never really comes off and builds up. So I did the ammonia thing before giving it away. I have an All-Clad roasting pan with the V-rack. There is a feature - might be good or might be bad, anyway I wanted to mention in case it helps you with your decision. The bottom of my pan has a channel running around the edge. Put another way, the center of the pan bottom is slightly raised. When browning meat in fat, the melted fat runs into the channel, leaving the meat high and dry. The meat does brown well there, but the stainless of the pan also scorches and blackens at those dry, hot spots. This is not a big deal, but requires a bit of extra scrubbing. If I were to buy a roasting pan again - which I won't, this one has lasted >15 years and will outlive me - I'd look for one without this channel. Otherwise, the All-Clad is a high-quality, sturdy piece with good handles and a nice thick bottom for browning.

I will tell you how I do mine and it is always a nice browned juicy beautiful turkey. I rub a light coating of French's yellow mustard all over the bird and inside the cavity, then sprinkle on a generous amount of Worcestershire sauce over the breast, then I sprinkle with a nice dusting of Tonys seasoning, then I spray very lightly olive oil spray over it. That combination will always make a beautiful bird and the flavor is amazing. You will not taste the mustard but it really enhances the flavor. Now I don't slather it on just use my bbq brush and paint it on. Another thing that makes it even browner is to add a little kitchen bouquet to the mustard. I have used the brown in bags in the roaster but it tends to make it really fall apart and you just can't get it out complete. It is good and juicy and very tender, and if you don't mind if it comes apart then you can use them. They end up stuck to the bottom of the bag. I have never had anyone even know it was cooked in the roaster unless I told them. You can always take it out and stick it in the oven under the broiler for about two minutes to get it crispy but don't burn it!

My favorite store for buying cooking pans and things is our local St. Vincent Depaul second hand store. Yesterday I purchased a very nice heavy aluminum 12" fry pan for $3.88. They also had several roasting pans for under $5.00. The best buy I saw there, but I already have one was a cast iron dutch oven with glass lid. This was new in a box for $15.99. All of my cookware is second hand and all of it is gourmet class. Since I cook for just my wife and I my roasting pan of choice is a stoneware 10" round with a rack which lifts the roast about an inch from the bottom. This pan allow me to start my roasts at a very high temperature and then hold the heat around the roast when Lower the temp for roasting. Cost? $1.99.
